Sounds like a very nice way to prepare salmon. Minimal ingredients. This is a fast meal to put together.

Ingredients
  

  • 4 tablespoons butter
  • 4 tablespoons honey
  • 1 tablespoon fresh lemon juice, or lime juice
  • 2 cloves garlic, minced
  • 4 salmon fillets
  • salt, to taste
  • lemon wedges, if desired

Instructions
 

  • Preheat your oven to grill/broil.
  • Place butter in a oven proof pan, cast iron would be ideal, or a regular pan and heat the butter over medium heat, stirring continuously for about 3 minutes, or until the foam settles, then the butter will change in color to a golden brown. Add the honey, lemon juice, and garlic, stir to combine and cook for about 30 seconds to 1 minute.
  • Pour half of the butter to a dish and set aside. Then add the salmon to the pan and sear one side, if one side has skin, then sear that side for 3-4 minutes or until golden brown.
  • Now at this point, if you have a oven proof pan, flip each fillet and place the pan in the oven to broil for another 6 minutes, OR, if you do not have an oven proof pan, flip and place each fillet in a preheated baking dish and pour the liquid from the pan into the baking dish as well, then broil for 6 minutes.
  • To serve, season fillets with salt to taste, drizzle the reserved brown butter over each fillet and serve with steamed vegetables, rice, and a salad.

Notes

For 69 Baht per fillet, this is about $2.03 per serving. High cost but ok for a once in a while meal.

  • 2 salmon fillets, these are the 140-160 gram each
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • ½ cup soy sauce
  • 2 teaspoons Dijon mustard
  • 1 carrot, cut into matchsticks
  • ½ red bell pepper, cut into thin strips
  • 1 cup fresh broccoli, cut into bite size pieces
  • 1 cup snow peas, trimmed
  • salt and pepper, to taste
  • olive oil, as needed
  • 2 spring onions, sliced for garnish

Instructions
 

  • Preheat your oven to 200° C (400° F).
  • Mix together the marinade of brown sugar, garlic, ginger, soy sauce, and mustard in a shallow bowl. Place the salmon in the marinade and marinate for 15 minutes.
  • While the salmon is marinating, lay down two sheets of foil on a baking sheet. On the first sheet, lay down the carrot sticks to make a layer about 2 sticks deep and about 6 inches across, on top of the carrots place the bell pepper cross way. On one end of the carrots place the broccoli, and on the other end, place the snow peas. Drizzle with a little olive oil and salt and pepper to taste and fold the foil over the veggys to make a sealed packet. set that packet off to one side of the next sheet of foil.
  • Drizzle some olive oil on the second sheet. Remove the salmon from the marinade and shake off excess and place on the olive oil on the foil.
  • Bake for 8-10 minutes or until the salmon easily flakes with a fork. Plate the vegetables and place the salmon on top, sprinkle with chopped spring onion, serve.

  • 2 salmon fillets
  • 1 egg
  • olive oil, as needed

For the Breading

  • â…“ cup almonds, crushed
  • â…“ cup Parmesan cheese, grated
  • 1 tablespoon dried basil
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions
 

  • This is the type of fillets I get from Tesco.
  • Mix breading ingredients together in large bowl. Whisk egg in a separate bowl.
  • Heat some olive oil in a non stick skillet on medium heat. Once the pan is ready, dredge the salmon in the egg, then the breading mixture and add to the hot pan, skin side down and let the fillets cook on one side for 3-4 minutes or until golden brown, flip and cook for an additional 2-3 minutes or until golden brown.
  • Plate with skin side down, serve with your favorite vegetable or even with pasta.

This is wonderful! I made this on 22 Nov 2016 and was an instant two thumbs up from my Thai wife. Excellent marinade as written, recipe followed as written, no changes needed, and after baking, spoon the oil on some pasta for a great meal.

Ingredients
  

  • 4 salmon fillets, (140-160 gram / 5-6 oz each)
  • 3 clove garlic, minced
  • 5 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • ¼ teaspoon salt
  • 1 teaspoon ground black pepper
  • 1-2 tablespoons fresh lemon juice

Instructions
 

  • In a bowl, add the olive oil, garlic, basil, parsley, salt, pepper, and lemon juice. Mix to make the marinade. Place the salmon fillets in a shallow flat dish, pour marinade over the top of them and place in the fridge, turning the fillets occasionally. Marinate for 1 hour.
  • Preheat your broiler, or if using a counter top oven use the top coil and heat to 230° C (450° F).
  • Using a baking dish, glass would be perfect, place fillets in the dish and pour the marinade over the fish.
  • Broil for 5-7 minutes then flip fillets over, when the fish flakes with a fork easily, it is done.
  • Serve. A salad, pasta, or vegetables on the side would be perfect side dishes.

Notes

I bought 4 fillets, Norwegian import, 69 Baht for 140 to 160 gram fillets. I figured the servings as 1 fillet per serving. For 69 Baht per fillet, this is about $2.03 per serving. High cost but great for a once in a while meal.

Ingredients
  

  • 750 grams salmon fillets, (I think the 140-160 gram / 5-6 oz fillets would be perfect)
  • â…“ cup soy sauce
  • â…“ cup brown sugar
  • â…“ cup water
  • ¼ cup olive oil
  • garlic powder, to taste
  • salt and black pepper, to taste
  • lemon zest, to taste

Instructions
 

  • Season salmon fillets with pepper, salt, lemon zest, and garlic powder to your liking. In a bowl, mix together the soy sauce, brown sugar, water, and olive oil until the sugar is dissolved. Place the seasoned fillets in a large resealable bag with the soy mixture, seal, and turn to coat, refrigerate for 2 hours, turning every 30 minutes.
  • Heat your grill to medium heat. Oil the grill and place the salmon on the grill flesh side down and discard the marinade. Cook salmon for about 6-8 minutes per side or until the flesh flakes easily with a fork. Serve.

Notes

For 6 servings, this comes out to about 1.60 per serving, as I make this and get more accurate pricing I will update this.

I was recently in Phuket and had a very nice lunch at a restaurant near the Ao Por Marina, Fisherman's Pie. This was very good, salmon chunks, white fish and shrimp in a cheese sauce topped with more cheese. This is a filling meal. Make sure you remove the tails of the shrimp, unlike the restaurant I visited. This was baked in a bowl and served, I used a glass pie dish, my comments below, recipe slightly modified on my findings. When I prepare this again, I will use individual serving baking dishes.

Ingredients
  

  • 800 grams salmon, boneless, skinless, cut into chunks, (14 oz)
  • 400 grams white fish, boneless, skinless, pangasius or barramundi, cut into chunks, (14 oz)
  • 250 grams fresh shrimp, uncooked, peeled, deveined, and tails removed, (8 oz)
  • 3 tablespoons butter
  • 2½ tablespoons all purpose flour
  • 1½ cups milk, warmed, more as needed
  • 4 cups white Cheddar cheese, shredded and divided, or Edam cheese
  • 1½ cup onion, diced
  • 2 cloves garlic, minced
  • salt and pepper, to taste

Instructions
 

  • Preheat your oven to 190° C (375° F). Pat the fish pieces and shrimp dry with paper towels, toss the fish and shrimp together and in a pie dish, set aside. I used a pyrex pie dish.
  • Melt butter in a saucepan over medium low heat. Whisk in flour, and stir until the mixture becomes paste like and light golden brown, 2 to 5 minutes.
  • Gradually whisk warm milk into the flour mixture and bring to a simmer over medium heat. Whisk until the sauce is thick and smooth, about 5 minutes. Whisk in 1 cup of white Cheddar cheese, then mix onion, salt and pepper, and garlic into the sauce. If sauce is too thick, stir in more warm milk, 1 tablespoon at a time.
  • Pour sauce over the fish and shrimp in the baking dish. Top with the onion.
  • Bake for 30 minutes.
  • Then sprinkle with the remaining 2 cups cheese. Continue baking until fish is easily flaked with a fork, about 15 to 20 minutes more and the cheese should be a nice golden brown. Remove from oven, let rest for 5 minutes.
  • Serve with a green salad for a great meal.

Notes

For starters, this is not a $1 dollar meal. The salmon and cheese are the pricy items in this. When I make this again, I will narrow the price per serving down. For now this is a High cost per serving dish.
Variants: 1. Add oyster meat - cooked first. 2. Add green mussel meat - cooked first. 3. Use all white fish or all salmon.
