  1. Add the first 5 ingredients to a large mixing bowl. Toss together to coat everything with the oil. Season with salt and pepper as desired. Set aside to let the flavors combine.
  2. While the tomato mixture is set aside, cook the pasta in a pot of salted boiling water until tender. Drain well.
  3. Toss the pasta with the tomato mixture to combine.
  4. Serve as a light dinner with garlic bread if desired.

The cheese would be the only big expense here. About 140 Baht for 200 grams, just going with the 200 instead of 250 grams, for 6 servings, this is about 73 cents per serving.

  1. Mix everything together in a mixing bowl, use amounts of items based on how much spaghetti you are using, and dress with the Italian dressing and Ranch mix to taste, add cheese, and seasonings to taste.
  2. Cover and place in the fridge for 2-3 hours before serving as a side with any dish.

I had this at a wedding party yesterday, 27 Feb 2018. This was the only dish that contained packaged items, like Vietnamese sausage, hot dogs, crab sticks, and squid rolls. Squid rolls are essentially a crab stick but are tubular shaped, but squid flavored. The dish in the photo also has chilies in it, when I prepare this, I will use much less chili. No servings or quantities are given until I make this, I am just winging this for now.

  1. Cut the Vietnamese sausage (Cha Lua plain, and Cha Hue for peppered) in half lengthwise, then thinly slice each half. A mix of regular and pepper varieties would work well.
  2. Slice the hot dogs thinly at an angle. (Just a note, the shorter hot dogs tend to have the casings removed.)
  3. Slice the imitation crab into 1/2 inch pieces and the squid into 1/4 inch pieces.
  4. Cut the onion in half from top to bottom, then thinly slice each half.
  5. Finely slice then chop the carrot. Safe bet would be to cut the carrot into 2 inch pieces, julienne, then cut the stack in half.
  6. For the mushrooms, if using white ear variety, blanch that for a few minutes, drain and let cool down. Your choice of fresh mushrooms, buttons sliced, Shimeji chopped, Shiitake sliced with the stem removed would also be nice.
  7. For the tomatoes, cut in half and remove the seedy pulp then slice.
  8. Seed and finely chop one Bird's Eye chili.
  9. Place the prepared meats and veggies in a large mixing bowl and toss to combine. Splash with some soy sauce and a couple of tablespoons of lime juice. Toss together until all is coated well. (Keep in mind, my photo shows a very large pot, this is at a wedding so a lot of chow was made, but this was delicious! I will make this on a much smaller scale than what this photo shows.)
  10. Serve as a side dish with any Thai dish.

  1. In a mixing bowl, add the eggs, cilantro, curry powder, paprika, and salt and pepper as desired. Mix together and set aside.
  2. Heat your cast iron pan with the bacon fat or oil of choice on medium heat, when hot, add the onion and chilies and a pinch of salt, saute until the onion is soft then add the tomatoes.
  3. Cook for about 10 minutes until the tomatoes are soft. Now give the egg mixture another stir and pour that into the pan and give another quick stir in the pan. Reduce heat to low.
  4. Let the mixture cook for about 5 minutes undisturbed, then cover the pan with a large lid and let the eggs cook for another 5-6 minutes, then check to see if the top of the egg mixture is cooked.
  5. When the top is cooked, let rest for a few minutes, then cut like a pie and serve.

Variants: 1. Add diced bell pepper, chopped spring onion, chopped mushrooms, etc. 2. Top with shredded cheese.

  1. Add all ingredients to your slow cooker and mix. Set to High setting without using the lid, until mixture thickens, about 10 hours. Stir occasionally.
  2. Blend with an immersion mixer until smooth, about 30 seconds.
  3. Strain ketchup through a fine mesh strainer to remove seeds. Pour into a jar and when room temperature, seal jar and store in the fridge.

  1. Preheat your oven to 180 C. Lightly grease a 9x13 baking dish with butter.
  2. In a pot of salted water, cook the macaroni to just tender, drain.
  3. In another pot, heat the butter then saute the garlic, thyme, jalapeno pepper, and paprika for about a minute, then add the onion and saute until just translucent.
  4. Add the ground beef and season with salt and both types of pepper. Cook until the beef is no longer pink and browned. Sprinkle in the flour and mix in and cook for another minute or two.
  5. Add the tomatoes and cook for a few minutes to soften them up then add the macaroni then the milk, stir and mix well, adjust salt and pepper to taste. Stir in half the cheeses.
  6. Pour into the prepared baking dish, top with remaining cheese. Bake uncovered for 20-30 minutes or until heated through and the top is starting to brown.
  7. Remove from oven, let rest for 5 minutes, serve.
Recipe Notes

For the beef figure about 150 Baht for 500 grams. For 6 servings, this is about 75 cents per serving.

Variants: 1. Change the cheese to Swiss or a 4 cheese blend. 2. Change the meat to ground chicken or ground pork. 3. Add chopped bell pepper. 4. Add sliced mushrooms. 5. Instead of baking, just prepare on the stove.

  1. For the spinach, if you can get chopped, perfect, it just leaf and frozen in balls, you can still use, thaw them out and grab a Chef's knife and chop them, problem solved. Squeeze out the water, and set aside.
  2. In a mixing bowl, add the shrimp, season with a pinch of salt and half the white pepper, mix to coat all the shrimp. Set aside.
  3. In another mixing bowl, add the chicken, and season with 1/4 teaspoon salt and remaining white pepper, mix into the chicken to coat all the pieces. Set aside.
  4. Heat some oil in a large pot, add the shrimp and cook, turning them after about two minutes and cook for another 2 minutes, until the shrimp are pink and cooked through, do not overcook them as that makes for tough shrimp. Remove when cooked through.
  5. Same pot, now add the chicken, also just cooking for about 4 minutes, turning them at about 2 minutes, until cooked through, remove the chicken from the pot.
  6. Same pot, heat more oil if needed, add the onion and saute until is translucent then stir in the tomatoes and cook on high heat, covered, for 10 minutes, stir occasionally, after 10 minutes covered, leave pot uncovered and cook for 5 more minutes, also stirring occasionally.
  7. Lower heat to a simmer, add in salt to taste, the chicken stock powder, and spinach and mix well, then add in the shrimp and chicken mix to combine, Allow to heat for just a few minutes to warm the chicken and shrimp through. Remove from heat.
  8. Serve warm with rice, or even pasta.

  1. Preheat your oven to 180 C. You will need a deep oven proof pan with a oven proof lid, if no lid, just use foil.
  2. Add salt and pepper to the flour and coat the cubed beef. Brown the beef in the deep ovenproof pan with a splash of olive oil. Remove the beef from pan.
  3. Add a bit more oil to the same pan and cook the onions until translucent, then add the carrots and celery and cook for another 3-5 minutes, then add the garlic and cook for 2 minutes more.
  4. Add in the tomato puree and rosemary and stir in, cook for a further 2-3 minutes. Add the chopped tomato and cook for 2 minutes. Add the red wine, simmer to reduce slightly. Add the beef stock and allow to reduce for about 10 minutes.
  5. Cover the pot with a lid and place in the oven for 1 1/2 to 2 hours.
  6. Remove from the oven and remove the lid or foil. Give the stew a quick mix, smooth out the stew and cover with thinly-chopped peeled potatoes, arranged so they are overlapping slightly. Drizzle with the butter, and season to taste with salt, pepper, and dried thyme.
  7. Increase the oven temp to 200 C, leave the pan uncovered and place in the oven again and bake for another 45 minutes or until the potatoes are tender.
  8. Remove from the oven, sprinkle the Gruyere cheese over the potatoes. Place the oven again for 5 to 10 minutes on until the cheese is bubbly.
  9. Serve.

  1. Fry ground beef and pork in a medium-sized skillet at medium heat until beef is browned. Add onion and garlic to meat mixture and cook until onion is tender. Drain.
  2. To the meat, add tomatoes, olives, green chile, salt, and pepper and simmer for approximately 20 minutes. Water may be added to the mixture if a thinner consistency is desired.
  3. While that is simmering, preheat your oven to 180 C and grease a 9x13 baking dish with butter.
  4. Add 1/4 cup of cheese and the 2 tablespoons of cornmeal to the meat mixture, cook for 2-3 minutes, remove from heat and set mixture aside.
  5. Place remaining 1 cup of cornmeal and 2 cups of water in a medium sized saucepan. Cook cornmeal, stirring occasionally, until cornmeal is thick.
  6. Spread half of cornmeal mixture in bottom of a greased 9x13 inch baking pan. Place meat mixture over top of cornmeal and spread remaining half of cornmeal over top of filling. Top with remaining cheese.
  7. Bake for 20 minutes, remove from oven and let rest for 2 minutes, serve.
Recipe Notes

For the beef, figure about 100 Baht/500 grams. For the cheese, go with 180 Baht for a block of 250 grams and shred that. For 10 servings, this is about 82 cents per serving.

  1. Preheat your oven to 180 C (350 F).
  2. Brown beef and onion in a skillet, drain off any fat, add taco seasoning and mix in. Mix together the Cheddar and Mozzarella cheese. Just starting. I used ground pork for this and two small diced onions.
  3. Layer ingredients in a 9x13 pan as listed; crushed chips (just pour the bag of chips in and crush with your hands, seasoned meat, and 2/3 of cheese. (Now I messed up the cheese part, I added the 2/3 cheese to the meat in the pan, which actually turned out well and I have add that as a variant.)
  4. Bake for 15 minutes, or until the top is golden brown and bubbly.
  5. Remove from the oven, top with the remaining cheeses, shredded lettuce, and diced tomatoes.
  6. Serve.
Recipe Notes

Ground beef will cost about 100 Baht, the Cheddar 180 Baht, and the Mozzarella 120 Baht. For 8 servings, this is about $1.47 per serving.

Shortcut: Taco Seasoning.

Variants: 1. Use a 7x11 baking dish instead of a 9x13 dish. 2. Mix the 2/3 cheese with the ground meat just before adding to the dish on top of the crushed chips.
