Instructions
  1. Add the shredded chicken (bite size pieces) to a large mixing bowl, add the celery and spring onion. Toss to mix together.
  2. In a bowl, whisk together the mayo, mustard, olive juice, lemon or lime juice, and the celery seed. Taste and season with black pepper as desired.
  3. Add some dressing to the mixing bowl and gently mix to coat everything, add dressing as needed until everything is coated well but not dripping in dressing.
  4. Now gently fold in the olives and mix until they are distributed and lightly coated with dressing.
  5. Cover and place in the fridge for several hours before serving. Enjoy.

Instructions
  1. Preheat your oven to 180 C (350 F) and line a loaf pan with parchment paper and lightly spray some olive oil on the paper and sides of the pan.
  2. In a large mixing bowl, cream together the sour cream, oil, eggs, and sugar until smooth.
  3. Add the flour, baking powder, and salt, stir until just combined.
  4. Fold in the cheese and olives.
  5. Pour into the prepared loaf pan. Bake until golden brown and a toothpick inserted into the center comes out clean.
  6. Remove from the oven to a rack to cool completely.
  7. Run a knife around the sides and turn out onto a rack. Slice when cooled, and better if chilled first.
