Instructions
  1. Preheat your oven to 200 C (400 F). Oil a baking sheet with 1/2 tablespoon of olive olive oil or just lay a piece of parchment paper on the baking sheet.
  2. Heat a non stick pan on medium heat and add a splash of oil, when hot, add the ground beef, when cooked through, add the taco seasoning, and season with salt and pepper to taste. When cooked, drain oil.
  3. Place the tortilla on the baking sheet, sprinkle with 1/2 cut of cheese, top with beef, then top with another 1/2 cup cheese. Bake until the cheese is melted, about 7 to 8 minutes.
  4. Remove and sprinkle on remaining cheese, lettuce, tomatoes, and sour cream. Top with avocado if desired.
  5. Serve.

  1. Preheat your oven to 190 C. Lightly butter a 9x13 baking dish.
  2. Spread out the has browns in an even layer in the baking dish, then spread out the spinach over the potatoes. Next spread out the onion, mushrooms, and bell pepper evenly in the dish.
  3. In a mixing bowl, whisk together the eggs and milk, stir in the garlic, salt and pepper as desired, then mix in the cheese. Pour mixture into the baking dish. Cover with foil and bake for 1 hour.
  4. Remove the dish from the oven, sprinkle on the diced tomato and jalapeno, place the avocado slices on the top.
  5. Serve.

The cheese is the only costly item used here, figure 170 Baht for the cheese. For 8 servings, this is about 63 cents per serving.

For as long as I have been in Thailand, I have never eaten Dorado. Dorado is known as Dolphinfish (it is a fish, not a dolphin), and in the US, particularly Hawaii, known as Mahi Mahi. This is an excellent table fish. I will use the Dorado term here.

  1. Preheat your oven to 230 C.
  2. Rub the fish fillets with olive oil and place into a baking dish, bake for about 20 minutes or until the fish easily flakes with a fork.
  3. While the fish is cooking, in a small saucepan, melt the butter, stir in the lemon juice, garlic, and hot sauce and then add the tomato and spring onion. Cook while stirring until good and hot.
  4. Remove the fish from the oven and plate, spoon the sauce over the fish and serve. A rice side dish and a vegetable would be great.

I cannot price this for Dorado, for Pangasius this would be low cost.

Variant: 1. Use any whitefish.

  1. Cook your pasta, 250 grams, in a pot of boiling salted water until tender, then cook 2 more minutes, then drain, rinse under colder water to stop the cooking process, drain well, and put in a large bowl.
  2. Add additional items to the pasta as you like, such as chopped hard boiled eggs, spring onion, onion, radish, bell pepper, cubed cheese, etc.
  3. Mix the dressing of your choice in a small bowl (or a blender for the Pesto Dressing), pour 3/4 of the dressing over the pasta and toss to coat evenly, if needed, add the remaining dressing. Chill for at least 2 hours and serve as a side dish with any meal.
