Page 699, Herbed Zucchini Casserole

I made this on 3 Aug 2021 as I have a lot of zucchini on hand, mostly the yellow variety.

Very easy to assemble, and I made one change, which is already reflected in the recipe now. The dry stuffing seemed a bit off with just 2 cups stated so I had more seasoned croutons on hand than stuffing mix so I used 5 cups of dry seasoned croutons, which worked perfectly.

The soup, sour cream, and croutons surround the zucchini, onion, and carrots, giving an overall easy and delicious side dish for any main dish. Highly recommended.
