Ingredients
  

  • 2 cups ham, cubed
  • 5 cups potatoes, washed and skin on, sliced
  • 3 cups yard beans, cut into 1 inch pieces
  • 1 can condensed cream of chicken soup, OR make from a shorcut
  • 1/3 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 medium onion, diced
  • 2 cups Cheddar cheese, shredded, divided

Instructions
 

  • Add to the slow cooker the soup, milk, salt, and pepper, whisk to combine.
  • Add in the potatoes, beans, ham, onion, and 1 cup of the cheese, stir to mix and coat everything, spread out make an even layer. Cover and cook on Low setting for 6 hours. When the time is completed, open the lid and pour on the last one cup of cheese, cover and let the cheese melt, about 15 minutes, serve.

Notes

Two cups of cubed ham is about 100 Baht when the ham is purchased from Makro (only place I can get it where I live). The cheese will run 180 Baht for a block of 250 grams, just use the whole block to be on the safe side. Cost for this meal would be about $1.65 per serving for 5 servings. Higher than the goal for the recipes, but not bad for a hearty meal.

  • 1 kilo yard beans, cut into 2 inche pieces
  • 1 kilo ham, cubed
  • 4 potatoes, cubed
  • 1 onion, diced
  • salt and pepper, to taste

Instructions
 

  • Prepare all the vegetables and cube the ham, add everything to your slow cooker, season to taste with salt and pepper. Mix together.
  • Add 3 cups of water. Cook on Low setting for 6 hours, serve.

Notes

The ham is the most expensive part of this dish. Estimate about 200 Baht for 1 kilo, think Makro, they have great sales on cooked ham, thick slices. For an estimate of 6 servings, this is about 98 cents per serving.

Ingredients
  

  • 5 links spicy smoked sausage, sliced into 1/4 inch pieces
  • 1 large onion, quartered then sliced
  • 6-8 small potatoes, washed, skin on, cut into large chunks
  • 1 can condensed cream of mushroom soup, OR make from a shortcut
  • 1/2 teaspoon Cajun spice mix, OR make from a shortcut, or to taste
  • 1 1/2 cups Cheddar cheese, shredded, optional

Instructions
 

  • Place the sausage, onion, and potatoes in your slow cooker.
  • Add the Cajun spice mix and the can of soup, mix, then cover 7-8 hours on Low setting or until the potatoes are cooked.
  • When the potatoes are cooked, you can serve at this point, or if you are using the cheese (recommended), add the cheese and mix, cover and cook for another 20 minutes, then serve. This photo shows I added cheese and is after the 20 more minutes of cooking.

Notes

The sausage would cost about 150 Baht/500 grams (this is about 5 large links). This makes the dish to about 55 cents per serving for 8 servings. If you make the soup from the shortcut here you have more savings. If you use the cheese, one block (250 grams) is 180 Baht. This increases the price per serving to $1.21. Overall, a reasonable price for a filling meal.
Variant, add sliced or chopped mushroom.

Irish Bacon, Sausage, Onion & Potato Dish

Not sure if this is Irish but it sounds good and hearty. For this you will need a large oven proof pot with a lid or foil to cover. To make this in a slow cooker, cut the ingredients in half and cook on High setting for 4 hours.

Ingredients
  

  • 2 kilo potatoes, washed and cut into large pieces
  • 2 onions, peeled and thickly sliced
  • 500 grams sausage, spicy smoked sausage, bangers, or brats would work
  • 500 grams bacon
  • 2 1/8 cups water
  • 1 tablespoon beef stock powder
  • 3-4 tablespoons fresh parsley, chopped
  • salt and pepper, to taste

Instructions
 

  • Use hot water from your hot water pot and dissolve the beef powder in a sauce pan.
  • Grill or broil the sausage and bacon to color them, do not over cook or dry them out, drain on paper towels. When drained, cut the bacon into 1 inch pieces, cut the sausage into large pieces.
  • Preheat your oven to 150 C. Using large oven proof pot, layer the ingredients in this order: onion, bacon, sausage, potatoes. Season each layer with pepper and parsley. Repeat until all the ingredients are used.
  • Heat the water with beef stock in it to boil, then pour this into the large pot and cover with a lid or foil. Place the pot in the oven and cook for at least 3 hours (4 to 5 hours does not hurt either). At the 2 hour point, check the liquid level in the point, you want about an inch of liquid in the bottom of the pot at all times. Serve, liquid at the bottom is your gravy.

Notes

The sausage, spicy smoked sausage runs about 125 Baht/500 grams, English Bangers, pork or beef will run about 100 Baht/500 grams. Brats will run about 180 Baht/500 grams. Bacon will cost about 200 to 280 Baht/500 grams. Using Bangers, this comes out to about $1.88 per serving for 6 servings. Over all, not a bad cost for a hearty meal.
To cook this in a slow cooker, cut the ingredients in half and cook on High setting for 4 hours.

I think I could eat this every day. When I make this (on my to cook list, I will update the steps and times). For starters, I will make this with white Jasmin rice, and no "Rotel" product used, learn how to cut up a chili or two. I will adjust the recipe when I make it.

  • 500 grams smoked sausage, sliced, Makro Smoked and Spicy is perfect!
  • 2 cans whole tomatoes, undrained but diced
  • 2-3 green chilies, chopped
  • 3 cups water
  • 1 1/2 cups rice, go with white Jasmin
  • 1/2 cup onion, diced
  • 1/2 cup green bell pepper, diced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions
 

  • Add all ingredients to your slow cooker and mix. Cover and cook on Low setting 2-5 hours. START checking the rice at 2 hours. add water as needed. Now wasn't that easy?
  • Serve with a salad and a fresh cooked veggy on the side, complete meal.

Notes

The spicy smoked sausage at Makro will cost about 125 Baht for 500 grams. This comes to about 62 cents per serving for 6 servings. From my experience, Makro has sales on this sausage, buy 1 kilo get 500 grams free so there is even more savings.

Ingredients
  

  • 1 1/2 kilos baby back pork ribs
  • 2 cups BBQ sauce, OR make from a shortcut
  • 1/4 cup brown sugar
  • 4 tablespoons cider vinegar
  • 3 tablespoons dried oregano
  • 1 teaspoon Worcherstershire sauce
  • 1 tablespoon cayenne pepper
  • 1 tablespoon chili powder
  • salt and black pepper

Instructions
 

  • Combine BBQ sauce, brown sugar, cider vinegar, oregano, Worcestershire sauce, cayenne pepper, and chili powder in a small bowl.
  • Salt and pepper the ribs. Place ribs in slow cooker, and cover in sauce. Cook low and Low setting for 8 hours or High setting for 4 hours.
  • After the ribs are done, spoon the BBQ sauce in the slow cooker over the ribs before removing. Cut the ribs, serve with the BBQ sauce and sides of your choosing.

Notes

Pork ribs run 135 Baht/kilo, you would need about 200 Baht worth of ribs, all the rest is minimal. For 4 people this is about $1.50 per person, for 6 servings this is about $1 per person, overall, a good price.

I like a good plate of ribs, Thais however cook most ribs in a soup. I made this, these are very good, and I have modified the recipe on my findings, my comment on the dish is listed below. Links to the shortcuts are listed in the Recipe Notes section.

Ingredients
  

  • 4-6 racks pork ribs, see Step 1
  • 1/2 cup water

Dry rub

  • 1 tablespoon paprika
  • 2 teaspoons salt
  • 2 teaspoons garlic powder
  • 1 teaspoon black pepper
  • 3/4 teaspoon onion powder
  • 3/4 teaspoon oregano
  • 3/4 teaspoon thyme
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon Creole seasoning, OR make from a shortcut
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup brown sugar, packed, use 3/4 cup if using 6 racks

BBQ sauce

  • 1 cup BBQ sauce, your favorite sauce or homemade
  • 1/2 teaspoon Creole seasoning, OR make from a shortcut
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions
 

  • A rack of ribs is the long strip of ribs, the rib bones are about 3 inches long. Pick out strips that are meaty between the straight bones and not so much of the odd shaped bones. Prep the ribs by rinsing them then cut the racks into portions, 3 bones per section. (Photo credit: Tesco Lotus Thailand.)
  • Mix the dry rub ingredients in small bowl. Using your hands rub the dry rub on the ribs on both sides. Place ribs in a bag and twist to remove air and place in a bowl and put in the fridge overnight. Perfect use for a Tesco Lotus plastic bag.
  • Next day, remove the ribs from the fridge. Mix the barbecue sauce ingredients in a small bowl. Layer the ribs in your slow cooker and on each layer, add a tablespoon of sauce. Add the water to the sides of the pot, cover and cook on Low setting for 9 hours, do not remove the lid during this time. Serve with the sauce on the side. Side dishes recommended would be pinto beans, and even potato salad.

Notes

Pork ribs run about 140 Baht/kilo, I bought 3 slabs for about 180 Baht. This came out to about 90 cents per person for 6 meals.

Me, I like this name, it is what you do with a slow cooker, load it up and let it cook, slow cooker meals are normally not the most attractive dishes. Not a attractive name but this sounds really good! This is a load the slow cooker and forget meal, for about 4 to 6 hours anyways. Think Kielbasa (that would be Spicy Smoked Pork Sausage in Makro), regular pork sausage (Bangers), Italian sausage, and chicken sausage. If you are making the sausage, think meatballs! This is a rewrite from what I seen to make it less processed.

Ingredients
  

  • 2 cups yard beans, cut into 1 inch pieces
  • 6-8 potatoes, washed and cut into large pieces
  • 1 onion, diced
  • 2 Kielbasa sausage, cut into bite size pieces, see Step 2 for these notes
  • salt and pepper, to taste
  • 2 tablespoons powdered chicken stock

Instructions
 

  • Add to the slow cooker pot in this order, yard beans, potatoes, sausage, onion. Add water to just cover over the potatoes. add chicken stock powder and salt and pepper to taste.
  • Note for the sausage, Thai Kielbasa is a spicy (mild) smoked pork sausage, I have had this a number of times and it is excellent. I think pork sausage (Bangers) would also work well but leave a links until cooked. Italian, pork, or chicken sausage, homemade and in bulk, rolled into meatballs would be ideal as well.
  • Cover, and no peeking, for 4-6 hours on High setting. At the 4 hour mark, quickly check the potatoes for being tender and done and sausage (regardless of type used) for the liquid to run clear. Stir and serve with a green salad.

Notes

Sausages are not a show stopper, if you buy sausage from Makro, perfectly acceptable, a 8 pack of bangers is about 250 Baht, this recipe calls for 2, if you buy the Spicy Smoked Pork
Sausage (very muck like Kielbasa) that is about 200 Baht for 8 sausages. If you get the Sausage Scraps pack (still Spicy Smoked) these can be chili sausages, garlic sausages, etc, and would be a great option, this is only about 180 Baht for a pack about 1 kilo. Now, if you make the sausage yourself in bulk, either pork, Italian, or chicken, roll into meatballs (use an egg or two for a binder) and add to the pot, these would be excellent. Regardless of what you use, this is easily under $1 per serving.

Ingredients
  

  • 3 kilo pork butt
  • 1 can beer, any type, room temperature
  • salt, pepper, garlic powder, all to taste
  • 1 onion, sliced (optional)

Sauce

  • 3/4 bottle BBQ sauce
  • 1/2 small bottle Sriracha Chili Garlic sauce, mild or hot is up your preference

Instructions
 

  • Trim away any large amounts of fat from pork. At Tesco we picked up 3 large chunks of meat, about 1 kilo each.
  • If you wish to use an onion, slice and place at the bottom of the slow cooker, place meat on top of that.
  • Pour the beer over the meat until about an inch from the top of the pot. Add salt to your taste, generous amounts of black pepper and garlic powder.
  • Cover and set to High for 1 hour, then reduce to Low for 8 hours.
  • At 8 hours, remove pork from pot, use two large slotted spoons as the meat will fall apart. Discard the onion and liquid. Shred the pork using two large sturdy forks and return to the slow cooker pot.
  • Add the BBQ sauce and Sriracha sauce, mix well and put slow cooker on low for 30 minutes to an hour. Serve on buns, and I like to use a slice of onion on mine as well.

Notes

Pork butt runs about 137 baht per kilo, 3 kilos would be 411 Baht, this comes out to about $1 per serving.
