Swedish Style Meatballs with Egg Noodles
This recipe is from a Kroger brand package of Swedish style meatballs.
Ingredients
- 1 package Kroger frozen Swedish meatballs, (26 oz / 737 g bag)
- 1 package dry egg noodles, (1 lb / 454 g package)
- 4 tablespoons butter
- 1 onion, diced
- 1 can condensed cream of celery soup, Shortcut
- 1 cup beef broth
- 1 1/2 teaspoons allspice
- 1/2 teaspoon ground nutmeg
- black pepper, as desired
Instructions
- Heat a pot of salted water to boiling, then add the egg noodles and cook until just tender. Drain.
- Melt butter in a large sauce pan, when melted add the onion and saute until soft and translucent.
- Stir in the soup and broth and bring to a boil, stir until the soup is mixed in completely, and stir often until sauce just comes to a boil.
- Reduce heat to low and stir in the allspice and nutmeg, after the spices are mixed in, add the meatballs and stir into the sauce. Simmer for 20 minutes or until the meatballs are heated through.
- Serve meatballs and sauce over the egg noodles with a side of your choice, enjoy.

Meatball Vegetable Soup
This is a basic recipe and easily tailored to suit your taste. The idea behind this recipe is to use canned/dry items and frozen meatballs as quick meal, and is a good way to rotate through your canned goods and if you have 'commodities' in the pantry, this is a good way to use three items then add frozen meatballs. Ingredients
- 3 cans condensed vegetable soup, (10.5 oz / 298 g cans)
- 3 cans water
- 1 cup dry ditalini pasta, or any small bite size pasta
- 2 cans beans, rinsed, drained, (pinto, great northern, Navy are good choices)
- 250 grams cooked frozen meatballs, store bought or homemade, (8 oz)
- 1 teaspoon Italian seasoning, Shortcut
- salt and pepper, as desired, to taste
Instructions
- To a large saucepan, add the soup and water, place on medium high heat and bring to a simmer.
- Add the pasta and stir in, reduce heat to a low simmer. There is alphabet pasta in the soup already, adding more bite size pasta bulks up the soup. Cook until the pasta is near tender.
- Add the meatballs, beans, and Italian seasoning and stir in. Taste and season with salt and pepper as desired. (I used a bag of Kroger Home-style Meatballs.)
- Continue to cook on a low simmer until the meatballs and beans are heated through and the pasta has finished cooking.
- Ladle into serving bowls, top with oyster crackers or sour cream as desired, enjoy.
Notes
This is low cost per serving, if using commodities in the US, then the only expense is the meatballs.
Shortcut: Italian Seasoning.
Variants: 1. Add a can of diced tomatoes. 2. In place of meatballs, use ground beef, pork, or chicken, browned first. 3. In place of meatballs, use canned beef, pork, or chicken.

Turkey Meatballs with Summer Squash
I found this recipe on a bag of Kroger Turkey Meatballs. This is a basic recipe for an easy dinner, and is wide open to changes you want to make, such as roasting the vegetables instead of frying, changing the gravy, etc. Summer squash can mean several types of squash, for this, I am using yellow crookneck and zucchini. Ingredients
- 1 package turkey meatballs, I used Kroger brand, (26 oz / 737 g), Shortcut
- 1 large zucchini
- 1 large summer
- 2 cloves garlic, smashed and minced
- 1 packet turkey gravy, or chicken gravy, Shortcut
- salt and pepper, as desired, to taste
- extra light olive oil, as needed
Instructions
- Rinse the zucchini and summer squash, if the squash you find are small, just use several of them. For large squash, slice in half lengthwise, then slice each part into 1/4 inch or less half moons. For smaller squash, just slice into 1/4 inch or less rounds.
- Heat about 2 tablespoons of olive oil in a large non stick pan. When hot, add the squash and garlic. Season with salt and pepper as desired.
- Cook the squash, turning often, until softened and tender.
- While the squash is cooking, heat the meatballs by spreading them out on a microwave proof plate, cover, and microwave for 2 minutes, turn them, and microwave for another 2 minutes.
- Prepare the gravy according to the packet instructions when the squash is looking almost done.
- When the squash is cooked, the gravy is cooked, go ahead and microwave the meatballs for 1 minute.
- Set all the items on the table and let everyone help themselves, spoon gravy over the meatballs, enjoy.
Notes
This is low cost in the US (I used Kroger turkey meatballs that I bought when they were on sale), but any kind of meatball would work well. Back in Thailand I will be making this often but will use homemade chicken meatballs.
Shortcut: All Purpose Chicken Meatballs, Gravy Mix.
Variants: 1. Use chicken or beef meatballs / gravy. 2. Roast the squash instead of frying.

Greek Meatballs
These sound tasty, and are baked, not fried. On my to make and taste list.
Ingredients
- 1/3 cup panko breadcrumbs
- 2 tablespoons milk
- 250 grams ground beef, (8 oz)
- 250 grams ground pork, (8 oz)
- 1/4 cup red onion, finely diced
- 2 cloves garlic, smashed and minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1 teaspoon lemon zest
- 3 tablespoons fresh mint, chopped
- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon salt
- 1 egg
Instructions
- Preheat your oven to 220 C (425 F) and line a baking sheet with foil and place a rack about the foil.
- In a mixing bowl, add the milk and panko, let this soak for 5 minutes.
- Add all of the rest of the ingredients and use your hands and mix everything together.
- Divide and roll the meat mixture into 20 meatballs, I will determine a weight for each when I make this if you prefer to weigh them out for uniformity.
- Place the meatballs on the prepared the baking sheet. Bake for 20-22 minutes or until browned and cooked through, sacrifice a meatball to determine doneness.
- Serve as an appetizer or as a main with say a pasta salad as a side. Enjoy.

Chicken Sausage
This sausage sounds great! This can be made into patties, links, meatballs, or just cooked in bulk. On my to make and taste list for certain, I look forward to making meatballs and cooking then freezing them, and freezing some links as well. Feel free to use turkey or chicken for this.
Ingredients
- 500 grams ground chicken, or turkey, (1 lb)
- 3 teaspoons garlic, minced
- ⅓ cup red onion, finely diced
- 1 teaspoon ground cumin
- ½ teaspoon black pepper
- ¼ cup chicken broth,
Instructions
- Add everything to a mixing bowl.
- Mix together with your hands.
- Form into 12 patties, stuff into collagen casings for links, make meatballs, or use as bulk. For links and meatballs, I will add those quantities when I prepare this and will update this.
- For patties and meatballs, go ahead and cook those then freeze if desired for a quick go to ingredient. Bake patties and meatballs in a 190° C (375° F) oven for 25 minutes. Allow to cool, then freeze for later use.

Meatball Dinner
This is a basic dinner to put together, easy for a weekday meal for a family or quickly prepared by senior citizens. I based this guide on Kroger brand meatballs, which I think are excellent in taste and value. Stated here will be a good meal for 3 people with leftovers that you can add to to make another meal. The meatballs are based on 4 oz per serving, or four 1 oz meatballs per serving. Use a store brand, or homemade, for the items and that is a money saver as well. The nice thing about this meal is that all the items are prepared at the same time. Links to the shortcuts are listed in the Recipe Notes section.
Ingredients
- 225 grams dry egg noodles, (8 oz)
- 2 packets beef gravy mix, Shortcut
- 12 frozen meatballs, 1 oz each, Shortcut
- vegetable of choice, frozen or canned, for a side dish
Instructions
- Heat a pot of salted water to a boil, add the egg noodles and cook until tender, drain.
- While the noodles are cooking, go ahead and prepare the gravy as listed on the package, and heat up the canned or frozen vegetables, I used the stove top for this or you can use your microwave, up to you. Count out the meatballs, add some extras, and heat those per the package instructions as well.
- Serve, ladle gravy over the meatballs and egg noodles, and enjoy.

Variants: 1. Use mashed potatoes in place of egg noodles. 2. Use your own cooked and frozen meatballs for this.
Tortilla Pizzas
This is a cheater recipe when you want a fast and simple pizza. This is a base recipe for 1 tortilla meatball pizza, this is a make as much as you want guide. The use of a microwave makes this quickly with no heating up of your kitchen. Go with store brand items as I did for additional savings. Even though these are inexpensive and quick to make, they are actually well liked. Sometimes simple really is best.

Ingredients
- 1 flour tortilla, 8-10 inch size
- pasta sauce
- Mozzarella Cheese, shredded
- cooked frozen meatballs, thawed, cut in half
- Italian seasoning
Instructions
- Place a tortilla on a microwave safe plate.
- Spread some sauce evenly on the tortilla, keeping about ½ inch from the edge. Amount of sauce is up to you. I used a sauce with mushrooms. Add some meatballs, cut side down.
- Sprinkle with Mozzarella cheese as you desire and sprinkle the cheese with Italian seasoning as desired as well.
- Cook in the microwave for 2 minutes. Microwaves can vary, so start with 1 minute first and check to make sure the cheese is melted and gooey.
- Remove from the oven, serve, and enjoy.

Meatball Mostaccioli
This is an excellent dish, highly recommended! I made this as written, this is a keeper and going to be a regular. Links to the shortcuts are listed in the Recipe Notes section.
Ingredients
- 1 box mostaccioli pasta, (1 lb / 454 g)
- 2 eggs, lightly beaten
- 1 carton Ricotta cheese, or cottage cheese, (1 lb / 454 g), Shortcut
- 500 grams ground beef, or ground pork, (1 lb)
- 1 onion, diced
- 1 tablespoon brown sugar
- 1 tablespoon Italian seasoning, Shortcut
- 1 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 2 jars pasta sauce, with meat, (24 oz / 680 g each)
- 1/2 cup Romano cheese, grated
- 340 grams frozen meatballs, thawed
- 3/4 cup Parmesan cheese, shredded
Instructions
- Heat a large pot of salted water to a boil, add the pasta and cook until just tender, then drain.
- Preheat your oven to 180 C (350 F). Grease a 9x13 baking pan with butter. In a mixing bowl, mix together the eggs and Ricotta cheese.
- Heat a large pot on medium heat, when hot, add the onion and ground beef. Break up the beef with a spatula and cook until no longer pink, then drain excess fat. I used ground pork.
- Mix in the brown sugar, Italian seasoning, garlic powder, and black pepper.
- Add the pasta and pasta sauce. and mix together with the beef.
- Add half of the beef and pasta to the prepared baking.
- Top with the Ricotta mixture.
- Top with remaining beef and pasta mixture.
- Sprinkle with Romano cheese, top with the meatballs, then sprinkle with the Parmesan cheese.
- Bake for 40 minutes or until heated through.
- Serve and enjoy.

Meatball Stew II
This is an excellent stew. Quick and easy. This version of the stew will use some canned items in place of fresh and will not use a slow cooker. Links to the shortcuts are listed in the Recipe Notes section.
Ingredients
- 680 grams frozen Italian meatballs, (24 oz), Shortcut
- 2 cans sliced potatoes, drained, rinsed, (425 g / 15 oz each)
- 1 can sliced carrots, drained, (425 g / 15 oz)
- 1 can green beans, drained, (425 g / 15 oz)
- 1 onion, halved, sliced
- 1 can tomato sauce, (15 oz / 425 g), Shortcut
- 3 cups beef broth, fresh or from powder
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- 2 tablespoons all purpose flour
- ½ cup beef broth, cold
Instructions
- To a large pot, add the tomato sauce, 3 cups of broth, garlic powder, and pepper. Stir together to mix. Put pot on medium high heat.
- Add the meatballs, potatoes, carrots, green beans, and onion to the pot and mix together.
- Bring to a boil then reduce to a simmer. Let stew simmer for 40 minutes, stir occasionally.
- Stir together the flour and the ½ cup broth in a measuring cup. Slowly stir the flour mixture into the stew. Heat to a boil then reduce to a simmer to thicken the stew.
- Serve and enjoy.

Meatball Stew I (Slow Cooker)

Ingredients
- 680 grams frozen Italian meatballs, (24 oz), Shortcut
- 5 medium potatoes, peeled, cubed
- 500 grams fresh carrots, peeled, sliced
- 1 onion, halved, sliced
- 1 can tomato sauce, (15 oz / 425 g), Shortcut
- 3 cups beef broth, fresh or from powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 2 tablespoons all purpose flour
- 1/2 cup beef broth, cold
Instructions
- To your slow cooker, add the tomato sauce, 3 cups of broth, garlic powder, and pepper. Stir together to mix.
- Add the meatballs, potatoes, carrots, and onion to the slow cooker and mix together.
- Cover and place on Low setting for 6 hours or until the potatoes and carrots are tender.
- When the potatoes and carrots are tender, stir together the flour and 1/2 cup broth in a measuring cup. Slowly stir the flour mixture into the stew. Set the slow cooker to high for 30 minutes or until the stew is thickened.
- Serve and enjoy.
