  1. Add the wine or stock, milk, and salt to a shallow dish, stir to mix in the salt. Rinse the chops place in the dish shallow dish, turning occasionally to coat them, and place in the fridge for 2 hours.
  2. Add the To Cook ingredients to a a large non stick pan, and whisk to mix the turmeric and curry paste in.
  3. When the mixture is starting to simmer, add the pork chops, keep on a medium to low simmer, cover, and cook the chops for 20 minutes.
  4. When the juices run clear and the chops are tender, remove from the pan and server with rice or potatoes with some curry drizzled over them.

  1. Mix together the salt, sugar, onion, garlic, white pepper, and soy sauces. I used two thin pieces of cinnamon.
  2. Rinse the pork chops. This photo shows how the pork chops can vary.
  3. You can tenderize if you like with a mallet or needle tenderizer. Add the chops to a sturdy zip lock bag. I use a needle tenderizer, both sides, not to tenderize the meat but to allow the marinade to soak into the meat.
  4. Add the remaining liquid mix and the star anise and cinnamon to the zip lock bag, squish the chops around, mindful of the where the bones are next to the bag. Remove as much as air as you can from the bag and zip close. Place the bag in the fridge for at least 3 hours but overnight is recommended. For 3-6 hours, flip the bag once an hour.
  5. Place the chops and the marinade in a pot,
  6. Add water to just cover the chops. Bring to a boil then reduce to a low boil, and let the chops cook until the liquid is reduced by half and the chops are tender.
  7. Remove the chops to a dish with a slotted spoon leaving the liquid in the pot.
  8. Mix together the cornstarch and 2 tablespoons of water to make a slurry. Whisk the slurry into the liquid while the pot is on medium heat, whisk or stir for several minutes to slightly thicken the sauce. Remove the star anise and cinnamon sticks.
  9. Serve the chops with rice on the side and spoon the sauce over the chops.

  1. Preheat your oven to 180 C. Oil or butter a 9x13 baking dish.
  2. Heat a splash of cooking oil in large non stick pan, season chops with salt and pepper as desired, browns chops on both sides, remove from pan and place in the baking dish.
  3. Prepare the boxed stuffing according to package or make from the shortcut. Spoon the stuffing over the chops.
  4. Mix together the milk and soup, pour over the top of the chops.
  5. Cover the dish with foil and bake for 1 hour. You can bake longer for increased tenderness if desired, the chops will remain moist.
  6. Remove the foil for the last 15 to 20 minutes of baking to nicely brown the top of the casserole.
  7. Serve.

  1. To a large pot, add the first 11 ingredients. Bring to a boil then reduce heat to a simmer and cook for 1 hour, uncovered. Remove the chops and set aside. Not much to see during this.
  2. Remove 3/4 cup of broth from the pot then whisk the flour into the broth you removed, set aside. Using tongs to hold the chops, remove and discard any bones and fat (great treat for your dog) then chop the meat into bite size pieces and add the meat back to the pot.
  3. To the pot, add the 5 vegetables at the end of the ingredient list, add more water if needed to just cover the veggies and meat. Stir together then bring to a boil and stir in the flour mixture you set aside earlier, this will slightly thicken the soup. Reduce heat to a simmer, cover and tilt the lid, and let cook for 1 hour, stirring occasionally.
  4. Remove the bay leaf, and optionally, you can gently mash some of the potatoes to make a thicker soup.
  5. Serve.
Recipe Notes

Figure about 100 Baht for pork loin (boneless chops). For 8 servings, this is about 40 cents per serving. When I price bone in chops I will update pricing here.

Variants: 1. Use 3 to 4 pork chops if they are thin or you want a meatier soup. 2. Use daikon in place of the carrot. 3. Use less potatoes and more broccoli. 4. Add sliced fresh mushrooms.

  1. You can use standard bone in or boneless pork chops for this. I used 4 thick cut (1 1/2 to 2 inches thick, 350 to 430 grams each) boneless loin chops, read Variant 1 listed below in the Recipe Notes if you want to use these.
  2. Place the pork chops in your slow cooker, top the chops with the mushrooms and garlic.
  3. Mix together the wine and soup, pour over the chops. (This photo is from about an hour into cooking.)
  4. Cover and cook on Low setting for 6 to 8 hours. Check for tenderness at 6 hours, if tender they are ready to be served, if not tender to your liking, continue cooking and keep checking every hour. Serve with mashed potatoes and a vegetable for a complete meal.
Recipe Notes

For the pork chops I used the thick cut loin chops, 4 of them were 200 Baht. For 4 servings, this is about $1.47 per serving.

Shortcut: Condensed Cream of Mushroom Soup.

Variant: 1. Use thick cut boneless loin chops or any chops thicker than 1 inch, if you want to use these, first, pound each chop with a needle tenderizer, two, you may need to extend the cooking time for tender chops but you do risk drying them out as well, so keep checking tenderness from 6 hours on. 2. Use mushrooms you like or have available. I used Buna (brown) Shimeji, but other good choices would be White Shimeji, Shiitake, white or brown button, or even King Oyster. Regular oyster and wood ear mushrooms probably not a good idea.

  1. In a large baking dish (glass, do not use metal), add the pork chops in a single layer, mix together the first 8 ingredients to make the marinade, pour over the pork chops and and flip them to make sure they are coated well. Place in the fridge for 6 to 8 hours, turning them once in a while.
  2. When you are ready to cook, heat a heavy pan on medium heat for two minutes, while the pan is heating, remove the pork chops from the marinade, set the marinade aside.
  3. Brush the pan with 1 teaspoon of olive oil, cook pork chops for 5 minutes on each side, pour in the marinade and reduce the heat to low, cover the pan and cook for 7 minutes, turning them once.
  4. Remove the pork chops and set aside. Turn the heat to medium and reduce the marinade until thickened then stir in the butter. Strain the sauce and pour over the pork chops.
  5. Serve with mashed potatoes and a vegetable.

I will have to price the pork chops next time I go to the store. This probably low cost.

Variant: Double the marinade for more sauce and to cover the chops better when marinating.

The pork chops I found at Tesco, thick cut, bone in, 250 grams each, were 160 Baht each making this about $4.70 per serving but these are so good I will make this once every 3 months, when I go to the city for my address report, I will look in Makro for these and the cost should be less. I will also test this recipe with just thick cut pork loin, which would make this a low cost meal.

  1. Preheat your oven to 180 C (350 F). Line a baking sheet with foil.
  2. Tenderize each chop with a hammer or needle tenderizer. Tenderize each side. Place chops on the baking sheet.
  3. Mix together the mayo and onion. Season chops with salt, pepper, and garlic powder to taste, spread the mayo mixture evenly over the chops, top with the shredded cheese.
  4. Bake for 35-45 minutes or until the cheese is bubbly and chops are cooked through.
  5. Serve with buttered mashed potatoes and a vegetable for a complete meal.

  1. Marinate the pork chops with the Italian dressing, cover and place in the fridge for 2-4 hours.
  2. Prepare your grill for medium hot coals. Remove the chops from the dressing and discard the dressing. Grill for 12-16 minutes, turning once, about 6-8 minutes per side, remove the chops from the grill and let them rest for 3 minutes, serve.
  3. You can also broil the chops for 12-16 minutes, turning once half way through, if you have no access to a grill.

I cannot price this yet. I will use a large pork loin and slice chops from that. For now I will estimate this is fair value.
