  1. Grease your slow cooker insert with butter, this makes the clean up a bit easier for you.
  2. Dice the chicken breasts into about 3/4 inch cubes.
  3. Add the rice, chicken, frozen vegetables into slow cooker.
  4. Mix together the soup, broth, half of the Cheddar cheese, and season with salt and pepper as desired.
  5. Pour mixture into the slow cooker. Push down the rice so it is covered with liquid.
  6. Mix together the breadcrumbs and melted butter then mix in the remaining cheese. Spread mixture over the contents of the slow cooker.
  7. Cover the cooker and set to Low setting and cook for 5-6 hours, or High setting and cook for 3 to 4 hours. If using High setting, check the rice, it may require a bit longer to make it fully cooked.
  8. Serve and enjoy with a vegetable side of your choice for a nice meal.
Recipe Notes

Chicken breasts are low cost, just using the low end of the ingredients, the chicken is only 30 Baht, without doing any math, this is Low cost per serving for sure.

  1. Bring a pot of salted water to a boil, then add the spaghetti and cook until just tender, drain, rinse under cold water, toss with 1/4 cup of olive oil, cover and set aside.
  2. Open the tins of sardines and drain the oil into a non stick pan, heat the pan over medium heat then add the garlic and saute until just golden brown, then split the sardines in half and add them to the pan, breaking them up a bit with the spatula, and saute another minute or so more,
  3. Stir in the breadcrumbs and cheese, when mixed in, add the parsley, black pepper, remove from heat and add the pasta and mix, serve.
Recipe Notes

For sardines in olive oil, I have only seen one brand, Ayam, for 59 Baht per 120 gram tin, these are very good. If you make your own sardines in olive oil, you can reduce this price just a bit. Using 2 tins of sardines and 4 servings, this is about 87 cents per serving.

  1. Preheat your oven to 180 C. Cook mushrooms and onions in a skillet with 1 tablespoon of butter until just tender. Remove from the skillet and set aside.
  2. Place the eggs in a shallow bowl and in a separate bowl place the breadcrumbs. Dip chicken into beaten eggs, then roll in bread crumbs.
  3. Same skillet, melt the remaining butter over medium heat. Brown both sides of chicken then place chicken in a 7x11 baking dish (browning, no need to cook through), arrange onions and mushrooms on top of chicken, and top with mozzarella cheese.
  4. Add chicken broth and cream of mushroom soup together in a bowl and whisk until blended then pour over top of mushroom, onion, and chicken. Bake for 30 to 35 minutes, or until chicken is no longer pink and juices run clear.
Recipe Notes

The chicken will run about 70 Baht/4 breasts. The cheese will run about 220 Baht/3 cups. For 4 servings this is about $2.13 per serving.

  1. Preheat oven to 180 C. Lightly grease a large, shallow baking dish with butter.
  2. Butterfly each breast by slicing in half horizontally through the center, cutting almost but not completely through. Place one slice each of Cheddar and Cream cheese in the center of each breast. Close again as if placing between the pages of a book. Set aside.
  3. Pour the milk into a shallow bowl. In a separate bowl, combine breadcrumbs and Parmesan cheese. Carefully dip each breast first in milk, then in breadcrumb mixture, patting lightly to firmly coat. Place breasts side by side in a single layer in the prepared baking dish, tucking edges under to seal.
  4. Melt butter in a small saucepan over medium heat. Stir in lemon juice and garlic, and drizzle evenly over chicken. Season breasts with garlic salt and paprika, if using. Bake for 30 minutes, or until no longer pink in center and juices run clear. Let rest for 5 minutes, serve.
Recipe Notes

The chicken, for 8 breasts, will cost about 150 Baht. The cheeses, Cream cheese will cost about 120 Baht, the Cheddar will cost about 180 Baht. For 8 servings, this is about $1.65 per serving.

  1. For the meat, feel free to use ground beef, pork, chicken, or turkey. If using beef or pork, use beef or pork stock instead of chicken stock.
  2. Add the ground meat to a large mixing bowl then add the breadcrumbs, milk, egg, salt, pepper, Italian seasoning, Worcestershire sauce, onion, and garlic. Stir or use hands to mix. Shape mixture into 6 evenly sized balls.
  3. Heat the oil in a large skillet over medium high heat. At the meatballs and press to flatten slightly. Cook the patties until browned for about 5 minutes each side.
  4. Add the chicken stock to the skillet and continue cooking the patties, turning as needed until they are cooked through, maybe 5 minutes more.
  5. Serve with mashed potatoes and gravy and a vegetable, complete meal.
Recipe Notes

The highest cost would be using beef and I will say 100 Baht/500 grams. For 6 servings, this is about 50 cents per serving. Other ground meats would be less.

  1. Preheat oven to 190 C. Coat 9x9 baking dish with lightly with butter. In a large bowl, combine beef, onion, breadcrumbs, BBQ sauce, egg, chili powder, and salt until well mixed. Gently press into bottom of baking dish.
  2. Bake uncovered for 20 to 25 minutes, or until cooked through. Remove from oven and carefully pour off any excess fat if needed.
  3. Adjust oven temperature to broil and place oven rack 6 to 8 inches from heat source. If using a counter top oven like me, switch to the top coil only and leave the rack in the center.
  4. While the beef is cooking, boil the potatoes until tender, skin on or off is up to you. Once the potatoes are done, remove from heat, same pot, add the milk, butter, parsley, and garlic powder, mash with a potato masher until smooth. Stir in bacon. Spread evenly on top of beef mixture and sprinkle with cheese.
  5. Broil for 3-5 minutes or until the cheese is lightly browned. Serve with a vegetable on the side for a nice meal.

Figure about 100 Baht/500 grams of beef. For 4 servings, this is about 74 cents per serving.

  1. In your slow cooker pot, add the tomato sauce, chopped tomatoes, dried parsley, Italian seasoning, and dried oregano. Mix this up a bit.
  2. In a large bowl mix the ground beef, bread crumbs, fresh parsley, garlic, onion, and egg together. Form into 16-20 meatballs. Place meatballs in the slow cooker and gently stir to coat them all in the sauce. Cook on High setting for 1 hour, then change to Low setting for another 3-4 hours. IMPORTANT, every few hours, use a spoon and skim the fat off the top of the sauce. Serve over pasta of your choice.
Recipe Notes

The ground beef will cost about 200-250 Baht/kilo. Figuring 200 Baht, for 16 servings (I think this is quite high and I will adjust when I make this), is about 37 cents per serving, less if using pork or chicken.

The chicken might be 100 grams, about 40 Baht. The ham would be about 75 Baht. The Swiss Cheese about 180 baht. Make the soup yourself for greater savings (25 Baht instead of 55 Baht). For 8 servings, this is about $1.28 per serving. Over all, not a bad price.

  1. Preheat your oven to 180 C, or if you choose to pan fry these, omit this step.
  2. In a large bowl, mix the meatball ingredients until completely combined. Form into golf ball size meatballs and place on a baking sheet pan or a rack on a sheet pan, just place on a plate if you are going to pan fry these.
  3. To cook these, baking is preferred, bake for 20 to 30 minutes, cut one in half to make sure they are cooked through. Pan frying may result in meatballs falling apart.
  4. In a large non stick skillet, add about a tablespoon of butter and olive oil and heat, then add the onion and cook until golden brown and softening. While doing this, add 1/2 cup beef stock to the corn starch to make a paste.
  5. When the onions are cooked, add 2 cups of beef stock to the skillet, the Worcestershire sauce, ketchup, and mustard. Bring to a gentle boil and add the cornstarch mixture. Return the meatballs to the pan, reduce the heat to low, simmer for 10 minutes or until meatballs are cooked through sauce is thick, use more beef stock as needed if the sauce is too thick.
  6. Serve meatballs and the gravy over pasta and sprinkle with fresh chopped parsley.
Recipe Notes

Only thing pricey here is the ground beef. At about 250 Baht/kilo, this comes out to about 75 cents per serving for 10 servings. Great value.
