  1. In a large bowl mix everything together except the peas. When mixed, add the peas and stir to coat them.
  2. Cover and refrigerate for at least 3 hours or more before serving. Leftovers can be kept covered in the fridge for several days.

  1. Begin by slicing the chicken into thin strips, then mix in the 1 teaspoon of soy sauce and the corn flour. Let this sit for 5 to 10 minutes while you prepare the mushrooms.
  2. Prepare the mushroom, Straw mushrooms are unique in shape, cut them in half lengthwise only or they will just fall apart.
  3. Heat a wok or non stick wok-pan (what I will use) with the cooking oil. Add the chicken and stir fry and sear the chicken until no longer pink, do not over cook, as it will get cooked more later on. Remove the chicken from the pan and set aside.
  4. Same pan, add the onion and ginger. Stir fry until fragrant then add the mushrooms and stir fry for 1 minute. Return the chicken to the pan, season with the black pepper, 2 teaspoons of soy sauce sauce, and the oyster sauce. Cook on high heat and stir fry.
  5. Stir in the water and stir until well mixed. Let the water reduce to thicken it.
  6. Season with salt to taste, serve with rice.

  1. Preheat your oven to 190 C and line a baking sheet with parchment paper. Mix together the Sriracha and ketchup in a small bowl, set aside.
  2. In a large mixing bowl, add the ground meats, shredded onion, carrot, parsley, garlic, parsley, panko, egg, and salt and pepper as desired, mix together with a large spoon until just combined. Add 1/2 cup of the ketchup mixture and mix that in, use your hands for this.
  3. Divide the meat mixture into 4 portions, place each portion onto the parchment paper and shape 1 inch high in either a square or circle. Spread 1 tablespoon of ketchup mixture on each patty and bake for 20 minutes.
  4. Toast the sandwich rolls or one side of each slice of bread if using that. Assemble the sandwiches as, spread mayo on each slice of bread or roll, then lettuce leaves, meatloaf burger, another spoon of ketchup sauce, then onion and tomato, top with remaining bread or roll, serve.

Figure about 100 Baht/500 grams for beef and 60 Baht/500 grams for pork. For 4 servings, this is about $1.18 per serving.

  1. In large bowl, whisk together the corn starch, cooking wine, spring onion, ginger, salt and pepper, and egg white. Add the fish slices and marinate for 1 hour.
  2. When the fish is ready, peel the tomatoes and dice. In a large pot on medium heat 2 tablespoons of oil and add the spring onion and garlic until aromatic, add the diced tomatoes and reduce the heat to low and cook for about 7 to 10 minutes until the tomatoes are soft and lots of juice is released. Add 8 cups of hot water and simmer for 20 minutes.
  3. Add the celery, red onion, and mushrooms and cook for another 10 minutes, season with salt and pepper to taste.
  4. Turn up the heat to medium and add the fish slices and marinade and stir, cook for about 30 seconds to 1 minute or until the fish slices turn white, remove from heat and carefully pour into a large serving bowl.
  5. Optional, heat 2 tablespoons of oil in a small pan or wok until slightly smoking and pour into the soup.
  6. Sprinkle coriander and and spring onion on the top and serve.

Variant: For a spicy version, add 2-4 chopped red Thai Bird's Eye Chilies, stems removed, to the oil in Step 5, then mix into the soup after pouring on top.

  1. Cut the pork loin into 1 inch cubes, place in a zip lock bag.
  2. Mix the marinade ingredients in a bowl and add to the zip lock bag with the pork, squish everything around to coat all the meat.
  3. If your vegetables are prepped, add them to the zip lock as well, they will pick up great flavor.
  4. Soak the skewers in water while the meat (and maybe vegetables) are marinating.
  5. Remove the pork (and maybe vegetables) from the marinade and drain, place on skewers alternating between pork cub and a vegetable, pork cube and another vegetable, until all is skewered.
  6. Place on a medium hot grill over medium heat and grill for 8 to 10 minutes, turning frequently until the pork is cooked through.
  7. Serve with sides of your choice, corn on the cob and coleslaw come to mind.
Recipe Notes

Pork loin will cost about 70 Baht/500 grams. For 4 servings, this is about 52 cents per serving.

Variants: Use what ever vegetables you like, it is that easy. In addition to button mushrooms, think Shiitake or even King Oyster mushrooms cut into thick slices.

  1. For those in Thailand, the big cities may have Pepper Jack cheese, for those not in the big cities (such as myself), use a mix of shredded Cheddar and Mozzarella and add a pinch of red pepper flakes, aka, Thai Chili Powder, which a is crushed type, not a powder.
  2. Preheat your oven to 180 C. Slice the rolls in half lengthwise, slice the entire package at one time, not individually. Place the bottom half in a 9x13 baking dish.
  3. Spread the chicken on the layer of rolls, then spread the BBQ sauce, then the onion, cheese, and parsley.
  4. Place the top layer of the rolls on the top, brush with melted butter. Bake for 20 minutes.
  5. Slice into individual sliders, serve, and watch your fingers!
Recipe Notes

The rolls at Tesco are 40 Baht, the chicken, maybe 50 Baht. Cheese I will estimate at 50 Baht. For 4 servings, this is about $1.03 per serving.

Low cost if using homemade sardines. I make sardines using small mackerel which is sold per fish anywhere from 10 to 25 Baht each, so about 29 to 74 cents per sandwich. (I cut each fish into 3 pieces when making sardines.)

If using tinned sardines, figure 1 tin per sandwich at 59 Baht, this is about $1.74 per sandwich.

If using tinned sardines in olive oil, figure about 59 Baht/tin/2 sandwiches. This would cost about 87 Baht per sandwich, reasonable and healthy.

Variants: As with any sandwich, use your imagination. Open faced or closed, substitute olive oil for mayo, substitute mustard for mayo, and spicy mustard even better! Add veggies you like.

  1. Take the prepared dough out of the fridge, coat a 18x13 inch rimmed baking sheet with the olive oil. Gently and gradually stretch dough until it reaches the edges of baking sheet. (If dough springs back or is stiff to work with, let it rest 10 minutes before continuing. You may need to let it rest more than once.)
  2. Preheat your oven to 250 C.
  3. Cover dough on baking sheet tightly with plastic wrap and let sit in a warm place until it is puffed and full of air bubbles, 30 to 40 minutes.
  4. Once dough has risen in baking sheet, top with mozzarella and provolone, dot pie with tomato sauce, and top with the onion and olives.
  5. Bake until golden brown and crisp on bottom and sides, 20 to 30 minutes.
  6. Cut into squares and serve.
Recipe Notes

The Mozzarella cheese is about 220 Baht/for the 340 grams. Provolone I cannot price but a guess is about 150 Baht. For 6 servings (at least), this is about $1.82 per serving.

  2. Roll out or use your hands, one piece of dough until flat and somewhat round in shape, does not have to be perfect.
  3. In a medium bowl, mix together the chicken, ranch packet, red onion, and bacon.
  4. Place a 1/2 slice of Mozzarella on the rolled out dough. Top with 2-3 tablespoons of the chicken mixture.
  5. Fold one side of dough up and over ingredients, and seal calzone by crimping the edges together. Place on a parchment lined baking sheet. Repeat for the remaining calzones.
  6. Mix together the egg and water to make egg wash, brush each calzone with the egg wash and sprinkle with Cheddar to your liking.
