This is a quick meal to put together. One of the ingredients is Tasso Ham, which is a specialty of Cajun/Creole cooking of the southern US. If you do not have access to this type of ham, you can easily use Andouille sausage or thick cut smoked bacon and just add a bit of Cajun seasoning to taste. On my to cook list for sure.

  1. Follow the package instructions to prepare the grits but for what ever amount of water it calls for, cut that in half and use milk for the other half.
  2. Get your grits going, season with salt and pepper to taste, and stir often to make nice and creamy grits. When the grits are done, add in Cheddar to your liking and stir in, set aside but keep warm.
  3. Get everything else prepped, measured, and set out and ready to go, this will come together quickly.
  4. In a large non stick pan on medium high heat, heat the oil and butter. When hot, add the ham and saute until crispy. Add the onion and bell pepper and saute until the onion is translucent then add the garlic and cook for 1 minute.
  5. Add the shrimp and saute for 1 to 2 minutes or until all the shrimp are pink. Pink shrimp are tender, over cooked shrimp are tough. Remove the shrimp when pink and set aside.
  6. Stir in the white wine and let it reduce. When it has reduced, slowly stir in the cream, season with salt and pepper, and if you used sausage or bacon, season to taste with Cajun seasoning. Let sauce reduce to thicken.
  7. Divide the grits between two plates, divide the shrimp onto the grits, pour sauce equally over each plate, top each plate with chopped spring onion greens. Serve.

I will say low cost for now but will price this when I get the shrimp again, I will be using large shrimp for this.

So here is what I came up with, and it is delicious! Made a large pot and it was cleared out by the family the lives around us as well as some visiting family from another village.   1. In a medium size pot, heat the bacon fat, when hot, add the onion and saute until softened and starting to brown up.
  2. Add the stock, daikon, carrot, spring onion, and coriander, bring to a boil then reduce to a simmer. As that is simmering cut up the fish and add that, then add the evaporated milk, then chop up the mushrooms and add those.
  3. Simmer for about 15 to 20 minutes to cook the fish and mushrooms.
  4. Ladle into bowls and enjoy.
Recipe Notes

For the fish, just figuring all Pangasius (6-8 fillets) figure about 200 Baht. For 8 servings, this is about 74 cents per serving.

  1. Heat a non stick pan over medium heat with the bacon fat and when hot, add the sausage and stir occasionally to brown and cook the sausage through. when cooked, remove to a plate and drain off all but 1 tablespoon of fat from the pan, add the butter and when melted, add the cabbage, onion, apple, and season with a pinch of chili powder.
  2. Cook for 5 minutes and stir in the brown sugar. Continue to cook for another 7-8 minutes or until the cabbage is wilted and everything starting to brown.
  3. Add the sausage back to the pan and mix together. Cook for a few minutes to warm the sausage through. Season with salt and pepper as desired.
  4. Serve.

  1. Preheat your oven to 190 C. Lightly butter a 9x13 baking dish.
  2. Season the chicken breasts on both sides with salt and pepper, lemon pepper would be a bonus.
  3. Heat a non stick pan on medium heat with about 1 tablespoon of olive oil. When the oil is hot, add the chicken breasts, brown on each side then remove from pan and reduce heat to medium low.
  4. While the chicken is cooking, steam the long beans for 3 to 5 minutes.
  5. Add about 3 tablespoons of olive oil to the pan, when heated, add the garlic and cook for about 1 minute until nice and fragrant then add the tomatoes and cook those until just warmed through, add in the steamed long beans, season with salt and pepper to your taste, add the oregano, mix then remove from heat. Pour the tomato and bean mixture into the prepared baking dish.
  6. Top with the Feta cheese, reserving about 1 tablespoon. Place the chicken breasts on the top, top each piece of chicken with a lemon slice.
  7. Bake for 15-20 minutes or until the chicken is cooked through.
  8. Remove from oven, remove the chicken breasts, divide the tomatoes and long beans between 4 plates, slice each breast into about 3-5 pieces and place those using a spatula to pick up all the pieces at one time on top of the vegetables, sprinkle with the reserved Feta, parsley, and dried oregano.
Recipe Notes

Figure about a kilo for chicken breasts at about 70 Baht. For 4 servings, this is about 52 cents per serving.

Variants: Place a scoop of seasoned rice on the plate prior to adding the vegetables or serve with seasoned rice on the side.

  1. Preheat your oven to 190 C.
  2. In a very large mixing bowl, add the flour, oil, milk, water, salt, sugar, and the yeast, mix and then knead.
  3. The dough needs to be soft to the touch. Quickly cut this into 8 pieces, shape each piece into a ball then flatten each ball and make a well in the center, as you will have to put cheese and an egg in there.
  4. Place each piece in a large baking dish, then crumble in the feta cheese to your desired amount, and crack an egg on top.
  5. Place in the oven and bake until golden brown on the bread, such as this photo shows.
Alternate Method
  1. Use pizza dough of your choice and follow the same steps, make a well in the center, add the cheese and egg, and bake.
  2. Serve as a breakfast or I would even serve as a light dinner.

  1. Preheat your oven to 190 C.
  2. In a skillet, brown ground beef with chopped onions, season to taste with salt and black pepper. Drain any fat. Pour beef into a 9-inch deep-dish pie pan.
  3. Pour pasta sauce over the meat, then the sour cream over the top. Top with the shredded cheese.
  4. Cover the top of the dish with crescent rolls, making sure all edges are sealed. Combine the butter, Parmesan, and Italian seasoning in a small bowl. Brush over the top of the pie.
  5. Bake for 20 minutes, or until the top is lightly browned and cooked through. Remove from the oven and allow to cool for 10-15 minutes before slicing.

  1. Preheat oven to 190 C. Grease a 9×13 inch baking dish with butter.
  2. Heat olive oil in heavy skillet and add onion and garlic. Cook, stirring frequently, until translucent. Add ground beef and paprika, cook until beef is browned. Remove from heat, drain fat, and set aside.
  3. Layer half of the sliced potatoes in the bottom of the prepared baking dish and season with salt and pepper to your liking. Top the potatoes with the ground beef. Layer remaining potatoes over beef, and season with salt and pepper to your liking.
  4. Whisk together the milk and eggs until fully combined. Pour the mixture into dish to cover potatoes, cover with foil and bake for 45 minutes, or until potatoes are tender when pierced with a fork. Remove foil and continue to bake until top is brown and bubbly, 25 to 30 minutes. Remove from oven and let rest for 5 minutes, serve.

  1. Preheat oven to 230 C, and prepare a large rimmed baking sheet with a drizzle of olive oil.
  2. In a large mixing bowl, combine all the Main Ingredients until vegetables and shrimp are evenly coated.
  3. Evenly disperse the seasoned shrimp and vegetable mixture on the prepared sheet tray and bake for about 10 minutes.
  4. Turn up the heat to broil, and cook for another 5 minutes or so until the shrimp is pink and firm and the vegetables begin to get a nice char.
  5. Toast the tortillas over an open flame until charred on the edges, and serve everything on the sheet tray. Serve with desired optional toppings.

Go with medium white shrimp for 1bout 150 Baht/750 grams. For 8 servings, this is about 60 cents per serving.

  1. Preheat your oven to 180 C. Get out a 9x13 baking dish.
  2. In a large skillet, brown the ground beef with the garlic, season with salt and pepper as desired, add the Italian seasoning, drain fat off when cooked and remove beef to a bowl.
  3. Same skillet, cook the peppers and onion until soft. While that is cooking, heat a pot of salted water to boiling then cook the pasta to just tender.
  4. When the peppers and onions are done, add the ground beef back to the skillet and mix. Tear up the slices of cheese and add to the skillet and let them begin to melt, 2-3 minutes is all that is needed, it's ok if the cheese is not fully melted.
  5. In a large heatproof mixing bowl, add the ground beef mixture and the drained pasta and mix everything together. Pour this into the baking dish and top with a few slices of Provolone, bake for 15-20 minutes or until the edges are starting to brown and the cheese is melted and starting to brown. Serve.
Recipe Notes

The beef will cost about 150 Baht/750 grams. The cheese, Mozzarella, will cost about 250 Baht/350 grams. I cannot price Provolone yet. For 8 servings, this is about $1.47 per serving.
