Excellent salad if you like kidney beans, after I mixed I taste tested, perfect. When chilled, it is excellent. If one does not like that much cilantro, just cut back on that. To make this vegetarian/vegan simply leave out the cheese.

Instructions
  1. Add all the salad ingredients to a large mixing bowl and toss together.
  2. In a small bowl, add the dressing ingredients and whisk, taste and adjust as needed.
  3. Pour dressing over the salad and toss to coat. Place in the fridge for a few hours, serve as a side dish. This can be stored in the fridge for up to 5 days. (I chose to add the Feta cheese after this is chilled, that is why you do not see it in this.)

Shortcut: Kidney Beans (Pressure Cooker).

Variants: 1. Add halved cherry tomatoes. 2. Use black beans in place of red kidney beans. 3. For vegetarian or vegan, omit the cheese.

  1. Put all the ingredients in your slow cooker and stir, cover and set to Low setting for 4 hours. Stir occasionally to ensure the Cream cheese is fully melted and combined into the sauce. This will keep well on the Low setting or warm setting for about an hour. Serve as a side.

The Cream cheese will cost about 120 Baht/250 gram block. For 8 side servings, this is about 44 cents per serving.

  1. Use a cast iron pan or non-stick skillet. Melt the butter. Add the corn, do not thaw, just add it frozen straight from the freezer. Fry over medium heat until the corn begins to brown. Stir frequently. Takes about 30 minutes. Add salt and pepper to your liking.

A 500 gram bag of frozen corn at Tesco will run about 79 Baht, Makro would be cheaper. For 6 servings, this is about 38 cents per serving, more servings would be less cost per serving.
