  1. In a medium sized bowl, mix together the cream cheese, cheddar, onion, chili powder, and garlic. Set aside. Preheat your oven to 200 C.
  2. When peeling the chilies take care not to damage them. Make a slit down the length of each chili and remove the seeds. Stuff each chili with the cheese mixture.
  3. Use a toothpick to secure one end of a slice of bacon at the stem end, wrap the bacon around the chili, try not to overlap, and wrap towards the pointy end, secure with another toothpick.
  4. Place the chilies on a foil lined baking sheet and bake for 25-30 minutes, then switch the oven to broil (top coil for counter top ovens) and bake for another 10 to 15 minutes or until the bacon is golden brown.
  5. Serve.
Recipe Notes

The cream cheese will cost 120 Baht, the bacon about 100 Baht. For 8 servings as appetizers, this is about 80 cents per serving.

  1. This recipe comes together fast, you will want to have all the ingredients measured and ready, in the order they are used, before you begin.
  2. Melt the butter in a medium pot over medium heat then whisk in the flour and cook, whisking often, until it is a thick paste and golden brown. Whisk in the taco seasoning and cook 30 seconds more.
  3. Whisk in the milk 1 cup at a time, bring to a simmer then repeat with the milk, it will start out very thick and will thin as more milk is added. When done adding milk, bring to a low simmer and cook 5 more minutes, whisking often. Whisk in the cream cheese until smooth. Remove from heat.
  4. Whisk in the Cheddar and Parmesan cheeses until smooth. Can be used right away or stored in the fridge for up to 2 weeks. When reheating, slowly bring to a boil before use.
Recipe Notes

Cream cheese will cost about 60 Baht, Cheddar about 170 Baht, and the Parmesan about 75 Baht. Figure 4 uses from 4 cups of sauce, this is about $2.25 per use.

  1. Preheat oven to 180 C. Heat the oil in a pan over high heat. Cook the chicken with salt, pepper, garlic powder, and chili powder for two to three minutes. Add the barbecue sauce and cook until the sauce has reduced by about half, about five minutes. Remove from heat.
  2. In a large baking dish, spread out two large handfuls of tortilla chips. Layer with half of the barbecue chicken, followed by half of the cheese, onion, tomato, bacon, and parsley. Repeat with the remaining ingredients. Bake for 15 minutes.
  3. Drizzle the sour cream and sprinkle the avocado on top. Serve.

  1. The beer needs to be flat, so measure it and let it sit for about an hour on the counter before you start cooking.
  2. Toast the bread cubes in one layer at 150 C until they're crisp, not toasted. About 15 minutes. Place the bread cubes in a large bowl. Heat the oven to 180 C.
  3. In a skillet, cook the cauliflower and caraway seeds in the butter until barely tender. Add this to the bowl with the bread cubes, add the cheese and mix to combine. Spread this mixture into a 8 inch square baking dish or a 7x11 baking dish.
  4. In a bowl, mix the beer, eggs, mustard, coriander, and black pepper as desired. Pour this over the bread mixture. Bake for 30-45 minutes, or until puffed up slightly and golden brown.

  1. Combine the half and half (or evaporated milk) with the cheddar cheese soup, and mix until it is smooth. Next, sprinkle in the paprika and black pepper, and mix.
  2. Into your slow cooker, add the uncooked macaroni, half of the shredded cheeses, the butter, and the cheddar soup mixture, mix to combine. Top this off with the rest of the shredded cheeses. Put the lid on and cook on Low setting for 3 hours. Serve.

The Cheddar cheese would run about 180 Baht, the Colby or Edam, another 90, the condensed soup about 90 Baht, same for making yourself but you will know what is in it. For 10 servings, this is about $1.06 per serving.
