  1. Layer the ingredients in the slow cooker starting with the potatoes.
  2. Then add the long beans.
  3. Then add the sausage. Pour the broth over the top. For this dish, I used 240 grams of Italian sausage.
  4. And another 270 grams of Vietnamese sausage, it is just a recipe, not set in stone, feel free to use sausage of your choice.
  5. Cover and cook on Low setting for 6 to 8 hours. Do not remove the cover before 6 hours. When the potatoes are fork tender, you can serve after that or switch to Warm to serve later. Add salt and pepper to taste before serving.
  6. Served with fresh baked bread on the side, perfect meal.
Recipe Notes

Going with my purchase of Cumberland sausage at 178 Baht. For 4 servings, this is about $1.31 per serving.

Variants 1. Use other types of sausage, Cumberland would be a good choice, Italian, Bangers, even Vietnamese sausage would be good in this. 2. Use pork or chicken stock in place of the vegetable stock.

  1. In a large non stick skillet, on low heat, heat the olive oil and add the garlic, stir in the bell pepper and sausage and cook until smoked sausage is browned and the peppers tender.
  2. Add the onion and eggs and simmer for about 10 minutes until vegetables are tender and the liquid is absorbed.
  3. While this is cooking, prepare your rice or pasta to your liking.
  4. Add cooked rice or pasta to the sausage and vegetables to your liking and mix in.
  5. Serve with a vegetable on the side.

  1. Preheat your oven to 180 C. Get out a casserole dish or a baking dish.
  2. Place everything in a pot on the stove, even a good shaking of Cajun seasoning, except the chicken. Heat to just about a simmer for about 5 minutes then remove from heat.
  3. While the pot is heating, place the thighs in the baking dish. Sprinkle some Cajun seasoning to your desired taste on the thighs. Pour the sauce contents from the pot over the chicken.
  4. Bake for about an hour or until the chicken is chicken is cooked through.
  5. Serve with mashed or boiled potatoes and a vegetable.
Recipe Notes

Going with 4 chicken thighs for 4 servings, this probably less than 70 Baht. For 4 servings, this is about 52 cents per serving.

  2. Then add the sausage. I used Cumberland sausage for this.
  3. Then the garlic. If using yellow squash (I did not), then layer that on top of the garlic.
  4. Then add the chopped bell peppers, I used 1 red, 1 green, and 1 yellow. Pour the stock over the top.
  5. Cover and cook on Low setting for 5 to 7 hours, do not open the cover until the 5 hour mark, if the potatoes are fork tender, it is ready to be served or just set to Warm setting until ready. Salt and pepper to taste just before serving. This was perfect at the 5 hour mark using 1/4 inch thick potatoes.

I used 500 grams of Cumberland sausage that cost 178 Baht. For 6 servings, this is about 88 cents per serving.

  1. Melt butter in large skillet. Add cabbage, onion, and cook on medium high for about 5 minutes, stirring to keep from sticking to pan. Add remaining ingredients, reduce heat to low, season with salt and pepper to taste, cover and simmer for 20-25 minutes, stirring occasionally.

  1. Stir fry farmer sausage for several minutes. Then add the celery, onions, and peppers, and cook until tender crisp. Add tomatoes, pineapple, seasonings, sugar and soy sauce. Simmer 5 minutes.
  2. Blend cornstarch with reserved pineapple juice. Add to simmering sausage dish and cook for 2 minutes.
  3. Serve with rice.

  1. In small saucepan, combine flour and oil; mix well. Cook, stirring constantly, over medium-high heat for 5 minutes. Reduce heat to medium; cook, stirring constantly, about 10 minutes or until mixture turns reddish brown, then pour into your slow cooker.
  2. Stir in all remaining ingredients into your slow cooker except the shrimp and rice. Cover and cook on Low setting for 7-9 hours. About 20-30 before serving, add cooked shrimp to gumbo mixture in your slow cooker and mix well. Cover and cook on Low setting for an additional 20 minutes. Serve over rice.

For the Shrimp Broth
  1. Remove the shells and tails from the shrimp and put the shells and tails in a pot with 5 cups of water. If the shrimp have heads, remove and add those to the pot as well. Clean and devein the shrimp and refrigerate until ready to use to make the Jambalaya.
  2. Same pot, add the remaining shrimp broth ingredients minus the water and bring to a high simmer and then lower the heat to maintain a low simmer. Cook until the water has reduced by about a third, 20 to 30 minutes. Let the broth cool completely and then strain, you should have about 3 cups of broth, if you have less than 3 cups, add enough water to make up the difference.
For the Jambalaya
  1. Now heat the butter in a large non stick skillet over medium heat, then add the flour and use a whisk to constantly stir until the mixture is combined, then add the bell pepper, white part of the spring onion, sausage, tomato paste, onion, celery, garlic, 2 bay leaves and a 1 teaspoon of salt. Cook, stirring frequently, until the vegetables are soft, about 5 minutes (add splashes of your shrimp broth if the mixture sticks at all). Add the rice and stir to coat.
  2. Pour in the remaining broth, chopped tomatoes, thyme, cayenne, half the spring onion green parts, and salt to taste. Stir to combine and bring to a simmer. Adjust the heat to low, cover and cook for 15 minutes. Add the shrimp, cover and continue to cook until the rice is tender and the shrimp are cooked through, about 5 to 7 minutes more. Remove the bay leaves. Sprinkle the top of the Jambalaya with the parsley and remaining spring onion green parts. Serve with hot sauce if desired.
Recipe Notes

500 grams of shrimp, say medium whites will cost about 70 Baht. The sausage might cost 50 Baht for 2 links. For 4 servings this is about 88 cents per serving.
