This is a make the day before you serve salad, or at a minimum, prepare in the morning for serving with the evening meal, the flavors need time to blend. I made this on 26 Dec 2017, tasted 6 hours later for dinner, outstanding, very well liked by my Thai wife as well.

  1. Heat a pot of salted water to boiling, add the pasta and cook until tender, drain well.
  2. While the pasta is cooking, mix together the Dressing ingredients in a good sized mixing bowl.
  3. After the pasta is well drained and cooled a bit, add it to the dressing along with the rest of the Salad ingredients except the cheese. Toss well to coat everything.
  4. Now add the cheese and fold that, then cover and refrigerate for at least 6 hours or overnight.
  5. Serve as a side, or in my opinion, as a main dish as that is what I will probably do.
Recipe Notes

I cannot price pepperoni at this time, I used a 150 gram pack of smoked ham for 90 Baht. For the Feta, that is 150 Baht for 275 grams, use half the package (75 Baht), cut the block in half and crumble that for right about a cup. Based on the Feta and smoked ham, for 4 servings, this is about $1.22 per serving.

Variants: 1. In place of pepperoni, use thin sliced smoked ham. 2. Use what you have, like a whole bell pepper instead of cup, or a package of pepperoni or smoked ham, like a cup or so, etc.

  1. Preheat your oven to 190 C. Bring to a boil a large pot of salted water, add the pasta and cook until just tender, drain.
  2. Add butter to the same pot and melt over medium heat. Add garlic and cook until fragrant, about a minute. Sprinkle with flour and cook until golden brown, about a minute more. Add milk and bring to a simmer. Let thicken then add 1 cup mozzarella, the Gouda, and Parmesan and stir until melted, about 2 minutes.
  3. Add the macaroni and stir until completely coated, then stir in the chopped pepperoni, 1/2 cup pizza sauce, oregano, and crushed red pepper flakes. Season with salt and pepper to taste.
  4. Transfer to a baking dish and spoon remaining pizza sauce on top. Top with remaining mozzarella and pepperoni slices. Bake until cheese is melted and golden brown and the pepperoni crispy, about 15 minutes.
  5. Garnish with basil and Parmesan and serve.
Recipe Notes

Only thing that is expensive is the cheese. Figure about 120 Baht for the Mozzarella, 90 Baht for the Gouda, and 90 Baht for the Parmesan. For 6 servings, this is about $1.47 per serving.

  1. Butter the bread like you would to make a normal grilled cheese.
  2. Put a piece of cheese on the butter side down piece of bread. Spread some pasta sauce on the piece of cheese. Add the pepperoni, mushrooms, and olives, or use what ever pizza toppings you like but keep it to 2-3 items. Add another piece of cheese on top of the toppings. Butter the other piece of bread and put it butter side up on top.
  3. Cook in a hot skillet until golden brown on each side. Enjoy.

  1. Preheat your oven to 220 C. Lightly grease with a butter a pie baking dish.
  2. Mix together the tomato sauce, cheese, and pepperoni in a small bowl.
  3. Shape the pizza dough into a large rectangle, and with a sharp knife or dough cutter, cut into 24 even squares.
  4. Add a small spoon of filling to a square, then pull the corners up to the top and pinch together to seal, to make a round ball, place the ball in the pie dish seam side down. Repeat for the all the squares.
  5. Once all the balls are in the pie dish, brush on the melted butter.
  6. Bake for 15 to 20 minutes or until the top is golden brown. Serve with additional tomato sauce for dipping, enjoy.

The cheese would cost about 140 Baht. For 24 bites, as an appetizer, say for 6 servings, this is about 69 cents per serving.

  1. Preheat your oven to 180 C. grease a 9x13 baking dish with butter.
  2. Cook the pasta in a pot of boiling water until just tender, drain and rinse with cold water, drain well then place the pasta in the baking dish and spread evenly.
  3. In a large non stick skillet, brown the sausage and beef along with the onion and garlic until the meat is no longer pink then drain off the fat. Add the diced peppers and cook for 2-3 minutes until the peppers are just starting to get tender, then mix in the pasta sauce and oregano. Mix this together then pour the meat sauce over the pasta in the baking dish.
  4. Top the meat sauce with a layer of cheese then top the cheese with slices of Pepperoni. Bake for 35-40 minutes or until the cheese is melted and the pasta is warmed through. Serve.
Recipe Notes

Bulk sausage I cannot price but you can make yourself with ground pork which will cost about 25 Baht/250 grams. Figure about 50 Baht for 250 grams of ground beef. The Mozzarella cheese will cost 140 Baht for a 200 gram block which will make about 2 cups of shredded. If using 3 cups of shredded, go with 1 1/2 blocks at 210 Baht. For 8 servings, this is about $1.05 per serving.

  1. Heat a medium skillet over medium heat and fry the pepperoni until crisp. Transfer on a paper towel to drain. This DOES NOT have not have to be Pepperoni, this can be Italian sausage, chicken sausage, grilled chicken, totally up to you, but you have to cook the meat first.
  2. Heat a cast iron pan over medium heat. No oil is needed.
  3. Brush each tortilla with a thin layer of pizza sauce, thin so that it does not run off if held up. It is so easy to make a nice sauce from the shortcut listed on this site, it will cost you one small can of tomato paste, read the shortcut.
  4. Lay a tortilla in the hot pan, sauce side up, sprinkle with cheese then add Pepperoni slices or meat of your choice, cover with more cheese, place another tortilla on top, sauce side down, cook for 3-5 minutes, then using a wide spatula, flip for another 3-5 minutes until cheese is nice and gooey and tortillas are crispy on the edges. NOTE: Cheese is what hold the quesadilla together, too little cheese and it will fall apart when flipping or even holding to eat.
  5. Remove from pan and slice into quarters, serve with pizza sauce as a dipping sauce.
  6. For variants to this, feel free to add sliced mushrooms, sliced black olives, or even ham slices.
Recipe Notes

Pepperoni I cannot state a price for although it is available here. Pork and chicken sausage is very inexpensive to make yourself, just crumble in a pan and fry until done. If you use store bought sausage, price will be higher. I will say 100 Baht for the meat.

Cheese is the expensive part, Mozerella cheese, Thai made is 140 Baht per block of 200 grams. If (when I make these) I will use at least 2 blocks. You have to shred yourself. If using packaged shredded cheese, you will pay more, and you will have more additives.

So using 100 Baht for meat and 280 Baht for cheese, for 4 quesadillas, 380 Baht total, comes to about $2 per person if serving 4 people. Not all that unreasonable when you look at what restaurants are charging.
