  1. Preheat your oven to 200 C (400 F). Spray a 9x13 baking dish with olive oil.
  2. Cook the pasta in a pot of boiling salted water until just tender. Drain and add pasta to the baking dish.
  3. Add the tuna, corn, cheese pasta sauce and mix together well. Season with salt and pepper as desired.
  4. Spread the mixture out evenly and sprinkle the shredded cheese on the top, use as much cheese as you like.
  5. Bake for 15-20 minutes or until the casserole is bubbly and the cheese on top is starting to brown.
  6. Serve and enjoy.

  1. Note about the tuna. For canned, use 2 1/2 to 3 cans, drained well. For fresh cooked, go with 425 grams (15 oz).
  2. Preheat your oven to 180 C (350 F). Grease with butter or olive oil with an oil sprayer a loaf pan.
  3. In a large mixing bowl, add all the ingredients, seasoning with salt and pepper as desired, as well as Tobasco sauce. Use your hands and mix well.
  4. Pack mixture into the prepared loaf pan.
  5. Place in the oven and bake for about 45 to 50 minutes or until the top is golden brown.
  6. Cool for 10 minutes before slicing. Serve with sides of your choice and enjoy.
Recipe Notes

Low cost, even more so if using fresh cooked tuna.

Variants: 1. Use red bell pepper in place of green. 2. Saute the bell pepper and onion prior to mixing in with the tuna. 3. Add chopped hard boiled eggs. 4. Add sliced green olives. 5. Add chopped fresh parsley or cilantro.

  1. Preheat your oven to 180 C. Grease a 9x13 baking dish with butter.
  2. In a large (I may use a medium size pot for this) non stick pan melt the 1/4 cup of butter then add the onion, celery, bell pepper, and garlic for about 3 minutes, then sprinkle in the flour and mix and cook for another minute. Remove from heat.
  3. Slowly stir in the milk, then return to heat and stir until thickened and the mixture comes to a boil, season with salt and pepper to your liking, stir, then stir in the mushrooms, Cheddar cheese, and tuna, when mixed, add in the egg noodles and mix to combine.
  4. Pour the mixture into the prepared baking dish and smooth out, sprinkle on the breadcrumbs then Parmesan cheese, drizzle with the melted butter.
  5. Bake for 25-30 minutes, remove and let rest 5 minutes, serve.
Recipe Notes

The Cheddar cheese is the most expensive part here, for 2 cups, think about 180 Baht. For 6 servings, this is about 88 cents per serving.

  1. Mix rice, soy sauce, sesame oil and water in a sauce pan. Bring to a boil. Reduce heat and simmer for 20 minutes.
  2. When rice is cooked, mix in half of the tuna as well as the ginger powder, pepper, and 1 teaspoon of sesame seeds. Set aside.
  3. Fry the egg to your liking.
  4. After the egg is cooked, place the rice in a bowl, place the diced avocado on the side of the rice, and the rest of the tuna on another side, and top with the fried egg. Enjoy.

An average can of tuna will cost about 44 Baht. For one serving this is about $1.29 for the serving. If you cook fresh tuna yourself, figure 68 Baht for a tuna from Tesco, easily makes 2 to 2 1/2 cups of tuna, then your cost for the tuna for this recipe, 1/2 cup, is 50 cents. Great savings and less waste. This is listed as low cost as fresh whole tuna is easy to get.

  1. Melt the butter in a saucepan, then whisk in the flour, then whisk in the milk, whisk constantly to prevent lumps and stir until creamy. Add the tuna, peas, and salt and pepper to your taste and warm through.
  2. As the sauce is warming, toast your bread, figuring 1-2 slices per serving. I went with 4 slices of toast for me in this photo.
  3. When the bread is toasted and buttered, spoon the sauce over the toast and serve.
Recipe Notes

A standard can of tuna will cost about 42 Baht (I use Sealect brand). For 4 servings, this is about 31 cents per serving. If you use fresh tuna that you cooked yourself, you can reduce this even more and not have the added waste from the can.

Variant: Add a couple of fried eggs sunny side up on top.

  1. Cook the pasta according to the package directions, drain, toss with just a touch of olive oil to prevent sticking, and set aside.
  2. Bring a pot of water up to a rolling boil, add the cauliflower and cook until fork-tender, about 5 minutes, drain and set aside.
  3. Toss together the white Cheddar and Roumy cheeses in a bowl, measure out ¾ cup and reserve it for the topping.
  4. Add the oil to a medium large pot over medium-high heat. Add the onion and cook until softened, but not browned, about 5 minutes, stirring occasionally. Turn the heat down to medium and add the garlic and rosemary; cook 1 minute more, stirring constantly. Whisk in the flour and cook 1 minute, then gradually whisk in the milk; stir in the Worcestershire sauce, salt, and black pepper. Bring to a gentle boil, stirring constantly, and then remove from heat.
  5. Whisk in the cheese, except the reserved amount) until smooth. Stir in the pasta, cauliflower, tuna, and parsley. Taste and season with additional salt and pepper as desired.
  6. Preheat your broiler (counter top ovens, use the top coil) and butter a 9x13-inch baking dish. Pour the pasta mixture into the dish and sprinkle the reserved 3/4 cup of cheese on top. Broil until the cheese melts and is bubbly. Serve.
Recipe Notes

Cheese would be the most costly item here in this recipe, all the rest is minimal. White Cheddar I cannot price, nor the Roumy. Yellow Cheddar, imported from New Zealand will run about 180 Baht for 200 grams. If you cannot find Romano cheese, go with 230 grams of Cheddar. Go with fresh tuna and that will reduce your cost even further, the rule is 1/2 cup of fresh cooked tuna = 1 can of tuna. We'll say 200 Baht for the cheese and 40 baht for a can of tuna, this comes out to about $1.75 per person for 4 meals, and $1.18 per person for 6 meals. Overall, not bad. Fresh tuna would reduce this.

Variants would be, cooked shredded or diced chicken instead of tuna, spring onions instead of parsley (need that green or the dish would look really bland), broccoli instead of or with the cauliflower.

  1. If using canned tuna packed in water, drain and reserve 1 tablespoon of water from a can then add 1 teaspoon of olive oil to the tuna. If using tuna packed in oil, just drain. If using fresh cooked tuna, add 1 teaspoon of olive oil.
  2. In a large bowl, mix the tuna with the mustard, bread, zest, juice, water, parsley, spring onion, and hot sauce. Taste and season with salt and pepper as needed, then mix in the egg.
  3. Divide this in to 4 parts, form each part into a ball and flatten to make a patty. Refrigerate for an hour, this helps keep the patties together when cooking.
  4. Heat some olive oil in a non stick pan with the butter, place the patties in the pan and cook for 3-4 minutes on each side to nicely brown them.
  5. Serve as is with lemon wedges on the side for a light lunch or dinner, or serve with tartar sauce on buns to make a tuna burgers.
Recipe Notes

Tuna runs between 35 to 45 Baht a can, 70 to 90 baht for this recipe, a fresh tuna that you cook yourself will cost about 62 baht, and it makes 2-4 cans of tuna, so you can see the cost savings already. At 90 baht for the canned version, the price would be about 70 cents per serving for 4 people. If using a fresh tuna that you cooked and prepared, the cost per person would be less than 45 cents per person since you will get more than 2 cans of tuna from a 62 baht tuna.

  1. Preheat oven to 180 C.
  2. Cook the macaroni in a pot of boiling water until tender, about 15 minutes.
  3. Open all cans, draining corn and tuna and put in a in 13x9 baking dish. If you want to use fresh cooked tuna, there is a shortcut for this, you will need 1/2 cup of fresh cooked tuna per can of tuna.
  4. Drain the macaroni when done and pour into the baking dish. Using a large spoon, mix everything together thoroughly. Salt and pepper to taste and mix a few more times, spreading the mix flat after mixing. Sprinkle the top with the cheese.
  5. Place in the oven for about 25 minutes until the cheese is melted and bubbly.
Recipe Notes

Based on one can of tuna, average price 40 Baht, cheese another 135 Baht (never skimp on cheese, use imported Cheddar), this comes out to about 85 cents per serving, slightly more if 2 cans of tuna are used. This would be well less if fresh tuna was instead.
