I made these on 10 Sep 2021, and I cut the recipe in half since I was only cooking for 4 people. I used a 7×11 inch baking pan as well.
I used the variants, ground pork in place of beef, and fiesta corn in place of regular corn.
The flavor is excellent, the cheese mixed in the filling is a good touch as well as the corn with the bell peppers. The breadcrumbs for a topping was a nice texture addition.
If you like stuffed bell peppers, this is an excellent version to make, and easy to put together as well.
