I made this on 31 Aug 2021, straight forward to prepare. I only have large zucchini on hand so I peeled and removed the seeds from a large squash, and cubed enough to fill a 1½ quart casserole, then proceeded with the recipe.
The bell pepper stays crunchy on top and the cheese is a great addition to this dish.
Overall, this is a very good dish, I really liked it, my Mom and Dad thought it was just so so. If you are looking for a new way to prepare zucchini, by all means give this a try.
