Sounds, this is a major change from what I read, the original recipe called for sliced canned potatoes. I understand the convenience in the states for that, but wow, I never heard of canned potatoes before.   1. Slice the potatoes, skin on or off is your choice, slice about 1/4 inch thick. Boil until just tender, drain.
  2. Preheat your oven to a high broiler temp or if using a counter top oven, heat the top coil to about 190 C, grease a 8 or 9 inch pie dish with butter, Pyrex would be perfect.
  3. Add the beef to a non stick skillet with a splash of olive oil, season with salt, pepper, and garlic powder. Brown the beef and cook through. Remove from heat, drain fat and set aside.
  4. Place a layer of 1/3 of the sliced cooked potatoes on the on the bottom of the pie dish, season with salt and pepper and sprinkle about 1/3 of the cheese, place in the oven until the cheese is melted.
  5. Add the ground beef to the pie dish and spread into a layer, sprinkle with another 1/3 cup of cheese, cover with remaining potato slices, season again with salt and pepper as desired, back into the oven and broil for 6-7 minutes. Remove from oven.
  6. Sprinkle with the remaining cheese, back into the oven and broil for another 1-2 minutes to melt and start browning the cheese. Remove and let rest 5 minutes, serve with a vegetable on the side for a good meal.
Recipe Notes

Figure about 100 Baht/500 grams of beef and 80 Baht for the cheese. For 6 servings, this is about 89 cents per serving.

Shortcut: Seasoning Salt.

Variants: 1. Use ground pork in place of beef. 2. Add some chopped onion and or garlic to the ground meat when browning. 3. Think mashed potatoes instead of sliced and boiled. 4. Use any cheese you want.

For anyone that has been in South Korea, in the bar districts when the Navy visited, there was a street vendor with a cart, they made and sold Ham-O, Egg-O, Cheese-O sandwiches. This is a basic sandwich, and they made bank with these! These were made when you ordered, wrapped in paper and placed in a bag.   1. Keep in mind this was done on a large griddle, the woman running the cart was probably making up to 4 of these at a time.
  2. Fry the ham, while the ham is cooking, fry an egg hard, breaking the yolk, flipping it once.
  3. Spread mayo on the bottom bun, add the fried ham slice on the bottom bun, top with the fried egg, top with a slice of cheese, spread mayo on the inside of the top bun and place that on top and place that on top. As simple as that.

  1. Reserve some of the diced bell peppers to sprinkle on top for garnish
  2. Saute peppers, onions, and garlic in a splash of olive oil over medium heat in a large skillet.
  3. Once the peppers and onions have started to soften, increase heat to medium high and add the ground beef to the pan, season with salt and pepper.
  4. Once the ground beef is cooked through, drain any excess fat, then add the chicken broth, can of whole tomatoes (chopped), tomato sauce, and soy sauce.
  5. Bring the tomato mixture up to a simmer, then stir in one cup of uncooked extra long grain rice. Cover the pan with a lid and reduce the heat down to low. Let mixture cook 20-30 minutes, or until rice is tender.
  6. At the 20 minute mark, start stirring the pan occasionally so the rice does not stick to the bottom of the pan. One rice is tender, sprinkle the cheese on top. Cover the pan with the lid to let the cheese melt.
  7. Garnish with fresh diced bell peppers and green onions.

  1. Peel the eggplants using a vegetable peeler, begin at one end and remove a strip of peel from end to end. Leave a strip of peel about the same width, then peel another strip from end to end. Slice the eggplants about 1/4 inch thick and place in a large bowl of salted water and let them soak for about 30 minutes.
  2. Slice the green pepper into thin rings. Grate 1 large tomato or maybe 2 plum tomatoes.
  3. Cook the onion in 1 tablespoon of olive oil in a large skillet until tender. Then add the bell pepper slices and cook until soft. Then add the ground beef and cook until browned, then add the grated tomato, 1 tablespoon of tomato paste, 1 teaspoon of salt, 1/2 teaspoon of pepper, and the allspice. Mix this together, reduce heat to a simmer, cover and cook for about 10 minutes then remove from heat.
  4. Grate the other 3 large tomatoes or 4-8 plum tomatoes and put them into a small saucepan. Add the remaining 1 tablespoon of tomato paste, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, oregano, and sugar. Simmer this on low heat for about 10 minutes then remove from heat.
  5. Remove the eggplant slices from the water and blot them dry with paper towels. Fry them on both sides in olive oil until tender and golden brown on both sides. Drain them well on paper towels.
  6. Line the bottom of a large baking dish with the fried eggplant slices to make a single layer, make sure there are no gaps between the pieces. Spread the tomato sauce over the eggplant. Next, cover the tomato sauce layer with the meat mixture.
  7. Preheat your oven to 180 C.
  8. In a large pan, melt the butter over medium heat. Whisk in the flour and cook for a minute, then whisk in the milk and continue whisking until the sauce thickens, when it has the consistency of pudding it is ready.
  9. Pour the hot sauce over the meat layer, covering it completely. Sprinkle the grated cheese evenly over the top of the casserole. Bake for 30 minutes or until the top turns golden brown and the casserole is heated through.
  10. Let the casserole rest for at least 10 minutes before cutting and serving.

Figure about 100 Baht/500 grams ground beef and about 90 Baht for the cheese, Edam or a mild Cheddar would work well. For 6 servings, this is about 93 cents per serving.

  1. Place the chicken strips, oil, lemon juice, and seasoning mix in a large zip lock bag, squeeze out the air and squish everything to mix and coat the chicken. Place in the fridge for 1 to 24 hours to marinate. Highly recommended to make the seasoning from the shortcut.
  2. After the chicken has marinated, drain off any excess liquid and cook in large pan with a splash of olive oil, along with the onion and bell pepper. Cook the chicken until browned and cooked through.
  3. Serve with tortillas and top with tomatoes, cilantro, cheese, and a lime wedge on the side if desired.

  1. Cut each chicken breast in half and pound them to 1/2 inch thickness. Sprinkle each piece on both sides with paprika, salt, and pepper to your liking. Place them in a large zip lock bag or plastic bag, like a Tesco shopping bag, and pour the pickle juice over them. Press out the extra air by twisting the bag, then place that in a bowl and place the fridge for 6 hours our anytime up to overnight.
  2. Preheat your oven to 230 C and place a wire rack on a baking sheet and set aside. While the oven is heating, stir together the flour, spices, sugar, and baking soda in a bowl and set aside. In another bowl whisk together the egg and milk. Take the chicken out of the fridge, dip each piece in the egg mixture the coat well with the flour mixture making sure the entire piece is coated with flour.
  3. Place the chicken on the wire rack and generously spray each piece with olive oil, coating the flour completely. Turn the pieces over and spray the other side with olive oil. Bake for 12 minutes, then turn the chicken over and bake another 15 minutes or until the chicken is golden brown, crispy, and cooked through. Remove from the oven and top with cheese of your choice and let these rest for 5 minutes.
  4. Butter each bun and place on a sheet and bake for 3-4 minutes until toasted. Place 3-4 pickle slices on each bottom bun, top with a piece of chicken and the other toasted bun. Serve.

  1. Heat the beans and weenies in a pot. Fry up some bacon till crispy, figure 2-4 slices per burrito. Shred some cheese. Now you are almost ready to put these together.
  2. In a hot skillet, no oil, heat a tortilla for a 30 seconds to a minute on each side to warm up.
  3. Lay tortilla on a plate or flat work surface and add bacon, 2-4 strips.
  4. Then add a scoop or so of beans and weenies.
  5. Top with cheese of your choice.
  6. Roll up and place on a plate and serve.

For the Crust
  1. In a large bowl combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Gradually add the water and mix until a ball is formed. Divide dough into two, one for the bottom and one for the top of the pie.
  2. Press one of the balls of dough into the bottom of a pie dish, rising up the sides slightly OR you can roll out the bottom crust and set into the pie dish. Roll the other ball of dough out flat into a large circle to cover the pie once you put the filling in.
For the Filling
  1. Preheat your oven to 180 C.
  2. In a large skillet, saute onions and mushrooms until onions start to become a little translucent. Add the meat and cook thoroughly. Drain the drippings and stir in garlic powder, oregano, salt, and pepper. Remove from heat and let cool slightly.
  3. In a separate bowl, beat eggs, milk, and mayo together. Combine with the meat mixture. Fold in cheeses and pour mixture into the prepared pie dish.
  4. Cover pie with second portion of pie crust and seal off around the edges. Bake for 15 minutes, then reduce heat to 150 C and bake for 20-30 minutes more, or until an inserted knife comes out clean. Let stand about ten minutes before cutting. Serve. Toast or fresh hash browns would be great side dishes here.
Recipe Notes

The only thing expensive in this dish is the cheeses. Use 1/3 to 1/2 of a 250 gram block of each of your cheeses of choosing, the cost would be about 180 Baht if using half a block each. This is about $1.35 per serving for 4 servings, and about 90 cents per serving for 6 servings. Over all, not a bad cost for this meal.

For the cheese, think Edam & Mozzarella, or Cheddar & Swiss. Up to you.

Variants. If using minced pork, consider adding spices to make that breakfast sausage and use that.

Block cheese to shredded amounts

I have not bought shredded cheese in probably 10 years. Reasons being, 1. shredded in a bag is coated so it does not stick together, this also hinders the melting ability as well. 2. shredded in a bag is more costly because it is another step, plus the coating, is another step, both add to the cost.

I buy all my cheese in block form, real cheese from New Zealand, Europe, and some from Thailand. Shred it yourself to save the money and you have a good base for cheese sauces and such that will melt evenly and smoothly.

It is between 80 and 100 grams of block cheese to 1 cup of shredded.
