  1. Heat a large pot of salted water to a boil. Once boiling, add the pasta. The type of pasta is your choice, long like spaghetti, or shorter types.
  2. While the pasta is cooking, heat a large non stick pan with 2 tablespoons of the butter, when melted and hot, add the smashed garlic. Saute until garlic is softened, smash the garlic as it cooks as well.
  3. Add the cherry tomatoes into the pan, season with a pinch of salt. Saute to soften the tomatoes.
  4. When the pasta is almost tender, take a cup of pasta water and add to the pan along with the remaining butter. Stir to melt the butter into the water and mixed into the garlic and tomatoes, crushing some of the tomatoes as you stir. This will make a silky butter sauce.
  5. Transfer the pasta to the pan using tongs or a pasta fork, or just a large slotted spoon.
  6. Mix the pasta with the sauce, season with salt and red pepper flakes as desired. Mix in some Parmesan cheese to your liking.
  7. Optionally, you can add a handful or two of bread crumbs to the pasta and mix that in.
  8. Serve with additional Parmesan cheese for garnish if desired.

For the Meats - Pick One
  1. Think simple items that are cooked or can be cooked up quick. Chicken Hearts, Chicken Livers, Chicken Gizzards, Sausage, leftover roast chicken, leftover beef pot roast, leftover pork loin.
  2. Cook fresh meats in a non stick skillet with a splash of olive oil along with a diced onion and several cloves of mined garlic and mushrooms if using those. Drain and set aside.
  3. For leftover meats, cube or shred, your preference. Saute a diced onion and several cloves of garlic in a non stick pan with a splash of olive oil. When the onion is translucent, add mushroom if using, then add the cubed or shredded leftover meat and saute until heated through. Drain and set aside.
  4. For sausage, bulk or sliced would work well with a milk gravy.
For the Gravy - Pick One
  1. Gravy can be from a homemade mix, from a gravy packet, or from the drippings in the pan when using fresh meats. I use packets or from a homemade mix. Your choice.
  2. Chicken giblets and leftovers obviously pair up with chicken gravy. Beef with beef gravy, and pork with pork or chicken gravy. Sausage would pair nicely with a milk gravy.
  3. For 2-3 servings, go with 2 cups of gravy, either 2 packets, 2 cups worth from a homemade mix, or you can make in the pan with the drippings.
  4. Once the gravy is made, add the cooked or heated up meat of choice.
For the Seasoning
  1. After the meat of choice is added to the gravy and mixed, taste and add salt and pepper as desired. For the chicken giblets, sage and celery seed works very well, for two cups of gravy I used 1/2 teaspoon of sage and 1/4 teaspoon of celery seed.
  2. White pepper can be used in place of black pepper. Any herbs of choice can be used, like rosemary, thyme, parsley, coriander. Totally up to your preference.
For Serving - Pick One
  1. Rice, small amount for a side dish or a large amount for a main dish.
  2. Pasta, can be spaghetti, egg noodles, fettuccine, macaroni, small shells, spirals, totally your preference.
  3. Potatoes, mashed would be my first choice, boiled and fried potatoes also work.
  4. Biscuits, think milk gravy with sausage. And additional option for this would be a fried egg or two on top.

  1. Cook the pasta in a pot of salted water until just tender, drain well and place in a large serving bowl.
  2. Before the pasta is done, heat a non stick pan with the olive oil. When the oil is hot, add and cook the garlic until fragrant, about 30 seconds, add the red pepper flakes and salt to desired preference then add the breadcrumbs and mix well ensuring the breadcrumbs are saturated with the oil, if they look a bit dry, add a tablespoon of butter at a time and mix in to get the desired consistency.
  3. Pour the breadcrumb mixture into the pasta and toss to mix together.
  4. Serve with Parmesan cheese available for topping. A green salad as a side would make this a light meal.

  1. Heat a pot of salted water and cook the pasta until just tender, drain.
  2. Heat a large non stick pan and melt the butter, then add the garlic and cook for 1-2 minutes until fragrant, add the shrimp and cook for 4-5 minutes, turning often, until pink.
  3. Remove shrimp and using the same pan, add the flour. whisk and cook for 1 minute. Whisk in the cream and milk. Add the shrimp back to the pan, add the basil, pinch of salt, pinch of red pepper flakes, and the black pepper. and stir to mix together.
  4. Add the pasta, mix to combine, serve.

  1. Preheat your oven to 180 C. Grease a 7x11­ baking dish with butter. Place the chopped chicken into the dish and season with salt, pepper and garlic powder, mix.
  2. Pour the pasta sauce over the top and stir to mix. Sprinkle the two cheeses over the top of the chicken and sauce.
  3. In a small bowl, combine the panko, herbs, and olive oil. Spread the seasoned panko evenly over the top of the cheese layer.
  4. Cover with foil and bake for 30 minutes. Remove foil and continue to bake for an additional 15 minutes, until the chicken has cooked through and the casserole has begun to brown and is bubbling. Serve over spaghetti or pasta of your choice.

The chicken will run about 73 Baht/kilo. Figure about 75 Baht for the Parmesan, and 142 Baht/200 grams of Mozzarella. For 6 servings, this is about $1.42 per serving.

  1. Cook pasta in a pot of lightly salted boiling water until just tender. Drain well and mix in the garlic, set aside.
  2. Preheat your oven to 180 C.
  3. In a large skillet, heat a splash of olive oil and add the bell pepper, onion, and celery and cook for 3-5 minutes to soften them. Then mix in the paprika, cayenne pepper, salt and pepper to taste.
  4. Add the chicken to the skillet and mix occasionally to just cook the chicken through, takes just a few minutes. Mix in the flour and cook for another minute or two.
  5. Add the stock to the skillet and the Gorgonzola cheese and mix it in and let the cheese melt. Remove from heat and mix the chicken and vegetable mixture into the pasta.
  6. Pour the pasta mixture into a lightly oiled 9x13 baking dish, sprinkle the Havarti cheese over the top and bake for 30 minutes or until the cheese is melted and just starting to brown.
Recipe Notes

Three chicken breasts might cost 60 Baht. The Havarti (or Swiss) cheese will be about 180 Baht, and the Gorgonzola (or Bleu) will cost about 100 Baht. For 8 servings, this is about $1.25 per serving.

  1. Cook your pasta, 250 grams, in a pot of boiling salted water until tender, then cook 2 more minutes, then drain, rinse under colder water to stop the cooking process, drain well, and put in a large bowl.
  2. Add additional items to the pasta as you like, such as chopped hard boiled eggs, spring onion, onion, radish, bell pepper, cubed cheese, etc.
  3. Mix the dressing of your choice in a small bowl (or a blender for the Pesto Dressing), pour 3/4 of the dressing over the pasta and toss to coat evenly, if needed, add the remaining dressing. Chill for at least 2 hours and serve as a side dish with any meal.

  1. Heat your deep fryer.
  2. Place some flour on a plate or shallow dish and season with salt and pepper to your liking, mix and set aside. In a shallow bowl add the egg and 2 tablespoons of water and beat slightly, place that next to the plate of seasoned flour. In another plate, add equal amounts of flour and Parmesan cheese and mix together, place that next to the egg wash plate.
  3. When the oil in the deep fryer is hot, take a slice of eggplant and coat with the seasoned flour, then dip into the egg wash to coat, then into the flour and cheese mixture, then into the deep deep fryer. Repeat the steps for the all the slices but do not overload the deep fryer. Cook until golden brown then place on a plate lined with paper towels to drain.
  4. Serve on pasta with tomato sauce as a light main dish or simply with a bowl of tomato sauce for dipping as a side or appetizer.

  2. In large saucepan over medium low heat melt the butter. Whisk in flour and cook until smooth and lightly bubbling. Slowly whisk in the milk and Dijon mustard and continue cooking over low heat until it is thicken, stirring often, about 5 minutes. Whisk in the cream cheese and continue cooking over low heat until melted, then slowly add both Cheddars until melted, whisking frequently. Whisk in Sriracha sauce. Mix in the pasta and serve.
Recipe Notes

Cream cheese will be about 30 Baht for 1/4 of a standard block. Cheddar will cost about 180 Baht for a block of 250 grams, figure about 2-2 1/4 cups of shredded, White Cheddar will cost about 90 Baht for 1/2 block shredded (about 1 cup). For 6 servings, this is about $1.47 per serving, overall a fair price.

Variants: Add cooked chopped bacon or cooked and cubed ham, or even add cooked mushrooms.

  1. Brown the ground beef in a large skillet, then drain off the fat and add the beef to your slow cooker, then to the slow cooker add the water, stock, taco seasoning, garlic, onion, and tomatoes, stir then cook on Low setting for 4-5 hours.
  2. During the last 30 minutes of cooking, add your pasta to a pot of boiling water and cook until just tender and drain well. Stir the Cream cheese into the slow cooker until well blended. Then add the Cheddar cheese and pasta and mix that in, leave uncovered and cook on High setting for another 10-15 minutes to melt the Cheddar and heat everything through.
  3. Sprinkle the top with cilantro and serve.
Recipe Notes

Figure about 100 Baht/500 grams of beef, 180 Baht for the Cheddar (1 block of 250 grams), and 60 Baht for the 1/2 block of Cream cheese. For 6 servings this is about $1.67 per serving.
