  1. Preheat your oven to 180 C. Oil or butter a 9x13 baking dish.
  2. Heat a splash of cooking oil in large non stick pan, season chops with salt and pepper as desired, browns chops on both sides, remove from pan and place in the baking dish.
  3. Prepare the boxed stuffing according to package or make from the shortcut. Spoon the stuffing over the chops.
  4. Mix together the milk and soup, pour over the top of the chops.
  5. Cover the dish with foil and bake for 1 hour. You can bake longer for increased tenderness if desired, the chops will remain moist.
  6. Remove the foil for the last 15 to 20 minutes of baking to nicely brown the top of the casserole.
  7. Serve.

  1. To a large pot, add the first 11 ingredients. Bring to a boil then reduce heat to a simmer and cook for 1 hour, uncovered. Remove the chops and set aside to cool.
  2. Remove 3/4 cup of broth from the pot then whisk the flour into the broth you removed. Set aside. When the chops have cooled, remove and discard any bones and fat then chop the meat into bite size pieces.
  3. To the pot, add the 5 vegetables at the end of the ingredient list and add the chopped pork as well. Stir and bring to a boil and stir in the flour mixture you set aside earlier. Reduce heat to a simmer and let cook for 1 hour, stirring occasionally.
  4. Remove the bay leaf, and optionally, you can gently mash some of the potatoes to make a thicker soup. Serve.
Recipe Notes

Figure about 100 Baht for pork loin (boneless chops). For 8 servings, this is about 40 cents per serving. When I price bone in chops I will update pricing here.

  1. You can use standard bone in or boneless pork chops for this. I used 4 thick cut (1 1/2 to 2 inches thick, 350 to 430 grams each) boneless loin chops, read Variant 1 listed below in the Recipe Notes if you want to use these.
  2. Place the pork chops in your slow cooker, top the chops with the mushrooms and garlic.
  3. Mix together the wine and soup, pour over the chops. (This photo is from about an hour into cooking.)
  4. Cover and cook on Low setting for 6 to 8 hours. Check for tenderness at 6 hours, if tender they are ready to be served, if not tender to your liking, continue cooking and keep checking every hour. Serve with mashed potatoes and a vegetable for a complete meal.
Recipe Notes

For the pork chops I used the thick cut loin chops, 4 of them were 200 Baht. For 4 servings, this is about $1.47 per serving.

Shortcut: Condensed Cream of Mushroom Soup.

Variant: 1. Use thick cut boneless loin chops or any chops thicker than 1 inch, if you want to use these, first, pound each chop with a needle tenderizer, two, you may need to extend the cooking time for tender chops but you do risk drying them out as well, so keep checking tenderness from 6 hours on. 2. Use mushrooms you like or have available. I used Buna (brown) Shimeji, but other good choices would be White Shimeji, Shiitake, white or brown button, or even King Oyster. Regular oyster and wood ear mushrooms probably not a good idea.

  1. In a large baking dish (glass, do not use metal), add the pork chops in a single layer, mix together the first 8 ingredients to make the marinade, pour over the pork chops and and flip them to make sure they are coated well. Place in the fridge for 6 to 8 hours, turning them once in a while.
  2. When you are ready to cook, heat a heavy pan on medium heat for two minutes, while the pan is heating, remove the pork chops from the marinade, set the marinade aside.
  3. Brush the pan with 1 teaspoon of olive oil, cook pork chops for 5 minutes on each side, pour in the marinade and reduce the heat to low, cover the pan and cook for 7 minutes, turning them once.
  4. Remove the pork chops and set aside. Turn the heat to medium and reduce the marinade until thickened then stir in the butter. Strain the sauce and pour over the pork chops.
  5. Serve with mashed potatoes and a vegetable.

I will have to price the pork chops next time I go to the store. This probably low cost.

Variant: Double the marinade for more sauce and to cover the chops better when marinating.

The pork chops I found at Tesco, thick cut, bone in, 250 grams each, were 160 Baht each making this about $4.70 per serving but these are so good I will make this once every 3 months, when I go to the city for my address report, I will look in Makro for these and the cost should be less. I will also test this recipe with just thick cut pork loin, which would make this a low cost meal.

  2. Tenderize each chop with a hammer or needle tenderizer. Tenderize each side. Place chops on the baking sheet.
  3. Mix together the mayo and onion. Season chops with salt, pepper, and garlic pepper to taste, spread the mayo mixture evenly over the chops, top with the shredded cheese.
  4. Bake for 35-45 minutes or until the cheese is bubbly and chops are cooked through.
  5. Serve with buttered mashed potatoes and a vegetable for a complete meal.

  1. Marinate the pork chops with the Italian dressing, cover and place in the fridge for 2-4 hours.
  2. Prepare your grill for medium hot coals. Remove the chops from the dressing and discard the dressing. Grill for 12-16 minutes, turning once, about 6-8 minutes per side, remove the chops from the grill and let them rest for 3 minutes, serve.
  3. You can also broil the chops for 12-16 minutes, turning once half way through, if you have no access to a grill.

  1. Preheat your oven to 180 C. Heat oil in a large skillet over medium-high heat. Add pork chops and saute until browned. Remove from skillet and drain on paper towel.
  2. In a medium bowl mix together the soup, milk, sour cream, and salt and pepper to taste. Stir in potatoes, 1/2 cup cheese and 1/2 cup onions. Mix together and spread mixture in the bottom of a 9×13 inch baking dish. Arrange pork chops over potato mixture.
  3. Cover dish and bake for about 40 minutes, or until internal temperature of pork has reached 71 C. Remove cover, top with remaining cheese and onions and bake uncovered for 5 more minutes.
  4. Serve with a steamed vegetable for a complete meal.
Recipe Notes

Tops has pork loin steaks for 83 Baht for 2, 4 loin steaks would be 166 Baht. The cheese will cost about 90 Baht. For 4 servings, this is about $1.88 per serving.

  1. In a bowl, mix together rotisserie seasoning, sage, rosemary, paprika, salt and pepper. Season pork chops evenly with 1/2 the mixture.
  2. To fry the pork chops, there is two methods. 1. Put a large pan on medium high heat. Add 1/2 inch of oil. 2. If you prefer to use less oil, simply sear the chops using only 2 tablespoons of oil. I would say number 1 is truly southern.
  3. While oil is getting hot, place 1 cup of flour on a plate. Dip all sides of the chops in flour, and tap off any excess.
  4. Carefully place the chops into the hot oil, and brown on both sides. Adjust the heat as needed. You are browning them, the trick to a juicy pork chop is to brown them then bake in the gravy to cook them through. When browned on both sides, remove to a plate lined with paper towels.
  5. Preheat your oven to 190 C, get out a large baking dish.
  6. Discard the oil from pan and turn heat to medium low. Add in butter. When butter is melted, add in celery, onion, and bell pepper. Cook for 5 to 8 minutes until vegetables are softened.
  7. To the skillet whisk in the flour and garlic. Adjust the heat as needed, and continue to cook the roux for 7-10 minutes until golden brown, then gradually add in chicken stock while whisking. Adjust the heat as needed, and allow to come to a boil to thicken. Then add in remaining rotisserie mixture and stir. Remove from heat.
  8. Place the pork chops in the baking dish in one layer, pour in the gravy from the pan, cover with foil and bake for 1 1/2 hours.
  9. Remove from oven, serve with mashed potatoes and the gravy spooned over the chop and potatoes.
Recipe Notes

The price for pork can vary widely, my preference would be to use pork loin, which is basically a boneless chop and is readily available. Standard Tesco pork loin is about 132 Baht/kilo, Betagrow brand is 300 Baht/kilo, and an open market I cannot price until I get some. For these you have to slice it as well. Going with 132 Baht as an estimate until I make this, for 4 servings, this is about 97 cents per serving.
