  1. Peel the eggs and cut in half lengthwise, remove the yolks and place those in a mixing bowl, place the egg halves on a serving tray.
  2. To the yolks, add the mayo, chopped pickles and pickle juice, dill, and mustard. Mash with a fork until mixed well and creamy. Taste and season with salt and pepper to your liking.
  3. Fill the halved eggs with the yolk mixture. Garnish with a slice or two of thinly sliced pickle, then a light sprinkle of paprika, and just a list sprinkle of chopped dill. Refrigerate for at least an hour or two before serving.

  1. Chicken can be prepared two ways:
  2. First way: In a medium pot, add the chicken, fill with water and a teaspoon of salt and bring to a boil then reduce to a simmer. Cook for about 15-20 minutes or until cooked through, remove chicken and allow to cool and handle, then dice that and add to a large mixing bowl. Strain the broth and save (refrigerate) for use in another recipe.
  3. Second way: In a medium pot, add the chicken, fill with water and a teaspoon of salt, add trinity (1 carrot large pieces, 1 onion quartered, 1 stalk celery large pieces), and bring to a boil then reduce to a simmer. Cook for about 15-20 minutes or until the chicken is cooked through.
  4. Remove the pot from heat and let sit until room temp with the chicken in the broth, this makes for juicier chicken. Remove the chicken and dice and add to a large mixing bowl.
  5. Strain the broth and save (refrigerate) for use in another recipe.
  6. Dice the potatoes and carrots to the same size and place in a medium sized pot (same pot used for the chicken would be ideal). add enough water to cover the vegetables by an inch, stir in 1 teaspoon of salt. Bring to a boil uncovered and continue cooking for 10-15 minutes or until the vegetables are tender. Drain in a colander and rinse with cold water to stop the cooking process, drain well to remove any water. Add to the mixing bowl with the chicken.
  7. Add the peas, eggs pickles, onion, and dill to the mixing bowl, give it a quick stir to mix everything, then add the mayo, salt, and black pepper and mix that in. (I used 3 chicken eggs and a handful of quail eggs, plus I used diced celery in place of peas.)
  8. For the mayo start out with less than a cup and add as needed to fully coat everything.
  9. Cover and refrigerate for at least two hours before serving. Serve as a side dish, or in my case, this is a light main dish for me. I can see this being a main dish with a fresh cooked cob of corn on the side.
Recipe Notes

The chicken breasts will cost about 35 Baht/500 grams. For 8 servings (as a side), this is about 13 cents per serving.

Shortcut: Refrigerator Pickles.

Variants: 1. Substitute cooked diced ham or kielbasa for the chicken. 2. Add sliced red radish or diced daikon. 3. Use a combination of chicken and quail eggs. 4. Substitute diced celery for the peas.

  1. Cook the pasta in a pot of boiling water until tender, drain and rinse under cold water to stop the cooking process and to cool it off. Toss the pasta with 1/2 cup pickle juice and set aside for 5 minutes then drain and discard the juice and place the pasta in a large bowl along with the rest of the Salad ingredients and toss to mix together.
  2. In a small bowl, mix the dressing ingredients together. If you do not have sour cream, start with the amount of mayo stated and add more mayo as needed to coat everything yet not be dripping with mayo either. Pour this onto the pasta in the large bowl and and toss to coat everything. Refrigerate for at least an hour before serving.

  1. Cut each chicken breast in half and pound them to 1/2 inch thickness. Sprinkle each piece on both sides with paprika, salt, and pepper to your liking. Place them in a large zip lock bag or plastic bag, like a Tesco shopping bag, and pour the pickle juice over them. Press out the extra air by twisting the bag, then place that in a bowl and place the fridge for 6 hours our anytime up to overnight.
  2. Preheat your oven to 230 C and place a wire rack on a baking sheet and set aside. While the oven is heating, stir together the flour, spices, sugar, and baking soda in a bowl and set aside. In another bowl whisk together the egg and milk. Take the chicken out of the fridge, dip each piece in the egg mixture the coat well with the flour mixture making sure the entire piece is coated with flour.
  3. Place the chicken on the wire rack and generously spray each piece with olive oil, coating the flour completely. Turn the pieces over and spray the other side with olive oil. Bake for 12 minutes, then turn the chicken over and bake another 15 minutes or until the chicken is golden brown, crispy, and cooked through. Remove from the oven and top with cheese of your choice and let these rest for 5 minutes.
  4. Butter each bun and place on a sheet and bake for 3-4 minutes until toasted. Place 3-4 pickle slices on each bottom bun, top with a piece of chicken and the other toasted bun. Serve.

For 2 chicken breasts, this is low cost even if using cheese.

  1. In a non-stick pan heat a splash of olive oil and cook the bacon until it is almost crisp, remove from the pan and drain on a paper towel. Add more olive oil if no bacon remains, heat and add the onion and garlic and cook until the onion is soft. Add the chicken and cook until lightly browned and just cooked through.
  2. Add the stock and once it simmers, add the cream cheese and break that up with your spatula. When the cream cheese is melted into the liquid, add the sour cream and Parmesan cheese and stir to combine into the sauce, cook for several minutes to thicken the sauce and season with salt and pepper to your liking.
  3. When the sauce has thicken, mix in the bacon and pickle and server over mashed potatoes or rice. Garnish some scallion and pickle slices if desired.
Recipe Notes

Chicken thighs will cost about 35 Baht/500 grams, you can bone and skin these yourself. The cheese needed for this is minimal so I will estimate about 50 Baht for the cheese needed. For 4 servings, this is about 63 cents per serving. Excellent value.

  • 2 cups ham fat removed, minced
  • mayo as needed
  • 1 tablespoon onion finely diced
  • 1 teaspoon dry mustard powder
  • 1 tablespoon sweet pickle relish OR, mince up a small picckle or two and and a bit of juice, can make pickles from a shortcut on this site

  1. Use a cleaver and a wood chopping block and mince the ham, mix with all other ingredients and refrigerate.
  2. Serve on crackers, crackers and cheese, or use for sandwiches.

  1. Heat your oven to 200 C. Lightly grease a baking dish with butter.
  2. In medium size saucepan, stir frozen vegetables, tuna, soup, milk, pickle, and lemon juice until well mixed. Heat over medium heat 6 to 8 minutes, stirring occasionally, until vegetables are thawed and mixture is hot and starts to bubble. Pour into baking dish.
  3. In medium bowl, stir Bisquick mix and cold water with a fork until soft dough forms; beat vigorously 30 seconds. Drop dough by 4 spoonfuls onto tuna mixture; sprinkle with paprika if desired.
  4. Bake uncovered 20 to 25 minutes until biscuits are golden brown. Serve.
Recipe Notes

Using fresh tuna and the shortcut for the soup this is under 60 cents per serving for 4 servings. If using canned tuna and canned soup, this is just a bit over $1 per serving for 4 servings. Use local caught fish and use the shortcuts and fresh veggies when you can.

  1. Preheat your oven to 180 C. Get out a couple of loaf pans.
  2. In a large bowl combine all the ingredients with just a large spoon, no need for hand mixing, takes just a minute.
  3. With your block of cheese, you will need 10-12 slices (1/2 to 2/3 of the block), the rest of the block you need to shred for the topping. This is the cheese I use. This Mainland Brand Cheddar cheese, 250 grams, from New Zealand, and is real cheese.
  4. I use two loaf pans when making meatloaf. Take the meat mixture and pat down in the bowl and using the large spoon, mark it into 4 sections, use 1/4 of the mixture in each loaf pan, spread out and pack down, then top with the cheese slices, 5-6 slices on the meat mixture.
  5. Use the remaining meat mixture to to cover each loaf pan. Top with more BBQ sauce. Bake for for 40 minutes, and use a meat thermometer to check internal temp then continue to bake about 10 minutes more to ensure the cheese is melted. Remove from oven and sprinkle on the shredded Cheddar cheese and return to the oven for just a few minutes to melt the cheese on top. Remove from oven and let rest for about 5-10 minutes before serving.
Recipe Notes

Minced pork is about 135 Baht/kilo. The block of cheese will cost about 180 Baht. For 8 servings this would be about $1.12 per serving, for 10 servings this would be about 90 cents per serving. Very reasonable.

Variants: Layer in some sliced mushrooms over the cheese before adding the remaining meat mixture. Another variant would be to add sliced bacon to the top.
