  1. Heat a pot of water and add the shallots and peppercorns.
  2. When the water is boiling, add the pork ribs. Here is the ribs used.
  3. And into the pot.
  4. Now get your chili and shrimp paste out and ready. Shrimp paste on the left, chili paste on the right.
  5. And wash the basil and get that ready.
  6. When the meat is tender, about 30 minutes to an hour, mix in the chili and shrimp pastes. and let simmer / low boil for another 30 minutes.
  7. Then add the basil and let that wilt down, takes just a minute or so.
  8. Stir the basil into the curry and let it simmer for a few more minutes.
  9. Ready to serve with rice.

I will estimate 120 Baht for the ribs. For 6 servings, this is about 59 cents per serving.

  1. Preheat your oven to 140 C. Line a baking sheet with foil.
  2. In a bowl, mix together the salt, black pepper, paprika, cayenne pepper, oregano, and brown sugar.
  3. Trim the ends of the strip of ribs to remove any odd or cartilage pieces, lay the strips on the baking sheet, cut the strips in half if needed. This is the type of ribs I use from Tesco.
  4. Season both sides of the ribs with the seasoning, arrange meaty side up, cover with another sheet of foil. Bake for 2 hours.
  5. Increase the oven temp to 200 C, carefully remove the foil covering the ribs, spread BBQ sauce evenly over the top of the ribs, place the long beans along the sides of the pan, season the long beans with salt.
  6. Bake for another 10 minutes. Cut the ribs into single bone pieces.
  7. Serve the ribs with the long beans, complete meal.

Pork ribs are about 115 Baht/kilo. 1 1/2 kilo would be about 173 Baht. For 4 servings, this is about $1.27 per serving, over all good price for a quality meal, after all, who does not like ribs.

  1. This is the spice packet used, Lobo brand. Even the Thais know Lobo is the best brand for soup and spice mixes. Inside of the packet is a cloth bag, that contains the spices, the bag is simply placed in the water and removed before you serve.
  2. Rinse and cut ribs into 1 bone sections.
  3. Bring 3 cups of water to a boil in a pot, when it is boiling, add the spice bag from the packet to the water and add the ribs. Boil for 5 minutes then reduce to a simmer and cook for 45 minutes or until the meat is tender. If adding radish, when the meat is tender, add the sliced radish and simmer for 15 minutes more. Discard the spice bag.
  4. Serve with rice on the side.
  5. Or place rice in a bowl and spoon the soup over the rice, this is my preferred method.
Recipe Notes

The Lobo brand spice packet for this costs 17 Baht and the pork ribs is about 115 Baht/kilo. For 3 servings, this is about $1.30 per serving.

Variants: 1. Lamb, beef, and ox tail can be used instead of pork. Simply 1/2 cup more water and simmer for 2 hours. 2. Daikon can be replaced with carrot or used together. 3. Add hard boiled chicken or quail eggs.

  1. These are the ribs I get at Tesco. Look for the strips that are meaty, remove the distorted bones on the ends and save for a soup if you wish, and just go with the nice straight bones. The bones are only about 3 inches long.
  2. Remove silver skin from the back of the ribs if that is present. Cut the ribs into 3 bone sections, sprinkle generously with salt and pepper and place in the slow cooker.
  3. Pour the root beer into the slow cooker, cover, and cook on Low setting for 5 hours, do not remove the cover.
  4. Check the ribs at 5 hours, if very tender, you are almost done, if not tender, continue cooking and checking each hour. Once the ribs are tender, carefully remove from the pot and set on a foil lined baking sheet.
  5. Brush the ribs with BBQ sauce and broil for a few minutes, charring a bit is ok, then flip the ribs over, brush more sauce, and broil for a few more minutes, again, a bit of char is ok. Remove to a serving tray, sprinkle some thinly sliced spring onion on, and serve.

  1. Ribs come in a strip as shown, cut between each bone, rinse and place ribs in a pot.
  2. Cut your vegetables up and place in the same pot, add water to cover by about 2 inches. Bring to a boil then reduce to a low simmer. Simmer for about 1 1/2 to 2 hours. Alternately, put everything in a slow cooker and set on High setting for about 3-4 hours. Skim off any foam occasionally. Season with salt to taste, serve as is with a bowl of rice on the side, or serve as a side to a meal.

Pork ribs will cost about 80 Baht/500 grams. For 4 servings, this is about 59 cents per serving.

Variant: change the ribs to chicken legs and you have Thai Chicken soup, it is really that easy.

  1. A rack of ribs is the long strip of ribs, the rib bones are about 3 inches long. Pick out strips that are meaty between the straight bones and not so much of the odd shaped bones. Prep the ribs by rinsing them then cut the racks into portions, 3 bones per section. (Photo credit: Tesco Lotus Thailand.)
  2. Mix the dry rub ingredients in small bowl. Using your hands rub the dry rub on the ribs on both sides. Place ribs in a bag and twist to remove air and place in a bowl and put in the fridge overnight. Perfect use for a Tesco Lotus plastic bag.
  3. Next day, remove the ribs from the fridge. Mix the barbecue sauce ingredients in a small bowl. Layer the ribs in your slow cooker and on each layer, add a tablespoon of sauce. Add the water to the sides of the pot, cover and cook on Low setting for 9 hours, do not remove the lid during this time. Serve with the sauce on the side. Side dishes recommended would be pinto beans, and even potato salad.

Pork ribs run about 140 Baht/kilo, I bought 3 slabs for about 180 Baht. This came out to about 90 cents per person for 6 meals.

  1. Put a large pot of water on the stove, throw in the crushed shallots and crushed garlic, and broth powder and bring to a boil.
  2. While waiting on the water to boil, cut between each rib bone to separate them all. Once water is boiling, add all the ribs. Ribs should be cooked in about 10-15 minutes.
  3. When ribs are almost cooked through, add the sliced radish and reduce heat to a simmer and cook until the radish is tender.
  4. Turn off the heat and add cilantro and spring onions, gently stir then serve. Serve as a side of soup or with rice to make a complete meal.

Note: Pork ribs, these are normally found in long strips or "racks" 2-3 inches wide.

Pork ribs average about 125 baht per kilo, the radish is 25 baht per kilo, other items are minimal in cost. This soup would cost about $4.50 to make, can last 2-3 days, so per person it would easily come in under $1 per meal.
