  1. In a large non stick pan on medium heat, brown the ground beef until almost cooked through, chopping it up with the spatula as it cooks. Drain off the fat.
  2. Add the onion, peppers, and garlic and cook until the onions and pepper is softened.
  3. Add the Worcestershire, beef broth, and sprinkle in the flour and stir. Cook to thicken the mixture.
  4. When thickened, stir in your favorite cheese.
  5. Serve on toasted rolls or bread of your choice.
Recipe Notes

Figure about 250 Baht for the beef. When I get some Provolone again I will be able to price this per serving. For now I will say fair cost.

  1. Heat your grill to medium with either charcoal or gas. You will be cooking over indirect heat.
  2. In a large mixing bowl, combine the beef, Worcestershire sauce and garlic powder, divide into 4 half pound balls. Place a beer can on top of a ball and push down and form the beef around the can and just a bit up the side. Wrap two slices of bacon the burger. Twist the can to remove that, the burger should have a nice deep indentation in it. Repeat this for the remaining balls. Season each indentation and the rest of the burger with ample salt and pepper to taste.
  3. For 2 burgers, add cubed Cheddar and Jalapeno slices in each indentation.
  4. For the 2 burgers with Bell Pepper, add the bell pepper and onion in each indentation then top each with a slice of Provolone.
  5. Grill the burgers over indirect heat, and covered, until cooked through, 30 minutes should be a medium burger.
  6. To serve, place lettuce and tomato on the bottom bun, place a burger on top, top with the top bun.
Recipe Notes

Beef will cost about 200 Baht/kilo. Cheddar about 180 Baht for 2 cups cubed, Provolone about 45 Baht for 2 slices. For 4 servings, this is about $3.13 per serving. Not cheap but sounds really good for a once in a while cookout with friends and family.

  2. Put slice of cheese on one piece of bread, add tomato slices, sprinkle with salt, pepper, and Italian seasoning. Cover tomato slices with other slice of cheese, then cover with other piece of bread mayo side down.
  3. Heat a skillet on medium heat with butter and garlic powder. Spread butter on the top slice of bread. Place sandwich in the skillet, buttered bread facing up.
  4. Cook until golden brown, flip and cook the other side, serve.

  1. Take the prepared dough out of the fridge, coat a 18x13 inch rimmed baking sheet with the olive oil. Gently and gradually stretch dough until it reaches the edges of baking sheet. (If dough springs back or is stiff to work with, let it rest 10 minutes before continuing. You may need to let it rest more than once.)
  2. Preheat your oven to 250 C.
  3. Cover dough on baking sheet tightly with plastic wrap and let sit in a warm place until it is puffed and full of air bubbles, 30 to 40 minutes.
  4. Once dough has risen in baking sheet, top with mozzarella and provolone, dot pie with tomato sauce, and top with the onion and olives.
  5. Bake until golden brown and crisp on bottom and sides, 20 to 30 minutes.
  6. Cut into squares and serve.
Recipe Notes

The Mozzarella cheese is about 220 Baht/for the 340 grams. Provolone I cannot price but a guess is about 150 Baht. For 6 servings (at least), this is about $1.82 per serving.

  1. Preheat your oven to 180 C. Get out a 9x13 baking dish.
  2. In a large skillet, brown the ground beef with the garlic, season with salt and pepper as desired, add the Italian seasoning, drain fat off when cooked and remove beef to a bowl.
  3. Same skillet, cook the peppers and onion until soft. While that is cooking, heat a pot of salted water to boiling then cook the pasta to just tender.
  4. When the peppers and onions are done, add the ground beef back to the skillet and mix. Tear up the slices of cheese and add to the skillet and let them begin to melt, 2-3 minutes is all that is needed, it's ok if the cheese is not fully melted.
  5. In a large heatproof mixing bowl, add the ground beef mixture and the drained pasta and mix everything together. Pour this into the baking dish and top with a few slices of Provolone, bake for 15-20 minutes or until the edges are starting to brown and the cheese is melted and starting to brown. Serve.
Recipe Notes

The beef will cost about 150 Baht/750 grams. The cheese, Mozzarella, will cost about 250 Baht/350 grams. I cannot price Provolone yet. For 8 servings, this is about $1.47 per serving.

  1. In a small pan lightly fry the thin sliced green bell pepper in just a bit of olive oil, when just getting soft, remove from the pan to a plate lined with paper towels. Set aside.
  2. Heat a heavy flat bottomed pan, cast iron is perfect, with about a tablespoon of butter. Lay down a slice of rye bread on the counter, place a slice of Provolone cheese on it, add several good layers of salami, on top of the salami add some of the green bell pepper, then top that with another slice of cheese. Take the other slice of bread and butter one side, place that on top of the sandwich with the buttered side facing up.
  3. When the pan is hot, pick up the sandwich and place in the pan. Watch the bottom closely, takes only a minute or so to turn golden brown, then using a large spatula, carefully flip the sandwich over and cook the other side. When golden brown, remove to a plate and cut in half. Enjoy.

  1. Season the beef with salt and black pepper. Heat a splash of olive oil large non stick skillet over high heat. Add the beef and brown on all sides. Place the beef in your slow cooker slow cooker.
  2. Add the onion, garlic, thyme sprigs and soup to the cooker. Cover and cook on High setting for 4 1/2 hours or until the beef is tender. NOTE about the beef, if using local raised beef from a village, you may want to cook for longer, check it at 4 1/2 hours then keep cooking and checking every hour after that.
  3. When the beef is almost done, heat the oven to 180 C. Line a baking sheet with parchment paper. Place the rolls, cut-side up, onto the baking sheet. Divide the cheese among the rolls. Bake for 1 minute or until the rolls are toasted and the cheese is melted.
  4. Remove the beef to a cutting board. Cut the beef into thin slices. Divide the beef among the rolls. Serve with the soup mixture from the slow cooker on the side for dipping.
Recipe Notes

Beef will run about 200 Baht for local raised beef, figure 300 Baht for the beef. For 8 servings, this is about $1.10 per serving, actually not that bad at all. I cannot price this with the cheese yet.

  1. Heat a splash of olive oil in a non stick pan on med heat, add the sliced onion and cook until translucent but not browned. Add the cooked onion to the beef stock, season with salt, pepper, and thyme.
  2. Place the roast in your slow cooker, pour the stock over the top of the roast. Cover and cook on Low setting for 8 hours or High setting for 4 hours. Leave the cover on, you want this to be falling apart beef!
  3. Preheat your oven to 180 C.
  4. Remove 3 cups of liquid from the slow cooker and add to a sauce pan. Heat on medium and bring to a boil, then reduce to a simmer and cook until reduced by half, about 10 minutes.
  5. Remove beef from the slow cooker and place on a plate and shred with a fork.
  6. Place the sandwich rolls on baking sheet and spoon meat on to the rolls, top each roll with Provolone cheese. Cover with foil and bake for 5 minutes or until the cheese is melted. Serve with the sauce on the side for dipping.
Recipe Notes

Beef will run from 150 to 200 baht/kilo. The cheese I do not have a price for, yet. When I make this I will give a much better estimate on the cost per serving. I will go with 300 Baht for the beef, and 100 Baht for the cheese. This comes out to about $1.50 per serving for 8 servings.

  1. Preheat your oven to 200 C.
  2. Roast beef, this is supposed to be deli sliced roast beef, now unless you have you have a big budget, there is no need to go Villa Market or Rimping in Chiang Mai, make a nice roast beef dinner the day before, use some beef the next day for this recipe. I will not figure roast beef into this recipe.
  3. In a non stick pan heat some olive oil and saute the onions, garlic, and mushrooms (if using) and the diced the tops of the peppers and cook for 5 to 10 minutes on medium heat or until lightly browned & tender, then add the sliced roast beef strips & steak seasoning and stir and cook until heated through.
  4. Place the bell peppers in a baking dish, add a slice of Provolone cheese to the bottom of each pepper. Then add the beef mix to about halfway up each pepper, add another slice of cheese, then more beef mixture, then top with another slice of cheese, tucking the edges of the cheese into the pepper.
  5. If you have more beef filling than peppers, you can do one of two things, cut the top off another pepper, or two, and fill those, or just pack the meat around the peppers in the baking dish.
  6. Bake for 15 to 30 minutes or until the peppers are cooked through. Serve with some pasta or boiled potatoes on the side.
Recipe Notes

I cannot price this as I do not know what Provolone cheese costs. The roast beef, if you choose to get deli meat, that is up to you, if you make this after you cook some roast beef, that is already covered. Safe to say with Provolone cheese, this could be a pricey meal.

  1. Grease your slow cooker with butter. In a medium bowl, toss together the pasta and cream, set aside.
  2. Add to the slow cooker the chicken, onion, Italian seasoning, and a dash of salt if you like. Mix together and pat this down, with some of the chicken going up along the sides.
  3. Pour the pasta mixture into the center, keeping the pasta from touching the sides of the cooker.
  4. Pile the mushrooms over the pasta, covering all of the pasta. Cover the mushroom with foil but not touching the sides of the cooker.
  5. Cover the cooker and cook on Low Setting for 6 hours or High Setting for 3 hours. Turn off heat, stir in cheese, and serve.
Recipe Notes

The chicken would run about 63 Baht/kilo, get 1 1/2 kilos and debone and remove skin yourself. The cheese will be pricy if you can find the 6 cheese blend, but if you go with just Mozzarella, Parmesan, and Provolone, about 1/3 cup each, I will say this would cost no more than 150 Baht. This meal would come out to about $1.20 per serving, not bad. I will update pricing once I make this.
