  1. Preheat your oven to 180 C.
  2. Add all ingredients to a large mixing bowl, using a large sturdy spoon, mix thoroughly but gently, you are not trying to make a cake batter here. An overly worked meatloaf may result in a tougher meatloaf.
  3. Place the mixed beef in a 7x11 baking dish and shape into a loaf. Bake for 50-56 minutes or until no longer pink in the center and juices run clear. For meatloaf I use a thermometer to verify the minimum safe temp, for ground beef, you want a minimum of 71 C or 160 F. When done, remove from oven.
  4. Let the meatloaf rest for 5 minutes, then slice and enjoy.
Recipe Notes

For the beef, figure about 200 Baht. For 6 servings, this is about 98 cents per serving.

Variants: 1. Instead of using ketchup, us V8 juice. 2. Before baking, a mixture of ketchup, brown sugar, and mustard spread over the top. 3. About 10 minutes before the meatloaf is done, spread some V8 juice over the top and continue to bake until done. 4. Add diced bell pepper. 5. Replace the oats with crushed butter crackers. 6. Add chopped mushrooms.

  1. Cream the sugar and shortening together in a large mixing bowl with a large sturdy spoon. Add the vanilla, egg, and molasses; beat until well blended. When mixed it sort of looks like chocolate pudding.
  2. Combine the flour, salt, baking soda, and spices in another bowl; blend well. Add the dry mixture to the first mixture, mix well. Fold in the oatmeal. Cover and chill in the fridge to firm up the dough at bit. This photo is after the flour mixture was mixed in.
  3. Preheat your oven to 190 C. Lightly grease a baking sheet with butter.
  4. Drop the dough using two tablespoons, one to scoop, and one to push off on to the prepared baking sheet. This photo shows the consistency of dough.
  5. Bake 10 to 12 minutes. Cool on the sheet for a few minutes, then transfer to a rack to cool completely. Enjoy.

  1. In a large bowl, beat the butter until smooth, add both sugars, beat until fluffy. Beat in the egg and vanilla, then add the flour, salt, cinnamon, and oatmeal. Cover the bowl and chill in the refrigerator until it is firm.
  2. Preheat the oven to 160 C. Shape the dough into large marble sized balls and place on ungreased cookie sheets. Flatten each ball with the bottom of a drinking glass dipped into granulated sugar.
  3. Bake the cookies for 12-15 minutes or until the cookies are just set and light golden brown. Cool the cookies on the cookie sheets for about a minute, then remove to wire racks to cool.

  1. Peel the banana and place in a bowl, add the oats, and any dried fruit. Using your hands mix everything together.
  2. For oven baking, just drop by spoonfuls to make about 12 cookies, slightly flatten them down, back for about 15-20 minutes or until slightly golden brown.
  3. For microwave cooking, shape spoonfuls into flat cookie circles and cook for 30 seconds to 1 minute, making sure they do not burn.

  1. Preheat your oven to 180 C.
  2. In a small bowl, mix together the chopped apples, 2 tablespoons sugar, cinnamon, and nutmeg. Set aside.
  3. Mix together the streusel ingredients in a bowl and set aside.
  4. In a medium bowl, combine flour and brown sugar. Cut in butter with a pastry cutter or large sturdy fork until mixture is crumbly. Press evenly into a 13x9 inch baking pan lined with aluminum foil. Bake 15 minutes, or until lightly browned.
  5. While the crust is baking, in a large bowl, beat cream cheese with an electric mixer at medium speed until smooth. Beat in 1/2 cup sugar, eggs, and vanilla until smooth. Pour over warm crust.
  6. Spoon apple mixture evenly over the cream cheese mixture, then sprinkle evenly with Streusel Topping. Bake 30 minutes, or until filling is set. Allow to cool for 10 minutes, drizzle with caramel sauce, serve.
Recipe Notes

The cream cheese is the only expensive item here, 240 Baht for 500 grams, and since a lot of butter is used, this is 123 Baht for 1 and a half blocks. For 10 servings, this is about $1.07 per serving.

  1. Add the butter, sugars, milk, cocoa, and salt to a large sauce pan or pot.
  2. Bring to a rolling boil and hold for 1 minute. Remove from heat.
  3. Add peanut butter and stir until melted, then mix in the vanilla extract.
  4. Now mix in 2 1/2 cups of oats until completely coated, if it looks wet enough, add 1/4 cup at a time from the remaining 1/2 cup and mix in until coated.
  5. Drop the cookies by tablespoons onto wax paper or foil and let cool until set.

  1. Preheat your oven to 180 C and get out a shallow baking dish, like an 8x8 square pan. You can use a loaf pan but will need to increase the time due to the increased thickness.
  2. Combine all ingredients except the cheese in a bowl until well mixed. Press this into the baking dish. Bake for 20 minutes, remove from oven and sprinkle cheese over the top and bake for an additional 15-20 minutes. Let rest for 5 minutes then cut into squares and serve with sides of your choice.
Recipe Notes

Ground beef will run about 100 Baht for 500 grams, minced pork will run about 70 Baht for 500 grams. To minimize the beef cost, buy a large piece of beef and mince it yourself. This comes out to about (figuring 100 Baht for the beef) 50 cents per serving for 6 servings.
