Busy-day Barbecue
This recipe is from a cookbook titled Casserole Cook Book by Better Homes & Gardens, printed in 1961. This recipe sounds very good, on my to make and taste list.
Ingredients
- ¾ cup onion, diced
- 2 tablespoons butter
- 1 cup ketchup
- ¼ cup sugar
- ¼ cup Worcestershire sauce
- 1 tablespoon vinegar
- ½ teaspoon salt
- dash black pepper
- 1 can luncheon meat, cut into strips, (12 oz / 340 g)
- hot cooked rice, for serving
Instructions
- Cook onion in hot butter in a large non stick pan, cook until tender but not browned.
- Stir in the ketchup, sugar, Worcestershire sauce, vinegar, salt, and pepper as desired.
- Stir in the luncheon meat. Bring to a boil, then reduce to a simmer and cook for about 5-10 minutes to heat through.
- Serve with hot cooked rice, enjoy.
Notes
High cost per serving based on the luncheon meat.
