To Prepare the Salmon
  1. Ideally, you would want two 500 gram skin on fillets from the center cut of the fillet, remove the pin bones if that is not already done. But you can use the smaller fillets from Tesco, as what is in this photo. When I make this, I will use two of these fillets on the bottom, and two on top, just reduce the salt and sugar in equal proportions.
  2. Mix together the salt, sugar, and white pepper. Rub the mixture into both sides of the salmon fillets.
  3. Put half of the dill between the fillets, then divide up the remaining dill between the top and bottom, place in a ziplock bag and seal after removing as much as as you can. Place the bag in a backing dish and place a smaller dish on top and weight it down with some canned goods.
  4. Place in the fridge for 24 to 48 hours, flip the bag about every 12 hours.
  5. remove from the fridge and remove from the dish. Rinse the fillet very well with cold water, and use your fingers to rub off all the salt and dill. Dry the fillets with paper towels.
  6. Place a fillet skin side down on your cutting board, hold your knife at a angle and slice as thin as you can down to the skin but not through the skin. Repeat with remaining fillet or fillets.
For the Sauce (Gravlaxsås)
  1. Mix together the mustards and sugar, stir until the sugar is dissolved. Stir in the vinegar.
  2. Using a mixer or food processor, very slowly add the oil, continuously mixing, start with just drops at first and when it binds (like making mayo), you can increase the amount of oil you are adding at a time. Season with salt and white pepper to taste. Mix in the dill.
  3. Serve with the sliced salmon as an appetizer on rye bread or with boiled potatoes for a lunch or dinner.
Recipe Notes

The salmon fillets I will use will be from Tesco, 69 Baht each for 140 to 160 gram fillets, frozen, from Norway. Initial test will be 4 fillets for a total of 276 Baht, about $8.40. I don't know the number of servings as an appetizer until I make this and I will update the pricing. For now I will say High Cost per serving.

  2. Mix together the salt, sugars, and fennel seeds. Sprinkle some of the mixture along the bottom of a glass baking dish, sprinkle some dill on that. Place half of the fillets skin side down on that.
  3. Sprinkle half the remaining salt mixture on the fish and half of the remaining dill. Lay the second piece or pieces of salmon on top of the salmon already in the dish, skin side up.
  4. Sprinkle remaining salt mixture and dill over the top of the fillet. Cover the dish with plastic wrap. Set another smaller dish on top of the fillets and weight it down with some canned goods, a brick wrapped in foil, or any kind of heavy weight.
  5. Place in the fridge for two days to cure, turn the fillets after one day, so the top piece becomes the bottom piece, this is to cure them evenly.
  6. After two days, remove from the fridge and remove from the dish. Rinse the fillet very well with cold water, and use your fingers to rub off all the salt and dill. Dry the fillets with paper towels.
  7. Place a fillet skin side down on your cutting board, hold your knife at a angle and slice as thin as you can down to the skin but not through the skin. Repeat with remaining fillet or fillets.
  8. Place the thin slices on a a serving tray, sprinkle with purple onion, dill, and capers. Serve with toasted rye bread and lemon wedges.

The salmon fillets I will use will be from Tesco, 69 Baht each for 140 to 160 gram fillets, frozen, from Norway. Initial test will be 4 fillets for a total of 276 Baht, about $8.40.   2. In a non stick pan that will hold all the fillets, add the water, wine, parsley, dill, shallots, and heat to a simmer on medium heat. While the pan is heating, season the salmon with salt on both sides.
  3. When the liquid is simmering, place the fillets in the pan, skin side down, cover and let steam for 5 to 10 minutes depending on thickness of the fillets or until they flake easily with a fork.
  4. Serve lightly sprinkled with black pepper and lemon slices if desired with rice and a vegetable on the side.

Frozen Norwegian salmon fillets, about 140-160 grams each are just over $2 each, so in addition to just a steamed fillet for dinner, the fillets can be steamed and used in recipes calling for canned salmon. Steamed salmon seemed to be the answer to that.   1. You can use the small fillets, a large fillet, or the steak cuts. I leave the skin on and will remove the skin and bones after they are steamed. If using frozen, thaw, remove from the package, quick rinse. For fresh, quick rinse.
  2. For each fillet, if there is thin ends, just fold them to make a more uniform thickness, this is to ensure even cooking. Season with salt and pepper.
  3. You can use a rice cooker with a steamer basket, or a pot with steamer insert and tight fitting lid. Lightly oil the steamer basket or insert. Use either method, heat the ingredients except the salmon to a boil.
  4. Simmer the liquid for 20 minutes to allow the flavors to blend, then quickly open the rice cooker or pot, place the salmon in, and close, steam for 5-6 minutes, don't peak, just let them steam. End result is a pale orange color. If you have not done this before, target internal temp is 63 C or until the fish flakes easily with a fork. Remove skin, it will easily pull right off.
  5. Serve with a green salad and bread for a light, nutritious meal.
To Use in another recipe
  1. Add water that is below the steamer basket in a rice cooker or below a steamer insert in a pot and bring to a boil.
  2. Place the skinned salmon fillets, folded as needed, in the steamer when the water is boiling and steam for 5-6 minutes, don't peak, just let them steam. End result is a pale orange color. If you have not done this before, target internal temp is 63 C or until the fish flakes easily with a fork. Remove from the steamer and allow to cool to room temp.
  3. Figure three 140-160 gram fillets to equal about a standard can (not a tuna fish size can), about 2 cups of cooked salmon.
  4. Once cooled, flake or chunk with two forks. There, you just made a large can of salmon. Use in recipes calling for canned salmon.
Recipe Notes

Each salmon fillet (140-160 Baht) is 69 Baht, about $2. Using 3 fillets of this size is $6 per large can, not $4.50 per small can like tuna. Still costly, but much better than the small cans, and better taste. I will make this soon and give better numbers on the cost but for right now, this is fairly accurate.

For 3 servings, this is about $2 per serving. For serving when 3 fillets are steamed and used as a large can of tuna, the price per serving will be less.

  1. Preheat your oven to grill/broil, if using a counter top oven, that would be the top coil, on a medium high heat, 180 to 200 C.
  2. Place butter in a oven proof pan, cast iron would be ideal, or a regular pan and heat the butter over medium heat, stirring continuously for about 3 minutes, or until the foam settles, then the butter will change in color to a golden brown. Add the honey, lemon juice, and garlic, stir to combine and cook for about 30 seconds to 1 minute.
  3. Pour half of the butter to a dish and set aside. Then add the salmon to the pan and sear one side, if one side has skin, then sear that side for 3-4 minutes or until golden brown.
  4. Now at this point, if you have a oven proof pan, flip each fillet and place the pan in the oven to broil for another 6 minutes, OR, if you do not have an oven proof pan, flip and place each fillet in a preheated baking dish and pour the liquid from the pan into the baking dish as well, then broil for 6 minutes.
  5. To serve, season fillets with salt to taste, drizzle the reserved brown butter over each fillet and serve with steamed vegetables, rice, and a salad.

  1. Preheat your oven to 200 C.
  2. Mix together the marinade of brown sugar, garlic, ginger, soy sauce, and mustard in a shallow bowl. Place the salmon in the marinade and marinate for 15 minutes.
  3. While the salmon is marinating, lay down two sheets of foil on a baking sheet. On the first sheet, lay down the carrot sticks to make a layer about 2 sticks deep and about 6 inches across, on top of the carrots place the bell pepper cross way. On one end of the carrots place the broccoli, and on the other end, place the snow peas. Drizzle with a little olive oil and salt and pepper to taste and fold the foil over the veggys to make a sealed packet. set that packet of to one side of the next sheet of foil.
  4. Drizzle some olive oil on the second sheet. Remove the salmon from the marinade and shake off excess and place on the olive oil on the foil.
  5. Bake for 8-10 minutes or until the salmon easily flakes with a fork. Plate the vegetables and place the salmon on top, sprinkle with chopped spring onion, serve.

  2. Mix breading ingredients together in large bowl. Whisk egg in a separate bowl.
  3. Heat some olive oil in a non stick skillet on medium heat. Once the pan is ready, dredge the salmon in the egg, then the breading mixture and add to the hot pan, skin side down and let the fillets cook on one side for 3-4 minutes or until golden brown, flip and cook for an additional 2-3 minutes or until golden brown.
  4. Plate with skin side down, serve with your favorite vegetable or even with pasta.

  1. In a bowl, add the olive oil, garlic, basil, parsley, salt, pepper, and lemon juice. Mix to make the marinade. Place the salmon fillets in a shallow flat dish, pour marinade over the top of them and place in the fridge, turning the fillets occasionally.
  2. Preheat your broiler or if you are using a counter top oven (like me) use the top coil and heat to about 230 C or so.
  3. Using a baking dish, glass would be perfect, place fillets in the dish and pour the marinade over the fish.
  4. Broil or bake for 5-7 minutes then flip fillets over, when the fish flakes with a fork easily, it is done.
  5. Serve. A salad, pasta, or vegetables on the side would be perfect side dishes.
