  1. First thing, get a pot of salted water on high heat, when boiling, add the spaghetti and cook until just near tender. Drain and rinse and place in a large mixing bowl, set aside.
  2. Preheat your oven to 180 C (350 F) and grease an average size casserole dish or a 9x13 dish if you are doubling the recipe.
  3. Same pot, add more water and set on high heat, add the frozen spinach. When the water boils, remove from heat, drain well, place in the same large mixing bowl and toss together.
  4. Add the remaining ingredients to the mixing bowl and mix to combine. If the mixture is too thick, add a little milk at a time.
  5. Pour into the prepared casserole or baking dish and bake for 25-30 minutes.
  6. Serve and enjoy, top each serving with some chopped cooked bacon.
Recipe Notes

I cannot price this until I locate Monterey Jack cheese. For now I will say fair value.

Variant: 1. Add chopped ham, cooked sausage, cooked and chopped chicken.

I have not done this yet, but will soon. When I was growing up, we had a wood stove we cooked on, and it had an oven, I used to make the baked potatoes but inserted a large nail (very clean) into the potato, theory is that when the nail heats up it cooks the inside of the potato faster, seemed to work. This is on my to make list and soon. This is based on one potato per serving as a side.

  1. Wash potato well to remove any dirt and grit, prick with a fork several times and place on a plate.
  2. Place in the microwave and 'nuke' the potato for 5 minutes on High power. Turn potato over and 'nuke' for another 5 minutes.
  3. Remove potato, cut nearly in half and spread apart, season with salt and pepper to your liking, mash just a bit with a fork, add the butter and 2 tablespoons of the cheese.
  4. Nuke again on High setting for 1 minute. Remove from the microwave and top with remaining cheese and sour cream to your liking, garnish with chopped chives or spring onion if desired.

  1. Preheat your oven to 200 C (400 F). Oil a baking sheet with 1/2 tablespoon of olive olive oil or just lay a piece of parchment paper on the baking sheet.
  2. Heat a non stick pan on medium heat and add a splash of oil, when hot, add the ground beef, when cooked through, add the taco seasoning, and season with salt and pepper to taste. When cooked, drain oil.
  3. Place the tortilla on the baking sheet, sprinkle with 1/2 cut of cheese, top with beef, then top with another 1/2 cup cheese. Bake until the cheese is melted, about 7 to 8 minutes.
  4. Remove and sprinkle on remaining cheese, lettuce, tomatoes, and sour cream. Top with avocado if desired.
  5. Serve.

  1. Preheat your oven to 190 C, lightly grease a 9x13 baking dish with butter.
  2. Sprinkle the meat on both sides with black pepper and some of the Parmesan cheese, do not use any salt. Place the chicken in the baking dish.
  3. Pour 1/4 cup of salad dressing over each piece, then sprinkle remaining Parmesan on each one. Bake uncovered for 30-40 minutes or until juices run clear.
  4. Change the oven to broil and continue to cook the chicken for 2-4 minutes or until the chicken is nice and golden colored. Remove from the oven and cover with foil and let rest for 5 minutes.
  5. Serve with mashed potatoes, pasta, or rice, and a vegetable.
Optional, for a thicker crust
  1. Mix the sour cream into the dressing, and just follow the steps above as stated.

  1. For the sour cream, you can substitute Greek yogurt but omit the lemon juice. You can also make make the sour cream using labneh, shortcut for that is in the Recipe Notes section below.
  2. For the salt, you can make the dressing with the salt included but the salad will need to be consumed just after making or within just a few hours as the salt will cause the cucumbers to weep. An alternative is to salt the cucumber slices in a sieve and let them set for an hour, gently squeeze out remaining moisture, then proceed as directed, which will result in crispy cucumbers for 2-3 days with the dressing. This photo is of the cucumbers salted and draining.
  3. Using a small bowl, add the sour cream (or Greek yogurt), lemon juice only if using sour cream, garlic, salt and pepper. Mix and refrigerate until needed. Best results if you mix the dressing into the vegetables just before serving. If using the salted cucumber method, omit the salt in the dressing mixture.
  4. Place the cucumber and onion in a bowl, add the dressing and mix and serve then or within 2-3 hours, keeping the salad refrigerated until use.
  5. If using the salted cucumbers, mix in the dressing and refrigerate until use, store leftovers in the fridge for 2-3 days. I used salted cucumbers so everything is mixed and goes into the fridge to chill. I also added the julienned carrot for a bit of color.
  6. Serve as a side as is or on a bed of lettuce for a nice presentation and a light meal.

  1. Preheat your oven to 180 C. Heat oil in a large skillet over medium-high heat. Add pork chops and saute until browned. Remove from skillet and drain on paper towel.
  2. In a medium bowl mix together the soup, milk, sour cream, and salt and pepper to taste. Stir in potatoes, 1/2 cup cheese and 1/2 cup onions. Mix together and spread mixture in the bottom of a 9×13 inch baking dish. Arrange pork chops over potato mixture.
  3. Cover dish and bake for about 40 minutes, or until internal temperature of pork has reached 71 C. Remove cover, top with remaining cheese and onions and bake uncovered for 5 more minutes.
  4. Serve with a steamed vegetable for a complete meal.
Recipe Notes

Tops has pork loin steaks for 83 Baht for 2, 4 loin steaks would be 166 Baht. The cheese will cost about 90 Baht. For 4 servings, this is about $1.88 per serving.

  1. Cut the broccoli into bite size pieces, including the stems. Bring a large pot of water to a boil. Add the broccoli and cook for 1 minute. Place broccoli in an ice bath or rinse with cold water to stop cooking, drain well.
  2. While the broccoli is draining, in a medium bowl, whisk together the Dressing ingredients.
  3. In a large bowl, add the broccoli and the remaining Salad ingredients. Pour the Dressing over the top and gently toss to coat all ingredients. Season with salt and pepper to taste.
  4. Chill the salad for several hours or overnight before serving.
Recipe Notes

Figure about 40 Baht/head for the broccoli. Going with 4 heads, as they are normally small, about 160 Baht. Figure 90 Baht for the cheese (about half a 250 gram block). Figure about 150 Baht/250 grams bacon. For 6 servings, this is about $1.96 per serving, not a cheap salad but it does sound good tasting.

  1. Preheat your oven to 200 C. Grease an 8 inch or 7x11 baking dish with butter.
  2. To the casserole dish, add the egg noodles, chicken, peas and carrots, soup, sour cream, and milk. Mix together.
  3. If you like your casserole with a crunchy topping, mix together the breadcrumbs, melted butter, pepper, and salt in a medium bowl. Sprinkle the top of the casserole with the breadcrumb mixture.
  4. Bake the casserole for 15 to 20 minutes, or until the top is bubbling and the breadcrumbs (if using) are toasted. Serve.
Recipe Notes

For the chicken, use any parts you like, bake or boiled is fine. If you boil, reserve the broth for use in another recipe. Maybe 40 to 50 Baht worth of chicken in this recipe. For 4 servings, this is about 37 cents per serving.

Variant: Double the recipe and use a 9x13 baking dish.

  1. Boil the beets in a pot of water until fork tender, 30 to 40 minutes. When tender, drain and let cool. Cut off the stem end and remove the skin under running water.
  2. Slice the beets in half then slice each half into 1/4 inch thick slices. Toss the beets with the sugar, salt, and vinegar. Then stir in the sour cream. Refrigerate for at least an hour before serving, garnish servings with fresh dill.

  1. Place potatoes in a large pot and cover with 1-2 inches of cold water. Bring up to a boil, then reduce heat and cook for 20 minutes, or until fork tender.
  2. Remove pot from heat, drain potatoes and return to empty pot. Preheat your oven to 180 C. Smash potatoes to desired consistency, season to taste with onion powder, garlic powder, salt and pepper.
  3. Mix in cream cheese, sour cream, milk, Parmesan cheese, butter, and 1 cup Cheddar cheese, then transfer to a 9×13-inch baking dish.
  4. Sprinkle bacon and remaining cheddar cheese over the top and place in oven; bake for 15-20 minutes. Remove from oven and let cool 5 minutes before serving.
  5. This would be good with pork chops, pork steaks or fried chicken.
Recipe Notes

Figure about 130 Baht for the bacon, 120 Baht for the Cream cheese, and 180 Baht for the Cheddar cheese. For 8 servings, this is about $1.58 per serving, expensive for a side but would be great for visiting friends and family.
