For the Wontons
  1. Combine the Wonton ingredients, except the wrappers and water in a mixing bowl until fully mixed.
  2. For the wrappers, there is two ways to do this, the simple, and the fancy. First thing, add some water to a small dish and keep near you, this is for sealing the wontons.
  3. For the simple way, place a wrapper on your palm, one corner towards you and the opposite corner pointed away from you. Place some pork filing in the center of the wrapper, 1/2 teaspoon to 1/2 tablespoon, you will get the feel for this as you make them. Now dip a finger into the water and wet the two edges that are farthest from you, then take the corner nearest you and fold over away from you to the opposite corner, to make a triangle, and use your fingers to seal the two edges. (I will have photos soon to show this). Set the wonton on a sheet of parchment paper. This completes the simple method, repeat until all the filling is used in each wrapper. OR, read the next step for the fancy method.
  4. For the fancy method, once you have the triangle shape, and the two edges sealed, take the two opposite corners and fold over each other and seal those. (I will have photos to show this soon as well). Set the wonton on parchment paper and repeat until all the filling is used in the wrappers.
For the Soup
  1. Add all of the Soup ingredients to a pot and bring to a boil, then reduce to a simmer and cook for 10 minutes, lets the flavors blend. Remove the ginger and garlic.
  2. Bring back to a boil, then lower in the wontons, and cook for 10 minutes. Ladle into bowls and top with spring onion.
  3. Serve.

For the Breakfast Sausage
  1. First thing we need to do is make the sausage. Very easy, just mix together all the Breakfast Sausage ingredients in a mixing bowl. Mix well. Cover and refrigerate while you prepare the rest, best to make this and refrigerate overnight to allow the flavors to blend.
  2. Fry the sausage in a non stick pan, breaking it apart with your spatula until browned and cooked through. Remove sausage with a slotted spoon, leaving the fat in the pan. Drain sausage and set aside.
For the Pizza Dough
  1. Preheat your oven to 220 C.
  2. Next, we need to make the pizza dough. This is my thin crust pizza dough, the pre-baking has never failed me a crust fully cooked through.
  3. Add the flour into a mixing bowl. Add the salt and dried Italian seasoning/herbs of your choice (if using) and yeast, whisk to combine.
  4. Make a well in the center of the flour and pour in the water. Use your fingers or a wooden spoon to combine everything together. When it comes together into a cohesive ball, turn it out onto the counter along with any extra flour in the bowl that hasn’t yet gotten worked in.
  5. Knead the dough until all the flour is incorporated and the dough is smooth/elastic to the touch, about five minutes. The dough should still feel moist and just slightly tacky. If it’s sticking to your hands and counter top like bubble gum, work in more flour one tablespoon at a time until it’s smooth and silky.
  6. I use a 13 inch non stick pizza pan, sprinkle some corn meal around on the pan, the place the ball of dough in the center. Use the heels of your hands and working from the middle gently press the dough outward until it’s about 1/4 of an inch thick or less, while rotating the pan. You can also use a mini rolling pin for this part.
  7. Bake the crust for 4 minutes, then rotate the pan 180 degrees and bake for 3 more minutes. Remove pan and set aside.
Let's Make This
  1. Sausage is made, crust is made, let's make the eggs then the gravy and get this pizza baked.
  2. For the gravy, using the Gravy ingredients, Add butter to hot pan and melt together with sausage fat. Whisk together the evaporated (canned) milk and water with the flour. Add to hot fat in skillet. Add salt and pepper to taste. Bring to a boil, stirring constantly until gravy starts to thicken. Add sausage back into gravy; heat until sausage is hot and gravy is thick. You want a thick gravy for this dish, after all, you are making a pizza. Set pan aside.
  3. Now prepare the eggs, crack all the eggs into another non stick pan, season with salt and pepper as desired. Cook and fold to scramble until just set, remove from heat.
  4. Take your pre-baked pizza crust and spread out the gravy evenly. Top with the scrambled eggs, then sprinkle on the shredded cheese, top that with the spring onion.
  5. Place in the oven for 15 to 20 minutes or until the top is nicely melted and just starting to brown up.
  6. Slice, serve, and enjoy.
Recipe Notes

Figure about 50 Baht for the pork, another 100 Baht for the cheese. Figuring 4 servings, this is about $1.10 per serving. I will verify this when I make it.

  1. Cook the pasta in a pot of salted water until just tender, drain well and place in a large serving bowl.
  2. Before the pasta is done, heat a non stick pan with the olive oil. When the oil is hot, add and cook the garlic until fragrant, about 30 seconds, add the red pepper flakes and salt to desired preference then add the breadcrumbs and mix well ensuring the breadcrumbs are saturated with the oil, if they look a bit dry, add a tablespoon of butter at a time and mix in to get the desired consistency.
  3. Pour the breadcrumb mixture into the pasta and toss to mix together.
  4. Serve with Parmesan cheese available for topping. A green salad as a side would make this a light meal.

  1. Add the flour and pepper flakes to a large zip lock bag, add a few livers, seal the bag and shake to coat the liver, remove to a plate and repeat to coat all the liver.
  2. Heat the olive oil in a large non stick pan and when heated, fry the livers for 2-4 minutes on each side, depending if you want them pink inside or well done. Season with salt and pepper as desired while frying.
  3. Remove the liver to a plate and cover to keep warm, remove the pan from the burner and let it cool for 30 seconds to minute, then add the balsamic vinegar and return to the burner.
  4. Add the butter and mix well, when combined, return the liver to the pan and coat them with the sauce and heat them through.
  5. Serve with egg noodles or potato and a vegetable of your choice.

  2. Heat a large non stick skillet with a splash of olive oil. Add the sausage and red pepper flakes and break up the sausage with the spatula as you cook it for about minutes over medium heat.
  3. Add the onion, garlic, cook the sausage until cooked through and the onion is soft and translucent.
  4. Add the plum tomatoes, cream, and a pinch of salt. Stir and cook until just before boiling, then add the pasta.
  5. Serve garnished with fresh parsley and Parmesan cheese.

  4. Add the pasta, mix to combine, serve.

  1. Preheat your oven to 190 C. Bring to a boil a large pot of salted water, add the pasta and cook until just tender, drain.
  2. Add butter to the same pot and melt over medium heat. Add garlic and cook until fragrant, about a minute. Sprinkle with flour and cook until golden brown, about a minute more. Add milk and bring to a simmer. Let thicken then add 1 cup mozzarella, the Gouda, and Parmesan and stir until melted, about 2 minutes.
  3. Add the macaroni and stir until completely coated, then stir in the chopped pepperoni, 1/2 cup pizza sauce, oregano, and crushed red pepper flakes. Season with salt and pepper to taste.
  4. Transfer to a baking dish and spoon remaining pizza sauce on top. Top with remaining mozzarella and pepperoni slices. Bake until cheese is melted and golden brown and the pepperoni crispy, about 15 minutes.
  5. Garnish with basil and Parmesan and serve.
Recipe Notes

Only thing that is expensive is the cheese. Figure about 120 Baht for the Mozzarella, 90 Baht for the Gouda, and 90 Baht for the Parmesan. For 6 servings, this is about $1.47 per serving.
