Ingredients
  • 1 cup peanut butter honey roasted if you have that
  • 1 cup sugar or 1/2 cup sugar + 1/2 cup brown sugar packed
  • 1 egg chicken or duck

Instructions
  1. Preheat your oven to 180 C (350 F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, mix together everything until well combined. Place a few tablespoons of additional sugar in a separate small bowl.
  3. Drop by tablespoons onto the parchment. Dip a fork into the bowl with the sugar and press each cookie down, dipping the fork in the sugar for each cookie.
  4. Bake for 10-12 minutes, aim is just until golden brown around the edges. Remove from the oven and let the sheet cool for 5 minutes, then remove the cookies to a rack to cool.
  5. Enjoy.

Variants: 1. Mix in chocolate chips. 2. To make peanut blossoms, place a Hershey's kiss on top of each cookie right when they come out of the oven.

Instructions
  1. Preheat your oven to 180 C. Line a baking sheet with parchment paper.
  2. In a mixing bowl, add the sugar and egg and mix until creamy using an electric mixer. Add the peanut butter and mix together well.
  3. Form 1 inch balls of dough, a small ice cream scoop would be ideal, or just use two spoons. Place on the parchment paper, goal is 12 balls.
  4. Slightly flatten each ball with the back of a fork, then again at a 90 degree angle to make the crisscross pattern.
  5. Bake for 12 minutes, remove and let cool for 1-2 minutes on the sheet.
  6. Make the filling by adding the butter and peanut butter to a mixing bowl and beat with a electric mixer until smooth, slowly add in the powdered sugar and beat until smooth. Mix in the milk 1 tablespoon at a time to achieve the desired consistency.
  7. Spread a tablespoon of filling on the bottom side of a cookie, top with another cookie, bottom side on the filling. Repeat for the remaining cookies, serve.

  1. Combine the first 8 ingredients in a large bowl. Stir in 2 tablespoons of the oil, add chicken. Cover and chill at least 4 hours and up to 6 hours.
  2. Stir pineapple, cucumber, chili or jalapeno, cilantro, and 2 tablespoons of lime juice in a small bowl to blend, season relish to taste with salt and more lime juice if desired. Set aside.
  3. Arrange a rack 4" from heat; preheat broiler. Line a large rimmed baking sheet with foil and brush with 1 tablespoon of the oil. Remove chicken from marinade and arrange in a single layer, spacing apart, on prepared baking sheet. Drizzle with remaining 1 tablespoon of oil and season with salt to your liking. Broil until browned and cooked through, about 10 minutes.
  4. Transfer chicken to a platter and serve with reserved relish.
Recipe Notes

The chicken tenders (also called fillets) would cost about 36 Baht/500 grams. For 4 servings, this is about 27 cents per serving.

  1. This is an 8 ounce package of Cool Whip, that is sold frozen in the US, I cannot recall ever seeing that here, but again I was never looking for it. I have a shortcut listed to make Homemade Cool Whip.
For the Crust
  1. Preheat your oven to 180 C.
  2. Crush the cookies until they are fine crumbs. Pour the melted butter over the top and mix with a fork to combine. Press into a pie pan and bake until set, 5 to 7 minutes. Remove from the oven and allow to cool completely.
For the Filling
  1. Beat the peanut butter with the cream cheese until smooth. Add the powdered sugar and beat until smooth. Add in the thawed Cool Whip and beat until smooth.
  2. Pour the filling into the crust, evening out the top with a knife or spatula. Chill for at least an hour before serving.
Recipe Notes

The cream cheese would cost about 120 Baht/250 grams. The peanut butter will cost about 120 Baht, depends on the brand and quantity you purchase at one time. For 8 servings, this is about 88 cents per serving. For a very sweet dish, very good.

  1. Add the butter, sugars, milk, cocoa, and salt to a large sauce pan or pot.
  2. Bring to a rolling boil and hold for 1 minute. Remove from heat.
  3. Add peanut butter and stir until melted, then mix in the vanilla extract.
  4. Now mix in 2 1/2 cups of oats until completely coated, if it looks wet enough, add 1/4 cup at a time from the remaining 1/2 cup and mix in until coated.
  5. Drop the cookies by tablespoons onto wax paper or foil and let cool until set.

  1. In a small bowl whisk the coconut milk, fish sauce, brown sugar, and 1 tablespoon curry paste until thoroughly mixed. If you would like more heat and flavor, add additional curry paste. Place the chicken strips in a medium bowl and cover with half of the coconut milk mixture (about 1 cup). Toss to coat, and then cover the bowl tightly with plastic wrap. Marinate, refrigerated, for 1 hour to overnight.
  2. Soak the bamboo skewers in water for at least 30 minutes.
  3. Place the remaining coconut milk mixture in a small saucepan with the peanut butter and whisk to combine. Bring to a simmer over medium heat, and then reduce the heat to low and gently simmer for 3 minutes, whisking often. Cool, and then pour into a serving bowl.
  4. In a medium bowl whisk the vinegar, sugar, and salt until the sugar dissolves. Add the cucumber, shallot, and jalapeño and toss well to coat. Let the salad sit at room temperature for at least 15 minutes before serving.
  5. Pat the excess marinade off the chicken strips with a paper towel. Brush the chicken strips on both sides with oil, and then skewer the strips lengthwise, threading in and out on the skewers.
  6. Prepare your grill for direct cooking over medium heat (350° to 450°F).
  7. Grill the chicken over direct medium heat, with the lid closed, until fully cooked in the center, 8 to 12 minutes, turning once. Remove from the grill, top the salad with the peanuts and cilantro, and serve immediately with the peanut sauce.
Recipe Notes

One kilo of chicken breasts will run about 85 Baht, for 6 servings, this meal is well under $1 per person.

  2. In a medium bowl, stir peanut butter and sugar together until smooth. Mix in the eggs, one at a time, then stir in the baking soda and vanilla. Roll dough into 1 inch balls and place them 2 inches apart onto the prepared cookie sheets. Press a criss-cross into the top using the back of a fork.
  3. Bake for 10-20 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes as they will be quite mushy at this point.
  4. Then move to a a wire rack to cool completely.
