  1. In a large non stick pan on medium heat, brown the ground beef until almost cooked through, chopping it up with the spatula as it cooks. Drain off the fat.
  2. Add the onion, peppers, and garlic and cook until the onions and pepper is softened.
  3. Add the Worcestershire, beef broth, and sprinkle in the flour and stir. Cook to thicken the mixture.
  4. When thickened, stir in your favorite cheese.
  5. Serve on toasted rolls or bread of your choice.
Recipe Notes

Figure about 250 Baht for the beef. When I get some Provolone again I will be able to price this per serving. For now I will say fair cost.

  1. Preheat your oven to 220 C (425 F).
  2. Heat a pot of salted water to a boil, then add the pasta and cook that until just tender, drain well (let cool for a few minutes before adding to a Pyrex dish) pour into a 9x13 baking dish.
  3. While the water is heating for the pasta, heat a large non stick pan and add the sausage and break it with a spatula as you cook it, add some chopped up pepperoni slice if want and add to the pan as well, as much as you like. When cooked through, do not drain, just pour into the baking dish and mix with the pasta until "all the pasta is coated with the yummy meatiness." (Author's words, very cool!)
  4. Add the pasta sauce and mix together, now add the pizza cheese blend and mix that in. Once mixed, smooth out the top evenly, top with Mozzarella, then a layer of pepperoni slices.
  5. Bake until bubbly, about 25 to 30 minutes. Remove and let rest for a few minutes, you have a bubbly dish of cheese lava, you are just cooling it a bit before serving.
  6. Serve. Garlic bread would be a great side dish.
Recipe Notes

The sausage if you make yourself, about 45 Baht. The cheeses will cost about 175 Baht for the pizza cheese blend, and 140 Baht for the Mozzarella. For 6 servings, this is about $1.77 per serving.

Variants: 1. Easy, anything you like on a pizza. The author, Amy, says diced green bell pepper and sliced mushrooms is a very good addition. 2. To make this leaner, use chicken sausage.

  1. Preheat your oven to broil, if using a counter top oven, heat the top coil. Line a baking sheet with parchment paper. Place the mushroom caps on the paper with the top of the caps upwards.
  2. Mix together in a bowl, the oil, garlic, and Italian seasoning. Brush the mushroom caps with the oil mixture, then turn the caps over so the underside is facing upwards.
  3. Spoon on the pasta sauce, divided among the 4 mushrooms, onto the mushrooms, sprinkle on the cheese also divided between the mushrooms, then top the cheese with some cooked sausage, then some pepperoni slices.
  4. Broil for about 8 minutes or until the cheese is starting to brown.
  5. Serve.

Low cost really but I cannot say for sure until I source the mushrooms. I will say Low cost for now but that may change once I make these.

  1. Preheat your oven to 180 C. Lightly grease a 9x13 baking dish with butter.
  2. In a pot of salted water, cook the macaroni to just tender, drain.
  3. In another pot, heat the butter then saute the garlic, thyme, jalapeno pepper, and paprika for about a minute, then add the onion and saute until just translucent.
  4. Add the ground beef and season with salt and both types of pepper. Cook until the beef is no longer pink and browned. Sprinkle in the flour and mix in and cook for another minute or two.
  5. Add the tomatoes and cook for a few minutes to soften them up then add the macaroni then the milk, stir and mix well, adjust salt and pepper to taste. Stir in half the cheeses.
  6. Pour into the prepared baking dish, top with remaining cheese. Bake uncovered for 20-30 minutes or until heated through and the top is starting to brown.
  7. Remove from oven, let rest for 5 minutes, serve.
Recipe Notes

For the beef figure about 150 Baht for 500 grams. For 6 servings, this is about 75 cents per serving.

Variants: 1. Change the cheese to Swiss or a 4 cheese blend. 2. Change the meat to ground chicken or ground pork. 3. Add chopped bell pepper. 4. Add sliced mushrooms. 5. Instead of baking, just prepare on the stove.

  1. Melt butter in a pot over low heat, add onions and stir, cover and stir occasionally, cooking for about 30 minutes.
  2. Add the broth and Worcestershire sauce and stir in and increase to a boil then reduce to a simmer. Simmer uncovered for about 30 minutes and the broth will reduce a lot.
  3. While the broth is reducing, preheat your oven to 180 C and grease a baking dish, I would say an 8x8 or 7x11, with butter. Lightly toast the French bread, you can do that while heating the oven.
  4. Pour the onion mixture into the prepared baking dish. Add the toast slices to the top in an even layer and space them out about 1/2 inch apart.
  5. Add the Mozzarella over the toast, then the Parmesan. Bake for 20-30 minutes or until the cheese is melted and nicely browned.
  6. Let rest for a few minutes, serve as a side dish.

Cheese is the only costly items here. Figure about 90 Baht for the Mozzarella. For 4 servings, this is about 66 cents per serving.

  1. In a large bowl, add the warm water and sugar and stir to dissolve the sugar, then sprinkle in the yeast and stir in until that is dissolved. Let this stand for 5 minutes.
  2. Mix together the flour and salt then mix in the oil. When 5 minutes have passed, add the flour mixture to the yeast mixture and stir to form a soft dough. Turn out dough onto a floured work surface and kneed for about 5 minutes until dough is soft and elastic.
  3. Shape dough into a ball and place on a lightly oiled baking sheet, flatten lightly. Cover with plastic wrap and let rise in a warm place for 20 minutes.
  4. While the dough is rising, cook the ground beef in a non stick skillet and break it up as it cooks, season with salt pepper as desired. Drain then add the pasta sauce to the ground beef and mix together.
  5. Heat your oven to 250 C. Divide the dough into 4 equal parts, pat each one into about a 7 inch circle. Should be able to put 2 on each baking sheet.
  6. Top each pizza with 1/4 of the meat sauce, then 1/4 of the Mozzarella. Bake for about 18 to 20 minutes or until the cheese is melted and the crust is golden brown. Remove from oven, sprinkle with Parmesan cheese.
  7. Serve.
Recipe Notes

Figure about 170 Baht for the Mozzarella cheese, the beef about 50 Baht for 250 grams. For 6 servings, this is about $1.08 per serving, depending on the toppings you wish to add, this will increase the cost per serving.

Variants: 1. Add toppings of your choice, such as sliced bell pepper, onion, cooked bacon, cooked Italian sausage, chopped spring onion, slice green olives, pepperoni, etc. 2. Change the Mozzarella to a different cheese, like a 4 blend cheese.

  1. In a large non stick skillet heat the olive oil over medium heat, when hot, add the chicken and garlic and cook and stir often until the chicken is no longer pink in the center, about 5 to 8 minutes.
  2. Add the wine and diced tomatoes with their juice into the pan and bring to a boil over high heat while scraping the bottom of the pan with a spatula.
  3. Stir in the pasta and return to a boil and cook without covering stirring often until the pasta is cooked through but firm, about 10 to 15 minutes, add chicken stock if the pan is getting too dry or you want more sauce. spread the spinach over the top, cover and reduce to a simmer and cook for about 5 minutes, either to wilt and cook fresh spinach or heat through frozen thawed spinach.
  4. Sprinkle on the cheese and simmer until the cheese is melted and the pasta is bubbly.
  5. Serve.

For the chicken, figure about 70 Baht. For the cheese, figure about 90 Baht. For 4 servings, this is about $1.17 per serving.

I love ravioli, when we lived in Phuket, we bought fresh made ravioli from an Italian producer, excellent ravioli. Where I live now, no ravioli, so I decided to make some yesterday, 26 Aug 2017. No servings are given, the only items with measurements is the egg pasta dough. Feel free to use any filling you like, and any sauce you like, this here is what I prepared.

For the Egg Pasta Dough
  1. In a large bowl, add the flour and mix in the salt and sugar. Make a well in the center and crack in the eggs. Use your fingers to slowly mix the eggs and flour together until it forms a ball, it will come together. Knead the dough for just a few minutes, adding flour if it starts to get sticky. Wrap the dough in plastic wrap and place in the fridge while you prep the filling.
For the Filling
  1. Heat a skillet and crumble in the sausage and cook through, pour the meat into a strainer to thoroughly drain any fat.
  2. While the sausage is cooking, prep the mushrooms, can be any mushrooms you like, just rinse, and chop. I used two handfuls of small Shiitake mushrooms, stems and caps, chopped.
  3. After you remove the sausage from the pan, use the same pan, heat a splash of olive oil then add the mushrooms. cook until browned.
  4. Add the mushrooms to the strainer with the sausage to let that drain a bit, then add a handful or so shredded Mozzarella.
  5. Once the sausage and mushrooms are drained, pour that into a mixing bowl and stir together and let cool.
To Assemble
  1. Take your dough from fridge and cut into quarters. Using 1 piece of dough, flour a a work surface and roll out the dough with a rolling pin, get it as thin as you can.
  2. I used a dumpling press (3 inch size), you can use any method you prefer. When the dough is rolled out, cut circles just a bit larger than the press.
  3. Take a circle and flip it over and place on the press, push down in the center to fit the press, then press along the edges to make sure dough it tight on the press.
  4. Take about a teaspoon of filling and place in the center of the press. Use a brush and brush one side of the edge of the press with water.
  5. Fold the press in half and squeeze to crimp the edge, any of the dough that comes out from the press, just scrape off with a knife. Open the press and remove the ravioli and place on a lightly floured plate.
  6. Take the leftover dough, form into a ball, roll out and repeat the steps. I used 2 pieces of dough from the original ball and made 15 ravioli.
  7. For the sauce, just whisk together the paste and water. The ratio for sauce is 2 cans of water to 1 can of paste, I use the 220 gram can. Whisk in the Italian seasoning and put on stove on low heat to simmer while you cook the ravioli. I also added several large spoonfuls of filling to the sauce.
  8. Heat a pot of salted water to boiling. Add some ravioli using a slotted spoon without over crowding the pot, I cooked 15 ravioli in two batches. Cook for 4 to 5 minutes, remove with a slotted spoon to a plate.
  9. Serve and enjoy.
Recipe Notes

Ground pork if using the shortcut is about 50 Baht/kilo. This is actually a low cost meal.
