Instructions
  1. In a medium bowl, whisk together the oil, juices, salt, cumin, oregano, red pepper flakes, pepper, and garlic.
  2. Make slits in the pork with a knife and place the pork in the juice mixture and rub liberally all over with the oil mixture.
  3. Place pork in the slow cooker, along with the onion and bay leaf. Poor the remaining juices from the bowl over the pork.
  4. Cover and cook on low for 8 hours. Transfer pork to a cutting board and let cool slightly. Using two forks, shred into thick chunks. OR just shred it in the pot then use a large slotted spoon to scoop it out (this is the method I did in this photo, works great).
  5. Serve with cilantro lime rice and black beans, mashed potatoes, or in a sandwich with some of the juice spooned over the top, or in a tortilla with Cheddar cheese, etc.
Recipe Notes

Pork shoulder runs about 100 Baht/kilo, for this recipe this would be 150 Baht for 1 1/2 kilo. For 6 servings, this is about 75 cents per serving, great value.

Variant: 1. Use pork loin in place of the pork shoulder.

  1. I made this on 11 June 2018, fresh juices were used, made as written using pork loin, and it is delicious! Wonderful flavor from the juices and spices, highly recommended and will be a regular here now.

  3. very different from what we ever had, I used boneless pork loins instead, it was a big hit in my family! my husband love it and he’s a picky eater!
