  1. For the chicken, 1. You can use a whole chicken or 2 kilos (4 lbs) of pieces, think bone in skin on quarters separated, and breasts. 2. You can boil it or pressure cook it, pressure cooked will be used by me. Either way, once the chicken is cooked, leave it in the pot with the broth to cool to give you juicy chicken. Shortcuts are in the Recipe Notes section.
  2. Once the chicken is cooked, remove the skin, bones, cartilage, and shred, place evenly in the bottom of a casserole dish.
  3. Preheat your oven to 180 C (350 F).
  4. In a large bowl, add the soups, sour cream, and onion powder as desired. Whisk to combine. Here I have the chicken ready, the soups (homemade) mixed, and the stuffing (homemade) ready to assemble.
  5. Prepare the stuffing according to the directions on the package.
  6. Pour the soup mixture evenly over the chicken.
  7. Spread the stuffing evenly over the top of the casserole. Bake for 45 minutes.
  8. Let rest for 5 minutes,
  9. Serve and enjoy.
Recipe Notes

The whole chicken will cost about 150 Baht. For 6 servings, this is about 78 cents per serving.

  1. Mix together the soup and water and pour into your slow cooker. Lay the chicken breast in the cooker.
  2. Place a slice of Swiss cheese on each chicken breast.
  3. Add the dry stuffing mix covering the entire pot.
  4. Cover and set the cooker to High setting and cook for 4 hours without removing the lid.
  5. Serve.

Not sure home many chicken breasts are in a kilo so I will price this when I buy 4 of them. If making the shortcuts, this is certainly Low cost.

  2. Add the beef, the contents of the box of stuffing mix (the bread and spice mix), or the dry mixture if made from a shortcut, and the milk, in a large mixing bowl. Mix to combine everything.
  3. Form into a loaf in a large baking dish or pack into two loaf pans. Cover with foil.
  4. Bake for 1 hour.
  5. Remove from oven, let rest 2 minutes, slice and serve. Mashed potatoes and gravy and a vegetable on the side would be perfect.
Recipe Notes

Figure about 300 Baht for 1 kilo ground beef. For 6 servings, this is about $1.48 per serving. Make this out of ground pork for about half the cost.

Shortcut: Stove Top Stuffing.

Variants: 1. Use ground pork in place of ground beef. 2. Use loaf pans or a casserole and pour a can of condensed cream of mushroom soup over the top. 3. Shape into meatballs and place in a baking dish, then pour a can of condensed cream of mushroom soup over the top.

  1. Preheat your oven to 180 C. Oil or butter a 9x13 baking dish.
  2. Heat a splash of cooking oil in large non stick pan, season chops with salt and pepper as desired, browns chops on both sides, remove from pan and place in the baking dish.
  3. Prepare the boxed stuffing according to package or make from the shortcut. Spoon the stuffing over the chops.
  4. Mix together the milk and soup, pour over the top of the chops.
  5. Cover the dish with foil and bake for 1 hour. You can bake longer for increased tenderness if desired, the chops will remain moist.
  6. Remove the foil for the last 15 to 20 minutes of baking to nicely brown the top of the casserole.
  7. Serve.

  1. Preheat your oven to 190 C. Grease a large baking dish with a little bit of butter.
  2. Cook the stuffing according to instructions then spread that in the baking dish, place the chicken on top, add the mushrooms around the chicken.
  3. Mix the can of soup (and hopefully you use the shortcut) and mix with 1/2 can of milk, pour this over the baking dish, season the top with the celery salt, onion powder, garlic powder, poultry seasoning, and black pepper, to taste.
  4. Cover with foil and bake for 25 minutes, ten remove foil and bake for 15 minutes or until chicken is cooked through.
  5. Serve on a bed of hot fresh cooked pasta, with a salad and a fresh cooked vegetable for a complete meal.
Recipe Notes

4 quarters would be less than 72 Baht/kilo, but I use 72 for the estimate. Imported Stove Top stuffing is going to be pricey, Thailand does import lower priced stuffing at about 90 Baht per package, how this compares to Stove Top brand, I cannot say. The soup will run about 52 Baht for the can, use the shortcut and you can reduce this to 18 Baht for a can. For 4 servings, this comes out to about $1.60 per serving. If using the shortcut on the soup, this is about $1.33 per serving. Not big savings, but it is savings. I look forward to making this.

Variants: Instead of mushrooms, use sliced celery or chopped onion.
