Ingredients
For Bread Machine
Needed for Work Surface
Servings: English muffins
Instructions
  1. Add the For Bread Machine ingredients to your bread machine in the order listed, start the Dough cycle on the machine.
  2. When the cycle is finished, spread some cornmeal on your work surface, turn out dough onto the work surface. Pat the dough out to about 1/2 inch thickness, a little less is ok.
  3. Turn the dough over so both sides get coated with cornmeal. Using a cutter, cut into rounds (a cutter the size of a tuna can would be good.
  4. Sprinkle some cornmeal on a baking sheet and place the rounds on that, cover with a towel and let rise for 20-30 minutes.
  5. Heat a dry cast iron pan on low heat, when hot, cook the muffins for about 5 to minutes on each side, they should be golden brown on the bottom when you turn them.
  6. Remove from the pan and split part way through with a fork. Can be used right away served warm, toasted, or even frozen for later use and reheated in a microwave or toaster.

Yep, you read that right, cake in a bread machine. This recipe is from the cookbook that came with my bread machine, and I will say it is spot on as chocolate, and moist! No frosting needed! I made this on 4 Apr 2017 and it is excellent! Your bread machine needs a cake function in order to make this. Weight measurements are all done in grams on a digital scale.

  1. Place the ingredients into the pan of the bread machine in the order listed, select Cake function, press start. About an hour and a half later, it will be done.
  2. Remove the pan from the bread machine and set on the counter to cool for about an hour. Once it has cooled, then turn out the cake onto a wire rack to completely cool. (The indentations on the top are from dropping out of the pan onto the rack, I now use an oven mitt to catch it.)
  3. Slice, and use a large spatula to pick up and set on plates, or it will fall apart. Top with some whipped cream, enjoy! Here is a slice served with two brownies.

Instructions
  1. Place ingredients in the bread machine pan in the order specified in your owner's manual. Select dough cycle. Check dough consistency after 5 minutes of kneading. The dough should be in a soft, tacky ball. If it is dry and stiff, add water, 1/2 to 1 tablespoon at a time. If it is too wet and sticky, add 1 tablespoon of flour at a time. Take out dough when cycle is finished.
  2. Turn dough onto a floured surface, flour the top, punch down to remove air bubbles. Divide dough into 8 pieces. On lightly floured surface, shape each piece into a smooth ball. Place on a cookie sheet lined with foil and floured. Flatten each ball to 4 inches in diameter. Cover, let rise until indentations remains after touching. If desired, brush with egg wash (combine 1 egg and 1 tablespoon of water) just before baking. Bake in preheated 200 C (390 F) oven for 15 to 20 minutes. Remove from cookie sheet and let cool on a wire rack.
  3. And with sesame seeds.
  4. These are huge rolls!

In addition to sandwiches and burgers, think bread bowls, scoop out the middle and fill with chowder or a good stew.

This is the name of the bread in my bread machine recipe book, and it is good and spot on! This is my Go-To recipe now for soft white bread. I make this in 1 pound (500 gram loaves) as it is only my wife and me here at the house that eat bread. Use a ml measuring cup and a digital scale, very important.

  3. At the end of the cycle, using kitchen mitts, remove the loaf pan and turn out the loaf to a wire rack to cool. (I took this photo right after making my first loaf of bread in a bread machine, the house smelled wonderful while it was baking. Once I took it out of the pan, cut a few slices, slathered with butter, and my wife and I each devoured a slice!)

Ingredients
Servings: buns
Instructions
  1. Crack an egg into a measuring cup and lightly scramble that, then add water to make 1 cup of liquid.
  2. Place all the ingredients in your bread machine in the order specified by the manufacturer. Set to Dough (or Leavened Dough) and press start. The run time should be around 1 hour 20 minutes to 1 hour 30 minutes depending on your machine.
  3. When the bread machine says it is done, using floured hands, turn the dough out onto a floured surface.
  4. Using a pastry cutter or large knife, cut the dough in half, and cut each half into 3 or 4 pieces, like cutting a pie. 3 for big buns, 4 for smaller buns (which are probably average size buns).
  5. Take a baking sheet or two and just spread some flour on them, nothing heavy, just rub it around a bit. Now with the dough pieces, use floured hands each in a karate chop position, roll each piece of dough between your hands to make a round ball, no need to pick the ball up to do this, as they are very soft, and are also rising while you do this. Quickly roll each into a round ball and place these on the baking sheet.
  6. Cover the sheets with a towel and let rise for about 30-40 minutes, or until doubled in size or nearly doubled.
  7. Preheat your oven to 180 C (350 F).
  8. Mix up 1 egg and a tablespoon of water, just before putting into the oven, lightly brush (do not deflate the dough) with the egg wash, and lightly sprinkle with white sesame seeds if desired.
  9. Bake for 20-30 minutes, or until rolls turn a golden brown indicating they are done, remove from the oven, cool for a few minutes then transfer to a wire rack to cool completely.
  10. And another batch with sesame seeds added.

Instructions
  1. Place ingredients in bread machine in the order stated by your bread machine manufacturer and choose the dough cycle.
  2. After the cycle, remove dough to a floured surface using floured hands. Divide dough in half. Roll out each half into a 9 inch circle.
  3. Spread some softened butter onto each circle (if desired) and cut each circle into 8 or 12 pie-shaped wedges, depending on the size of roll you want. Starting with the wide end, roll up each wedge.
  4. Place on greased baking pan, cover with a cloth and let stand for about 2 hours until roll has doubled in size. About 30 minutes before the end of the rise time, preheat your oven to 180 C.
  5. Bake for 12-15 minutes or until golden brown, remove from oven and brush with butter.
  6. If using these for another recipe other than rolls, use the dough prior to cutting into wedges and use as the other recipe directs.
