  1. In a large mixing bowl, whisk together the vinegar, juice, and oregano. When combined, slowly whisk in the olive. Taste and season with salt and pepper as desired.
  2. To the large mixing bowl, add the tomatoes, cucumber, olives, and red onion and toss to coat well.
  3. Fold in the Feta cheese, cover and refrigerate for 1-2 hours before serving.

  1. Preheat your oven to 180 C (350 F) and line a baking sheet with parchment paper. Lay the 7 slices of bacon on the parchment, bake until crispy, 20 to 25 minutes. Remove from oven and chop into bite size pieces, set aside.
  2. While the first seven slices of bacon are baking, heat a medium size pan on medium heat and fry the 1 piece of bacon to start making the dressing. Cook until crisp, then add the garlic and shallot. cook until the shallot is soft, about 2 minutes or so. Remove the pan from the heat and whisk in the salt, mustard, vinegar, and olive oil.
  3. On a large platter, or using 4 serving bowls, add the lettuce, then bacon, then eggs.
  4. Return the dressing to low heat just to warm it then drizzle over the salad. Garnish with the chives and some black pepper as desired.
  5. Serve as a lunch or light dinner.

  1. Heat a pot of salted water to boiling, add the pasta and cook until tender, drain well.
  2. While the pasta is cooking, mix together the Dressing ingredients in a good sized mixing bowl.
  3. After the pasta is well drained and cooled a bit, add it to the dressing along with the rest of the Salad ingredients except the cheese. Toss well to coat everything.
  4. Now add the cheese and fold that, then cover and refrigerate for at least 6 hours or overnight.
  5. Serve as a side, or in my opinion, as a main dish as that is what I will probably do.
Recipe Notes

I cannot price pepperoni at this time, I used a 150 gram pack of smoked ham for 90 Baht. For the Feta, that is 150 Baht for 275 grams, use half the package (75 Baht), cut the block in half and crumble that for right about a cup. Based on the Feta and smoked ham, for 4 servings, this is about $1.22 per serving.

Variants: 1. In place of pepperoni, use thin sliced smoked ham. 2. Use what you have, like a whole bell pepper instead of cup, or a package of pepperoni or smoked ham, like a cup or so, etc.

  1. Preheat the oven to 180 C. Wash the beets thoroughly, leaving the skins on, and remove the greens about 1 inch above the beet. Place the beets in a small baking dish and toss with 2 tablespoons of olive oil.
  2. Cover the dish with foil and bake for 45 to 60 minutes or until a knife can easily slide into the largest beet. Time will vary with the age and size of the beets. You can also just boil the boils until knife tender.
  3. Once the beets are done, cut the stem end off, and peel them under running tap water. Slice the beets and add to a serving bowl.
  4. Rinse the greens, removing any large stems, and set aside.
  5. When the beets are almost done, heat the remaining 2 tablespoons olive oil in a skillet over medium low heat. Add the garlic and onion, and cook for a minute to just soften. Tear the greens into 2 to 3 inch pieces and add them to the skillet. Cook and stir until greens are wilted and tender. Season with salt and pepper to taste.
  6. Serve the greens as is, and the roasted slice beets with either tossed with the red wine vinegar or just butter and salt and pepper.

  1. Prepare your grill for medium heat.
  2. Form sausage into four 1/2 inch thick patties. Grill patties, moving and flipping as necessary, until completely cooked through, about 5 minutes per side.
  3. Heat oil in a large skillet over medium high heat. Add peppers and onions and cook, stirring often, until wilted and soft, about 8 to 10 minutes. Add the vinegar and honey and cook, stirring until slightly thickened, about 2 minutes, season with salt and pepper to taste.
  4. Just before the peppers and onion is done, split and grill the rolls.
  5. Serve patties on the grilled rolls, top with peppers and onion.

I can only estimate the pork sausage if made with the shortcut using ground pork, it is easier than you think, this would be about 75 Baht/750 grams. For 4 servings, this is about 55 cents per serving.

  1. Add the shrimp to a bowl, season with the spices listed for the shrimp, add a splash of olive oil as well, let this marinate while you make the sauces.
  2. Meanwhile, to make the Mayo Dressing, mix together the combining mayo, yogurt, juice of half a lime, orange juice, bell peppers, red onion, a dash of chili pepper, salt and pepper. Set aside.
  3. For the Lime Sauce, combine cilantro, garlic, juice of one lime, a splash of red wine vinegar, olive oil, and salt in a blender. Or mix by hand. Set aside.
  4. Cook the shrimp in a hot pan with a splash of olive oil, once they begin to brown slightly and turn opaque, turn them and cook for 1-2 minutes more. Remove from pan and place on paper towels to drain and cool.
  5. While the shrimp is cooking, halve, pit, and scoop out the whole avocado from the skin using a large spoon. Place lettuce leaves on each plate, top with each piece of avocado.
  6. When the shrimp has cooled, roughly chop and mix into the Mayo Dressing.
  7. Fill avocados with the shrimp filling equally divided between the 4 pieces. Drizzle on the Lime Sauce, serve as an appetizer or side.
Recipe Notes

Shrimp prices can vary a lot, from farm raised to wild caught, choose wisely. Small White Shrimp from Tesco will cost about 80 Baht/500 grams. For 4 servings, this is about 60 cents per serving. Keep in mind, many of these ingredients can be locally sourced.

  1. Place beef, onions, vinegar, water, 1 tablespoon salt, 1 tablespoon black pepper, sugar, cloves, and bay leaves in a large pot. Cover and refrigerate for 2 to 3 days, turning meat daily. Remove meat from marinade and pat dry with paper towels, reserving marinade.
  2. Season flour to taste with salt and black pepper in a large bowl. Sprinkle flour mixture over beef. Heat vegetable oil in a large Dutch oven or pot over medium heat; brown beef on all sides, about 10 minutes. Transfer the beef to a slow cooker.
  3. Pour the reserved marinade over the beef and cook on Low setting for 6-8 hours. When beef is fork tender, remove from the slow cooker to a plate and slice.
  4. Strain the liquid from the slow cooker and make a gravy by heating that in a small pot and adding cornstarch.
  5. Serve with potatoes or potato dumplings.
Recipe Notes

Beef would cost about 300 Baht/1 1/2 kilos, for 6 servings, this is about $1.47 per serving. Not bad for a once in a while meal.

  1. Cook your pasta, 250 grams, in a pot of boiling salted water until tender, then cook 2 more minutes, then drain, rinse under colder water to stop the cooking process, drain well, and put in a large bowl.
  2. Add additional items to the pasta as you like, such as chopped hard boiled eggs, spring onion, onion, radish, bell pepper, cubed cheese, etc.
  3. Mix the dressing of your choice in a small bowl (or a blender for the Pesto Dressing), pour 3/4 of the dressing over the pasta and toss to coat evenly, if needed, add the remaining dressing. Chill for at least 2 hours and serve as a side dish with any meal.

  1. Cook macaroni in a pot of boiling water until tender, drain and set aside.
  2. In a small saucepan, boil the squid in cups of water mixed with the red wine vinegar for 4-5 minutes. Drain, cut into rings, reserve the tentacles and set aside.
  3. Heat the olive oil in a large heavy non stick skillet. Cook the onion and garlic until onion is tender but not brown. Stir in the squid and cook for 2 more minutes. Pour in the tomato puree, white wine, and lemon juice. Season with cinnamon stick, bay leaves, oregano, salt and pepper. Bring to a boil then reduce the heat and simmer partially covered for 15-20 minutes, stirring occasionally.
  4. Remove from heat, remove the bay leaves and cinnamon stick pieces then mix in the macaroni. Serve with Parmesan cheese for topping.

  1. Rub the fish pieces with the cracked black pepper, pan fry in a heated non stick pan with a splash of olive oil for about 3-4 minutes per side or until it flakes easily. Set aside.
  2. While the fish is cooking, mix together the sauce ingredients in a small bowl, set aside.
  3. In a pot, heat several cups of cooking oil for the onion rings. The temp should be 180 C, hot but not smoking. Mix the tempura flour with 1/2 cup of water, coat the onion rings in flour, then into the tempura mix and fry in the hot oil until golden brown and crispy. Remove and place on paper towels and season with salt and pepper to your liking.
  4. Lightly toast the buns. Spread some sauce on the bottom bun, add some lettuce leaves, some tomato slices, a piece of fish, some onion rings, and spread some sauce on the top bun and cover the burger. Serve and enjoy.
