  1. Brown the ground beef in a medium sized pot, drain the fat, then add the water and the taco seasoning and mix together.
  2. Drain and rinse the canned beans and if using those, add beans to the pot, plus the corn, tomatoes, chilies, ranch dressing and stir everything together.
  3. Adjust the soup to your desired consistency with tomato juice. Simmer until hot and everything is heated through.
  4. Serve.

Figure about 150 Baht for the beef. For 4 servings, this is about $1.10 per serving.

  1. This recipe comes together fast, you will want to have all the ingredients measured and ready, in the order they are used, before you begin.
  2. Melt the butter in a medium pot over medium heat then whisk in the flour and cook, whisking often, until it is a thick paste and golden brown. Whisk in the taco seasoning and cook 30 seconds more.
  3. Whisk in the milk 1 cup at a time, bring to a simmer then repeat with the milk, it will start out very thick and will thin as more milk is added. When done adding milk, bring to a low simmer and cook 5 more minutes, whisking often. Whisk in the cream cheese until smooth. Remove from heat.
  4. Whisk in the Cheddar and Parmesan cheeses until smooth. Can be used right away or stored in the fridge for up to 2 weeks. When reheating, slowly bring to a boil before use.
Recipe Notes

Cream cheese will cost about 60 Baht, Cheddar about 170 Baht, and the Parmesan about 75 Baht. Figure 4 uses from 4 cups of sauce, this is about $2.25 per use.

  1. Rub pork chops on both sides with the taco seasoning mix. Heat a non stick skillet over medium high heat. Brush skillet with the oil. When the pan is hot, add pork chops and cook for about 7-8 minutes, turning once, until internal temperature is 71 C / 160 F, followed by a 3 minute rest time.
  2. Top with salsa if desired and sides of your choice, or thinly slice and serve in flour tortillas with tomato, lettuce, and salsa.
Recipe Notes

Pork loin will cost about 125 Baht/kilo. I don't think for 4 thick slices would be a kilo, but just using that number, for 4 servings this is about 92 cents per serving. I have only seen pork chops in specialty chops and they are pricey. Going with just a loin that you cut yourself, money saver.

  1. Preheat your oven to 180 C. Grease a 8 inch spring form cake pan with butter or olive oil spray.
  2. Brown ground beef and onion, drain, then add the taco seasoning and cook according to package direction.
  3. To assemble, place 1 tortilla in the bottom of the cake pan, spread 1/3 of the refried beans on it, top with 1/3 of the meat and sprinkle on some cheese.
  4. Add the 2nd tortilla, top that with 1/2 the rice, 1/2 the salsa, 1/2 the corn and cheese.
  5. Add the 3rd tortilla, top that with 1/3 of the refried beans, 1/3 the meat, and sprinkle on some cheese.
  6. Add the 4th tortilla, top with the remaining refried beans, then the meat, then the corn, then rice, then the salsa and top with the cheese.
  7. Bake covered with foil for about 40 minutes, uncover and bake 10-15 minutes longer, let sit 5 minutes before cutting. After baking top with sour cream, diced onion, and shredded lettuce if desired.

The beef will cost about 100 Baht, the cheese about 180 Baht. The tortillas would cost about 120 Baht for 4. Make the shortcuts for savings as well. For 6 servings, this is about $1.96 per serving.

Variants: Very easy to use leftover chili in place of the refried beans, or to use cooked chopped red bell pepper, use corn tortillas in place of flour tortillas, use cottage cheese in place of the salsa, you get the idea. You could make this a different meal each time you make it.

  1. Preheat your oven to 200 C.
  2. Prepare cornbread batter by mixing in the egg and milk, pour into a lightly greased 8x8 baking dish. Bake cornbread for 10 minutes then remove from oven, yes, it is not done, we will get back to that.
  3. Meanwhile, cook ground beef and onion in a medium skillet and season with salt, pepper, and garlic powder to your liking. Once cooked through, drain fat. Add the taco seasoning and undrained chili beans and stir well OR If using the shortcut for the beans, add the beans and 1/2 cup of water. Continue cooking on a simmer and until starting to to thicken, then spread chili evenly over partially cooked cornbread.
  4. Combine sour cream and 1 cup of Cheddar cheese and mix well. Spread sour cream mixture evenly over chili. Start by evenly placing dollops on top of chili then the heat from the chili will make it easier to spread. Top sour cream mixture with remaining Cheddar cheese then continue baking for 10 minutes or until cheese is melted.
  5. Serve, top each serving with shredded lettuce, chopped tomato and onion if desired.

For ground beef, figure 100 Baht/500 grams.Making the shortcuts, does take time, will save a lot. For 4 servings, this is about 74 cents per serving.

  1. Brown the ground beef in a large skillet, then drain off the fat and add the beef to your slow cooker, then to the slow cooker add the water, stock, taco seasoning, garlic, onion, and tomatoes, stir then cook on Low setting for 4-5 hours.
  2. During the last 30 minutes of cooking, add your pasta to a pot of boiling water and cook until just tender and drain well. Stir the Cream cheese into the slow cooker until well blended. Then add the Cheddar cheese and pasta and mix that in, leave uncovered and cook on High setting for another 10-15 minutes to melt the Cheddar and heat everything through.
  3. Sprinkle the top with cilantro and serve.

Figure about 100 Baht/500 grams of beef, 180 Baht for the Cheddar (1 block of 250 grams), and 60 Baht for the 1/2 block of Cream cheese. For 6 servings this is about $1.67 per serving.

  1. Cook the pasta of your choice in boiling water until just tender, reserve 1/4 cup of the water then drain the rest. Add back to the pot and set aside.
  2. While the water is heating and cooking pasta, in a large non-stick skillet over medium heat, heat a splash of olive oil, add the onion and cook until it is tender, then add the green chillis and cook for a few more minutes, then add the ground beef and cook until no longer pink. Add the taco seasoning mix and cumin, and salt to your liking, mix well and cook for a few minutes, then drain off the fat and add to the pot with the pasta.
  3. Add the tomatoes and the 1/4 cup of reserved pasta water and stir, then add the cheese and let melt, stirring occasionally, cooking this for about 2-3 minutes until everything is combined. Top with the cilantro and serve.

  1. You can buy individual thighs, but these are normally small. Buy quarters and cut the thighs from the legs and you have much larger thighs. Pull the skin off and use the edge of the knife to remove the excess fat.
  2. Sweet corn, fresh is preferred and this would be about 3 ears worth of corn, next choice would be frozen. If you want to use canned corn, look for a can from 12 to 15 ounces and drain the corn as well.
  3. Black beans, cook these from dry beans for cost savings. If you want to use canned beans, look for a 15 oz can, and drain this as well.
  4. Add the corn, beans, chilis, salsa, taco seasoning in the slow cooker and mix well.
  5. Salt and pepper the thighs on both sides and add to the slow cooker, stir a bit to coat the chicken.
  6. Cover and cook on Low setting for 5 to 7 hours or until the chicken is cooked through. If in doubt, use a meat thermometer to check for an internal temp of 74 C. Serve over hot rice and a salad on the side.
Recipe Notes

Chicken thighs will cost about 66 Baht/kilo, quarters cost 56 Baht/kilo. Buy a kilo of quarters and separate yourself. You will have more than 500 grams of thighs, and you get legs for use in another recipe. Use fresh sweet corn, dry beans, and use the shortcut for the taco seasoning. This meal would be well under $1 per serving.

  1. Pick through and discard irregular beans or stones. In 5 quart container, add dry beans and soak for at least 8 hours and up to 24 hours. Drain beans, discard soaking liquid, rinse and drain beans.
  2. In your slow cooker add the chicken stock, or 4 cups of water and stir in the stock powder, add in the taco seasoning and whisk well. Add the tomato paste and whisk more so no lumps, then add the onion and garlic. Add the beans and give a quick stir. Add salt to taste. Cook on High setting for at least 8 hours up to 12 hours, depends on the age of the beans so you will need to check them (this is based on my slow cooker) and the beans will still have a bit of bite to them but are not mush either.
  3. Serve as a main dish as a soup with topping just like chili, such as grated Cheddar cheese, diced onions, and sour cream, with crackers or cornbread on the side. Serve as a side dish with Mexican dishes, burgers, pulled pork, or as a base for our Pinto Bean Chili listed on this site.
Recipe Notes

A bag of 500 grams of beans will cost between 50 and 65 Baht. Make the stock from scratch or from stock base powder. For 10 cups of beans and sauce, this dish is well under $1 per person per serving.
