  1. For the noodles, you can do this several ways; 1. Use boil first noodles and cook until just before done and drain and use. 2. Use oven ready noodles but briefly boil them first to just soften them up and drain and use. 3. Make your own egg pasta noodles and precook for 30 seconds in boiling water and drain and use.
  2. Preheat your oven to 190 C. Grease a 9x13 baking dish with butter. Prepare the noodles as directed above.
  3. In a large skillet, heat the butter on medium heat and add the onion and season with salt and pepper to your liking. Cook until soft, 10-15 minutes.
  4. Place 4 noodles in an even layer on the bottom of the baking dish. Layer 1/2 of the onion over the noodles then layer 1/2 of the mashed potatoes over the onion, then 1/2 cup of cheese.
  5. Repeat with another layer of noodles, remaining onion, remaining potatoes, and 1/2 cup of cheese.
  6. Place the last noodles on the top and the remaining cheese.
  7. Bake for 30 minutes or until hot and bubbly. Serve hot.
Recipe Notes

For the Cheddar cheese, figure about 180 Baht. For 6 servings, this is about 89 cents per serving.

Shortcut: Cottage Cheese.

Variants: Add cooked chopped bacon as another layer or add cooked chopped bacon mixed right into the mashed potatoes.

  1. Place a rack on bottom shelf of oven; preheat to 230 C. Line a large baking sheet with foil and lightly grease with olive oil.
  2. Heat oil in a large skillet over medium heat. Add onion; cook until softened, about 10 minutes. Add garlic, and red pepper if desired. Cook for 30 seconds. Reduce heat to low. Add broccoli. Cook for 2 minutes. Cover and cook until broccoli is crisp tender, about 3 minutes. Remove skillet from heat and stir in spinach.
  3. In a large bowl, combine Ricotta, Mozzarella, and Parmesan, season with salt and pepper as desired. Stir in broccoli mixture. Working with 1 portion at a time, divide dough into 4 pieces, roll out dough on a lightly floured counter into 8 inch rounds. Divide filling among dough circles (about 3/4 cup each). Fold dough over to enclose filling; press to seal edges. Beginning in 1 corner, stretch sealed edge outward, pinching and rolling dough up and over to form a decorative edge.
  4. Transfer calzones to baking sheet. Whisk egg with 1 teaspoon of water. Brush top of each calzone with egg wash. Cut 3 small vents in each calzone. Bake until golden, 13 to 15 minutes. Serve with tomato sauce for dipping if desired.
Recipe Notes

Figure about 72 Baht for the Mozzarella cheese. For 4 servings, this is about 53 cents per serving.

  3. Roll out or use your hands, one piece of dough until flat and somewhat round in shape, does not have to be perfect.
  4. Layer two tablespoons spinach, 1 tablespoon Cottage cheese, and a 1/2 slice mozzarella cheese.
  5. Fold one side of dough up and over ingredients, and seal calzone by crimping the edges together. Place on a parchment lined baking sheet. Repeat for the remaining calzones.
  6. In a small bowl, mix together melted butter, Parmesan, garlic, and parsley, brush each calzone with the mixture.
  7. Bake for 15-20 minutes or until golden brown. Serve with tomato sauce for dipping.

  2. In a mixing bowl, beat the eggs and add in the cottage cheese and sour cream. Stir to combine and add the potatoes and remaining ingredients. Mix together well and pour into the baking dish.
  3. Bake for 20 minutes on the center rack, then move the dish to the upper rack and cook for another 6-7 minutes or until it begins to get golden brown. Let sit for a couple minutes before slicing, serve as a side.

  1. Brown ground beef in a skillet, drain, and set aside.
  2. Pour 1 cup of sauce in the slow cooker and spread around to coat the bottom. Mix remaining sauce with the ground beef.
  3. Place 2 uncooked lasagna noodles on sauce in slow cooker. Spread 1/3 of the meat mixture on top of the noodles. Spread 3/4 cup of cottage cheese over the meat. Sprinkle 1/2 cup Mozzarella over the cottage cheese.
  4. Add another layer of uncooked noodles, 1/3 meat mixture, the remaining cottage cheese and 1/2 Cup mozzarella cheese.
  5. Place another layer of uncooked noodles, remaining meat mixture, then remaining Mozzarella cheese. Sprinkle Parmesan cheese over top. Cook on low for 4 hours. Serve.
Recipe Notes

Figure about 100 Baht for the ground beef, and 140 Baht for the Mozzarella cheese. For 4 servings this is about $1.76. Not a bad price for lasagna.

  1. Heat your oven to 180 C. Lightly grease a 9 inch pie dish.
  2. In a large non stick pan, brown the ground beef and drain, then stir in the garlic salt, Italian seasoning, marinara sauce and 1/2 cup of the Mozzarella cheese. Spread the Ricotta cheese in the bottom of the pie dish, then sprinkle on the Parmesan cheese, next pour the meat mixture over the cheese.
  3. In a separate bowl, mix together the Bisquick mix, milk, and eggs, pour this over the meat mixture. Bake for 30-35 minutes or until a knife inserted in the center comes out clean, then top with the remaining Mozzarella cheese and bake for another 5 minutes to melt and brown the cheese. Remove from oven and cool for 5 minutes before slicing, serve.
Recipe Notes

The ground beef will run about 100 Baht/500 grams. The Mozzarella cheese will cost 142 Baht for one block of 200 grams, shredded that is about 2 cups. Ricotta and Parmesan is low quantities needed so no prices listed. Going with the prices listed, for 6 servings, this is about $1.18 per serving.

  1. Heat a splash of olive oil over medium high heat in a large skillet. Add garlic and cook for 20 seconds. Toss in chicken and saute until just browned. Stir in chicken broth, water, and uncooked pasta to pan. Bring to a boil, then turn heat down to low. Cover the pan and cook on low for about 12-15 minutes, stirring pasta with tongs often so it does not stick to bottom of pan. Remove cover when pasta is al dente and most of the liquid has been absorbed and allow to simmer for 5 more minutes.
  2. Remove from heat and stir in lemon juice, lemon zest, spinach, parsley, basil, Parmesan and Ricotta cheese. Season with additional salt and pepper if needed and garnish with lemon slices and additional Parmesan cheese and parsley, if desired.

This sounds really good and is on my to cook list. Do not get tied up in the type of pasta, Penne pasta is tubular with the ends cut at an angle, Ziti pasta is tubular with the ends cut squarely.   1. Heat your oven to 190 C.
  2. Cook and drain pasta as directed on package. In 12-inch skillet, cook sausage over medium high heat, stirring occasionally, until no longer pink; drain. Add soup (if making the soup from the shortcut on the site, use 2 1/3 cups of soup), pepper, and cooked pasta, stir well.
  3. In a bowl mix the Ricotta (or Cottage cheese), Parmesan cheese, and egg.
  4. Pour the pasta mixture into a 9x13 glass baking dish (or a 7x11 dish if you have that), spoon the cheese mixture over the top, sprinkle the Mozzarella cheese over the top, cover with foil and bake 25-30 minutes, remove foil for the last 10 minutes to brown the cheese. Sprinkle with basil and serve.
Recipe Notes

The pork for the sausage would cost about 65 Baht for 500 grams, even less if using chicken. The cheese is minimal as not complete packages are used, for the Ricotta, do your self a favor and make the Cottage cheese yourself as you would save a lot there. For the soup, that would cost minimum 52 Baht if purchased canned, if you make yourself, the cost is 17 Baht.

Going with store bought prices, the cost is about $1 per person for 6 people. If you make the shortcuts, you can get this down to probably 60 cents per person.

  2. Heat a pan and fry the bacon until crisp, drain, and set aside.
  3. In a large bowl, mix all other ingredients, then add bacon and mix that in as well. Pour into the baking dish and spread out to flatten and evenly distribute the mixture.
  4. Bake uncovered for 30 to 40 minutes or until you can insert a knife near the center that comes out clean, remove from oven and let rest for 10 minutes before cutting. Serve with toast on the side for a great breakfast.
Recipe Notes

The bacon will cost about 310 Baht/500 grams. The Cheddar cheese will cost 180 Baht/250 gram block which is good for 2 cups. The Swiss will cost about 90 Baht as you should only have to use 1/2 block of 250 grams. Cottage cheese I cannot price in a store as it is not carried over here where I am at. Just for the bacon and two of the cheeses, this meal, for 12 servings, comes out to about $1.42 per serving.
