  1. Main ingredients prepped, purple onion, mushrooms (I used canned as I needed to rotate stock), and the chicken liver.
  2. In a large skillet, heat 2 tablespoons olive oil, add the shallot and a pinch of salt and cook over moderately high heat until the shallot is softened and golden, about 2 minutes. Add the chopped mushrooms and season with salt and pepper and cook until the mushrooms are softened and most of their liquid has evaporated, about 10-12 minutes. Stir in the thyme. Pour the mushrooms into a bowl and set aside.
  3. In the same skillet, heat the remaining 2 tablespoons of olive oil. Season the chicken livers with salt and pepper and coat them in flour, shaking off any excess. Fry liver over moderately high heat, turning once, until browned and crisp, about 3 minutes per side.
  4. Return the mushrooms to the skillet and pour in the wine (or chicken stock). Cook for 1 minute, scraping up any browned bits from the bottom of the pan. Add 3/4 cup of the cream to the skillet at a time, allowing the sauce to thicken between additions. Simmer until the sauce coats the back of a spoon, about 3 minutes.
  5. Add the pasta and toss to coat. Transfer to a large bowl, garnish with the parsley.
  6. Serve.
Recipe Notes

Chicken liver will cost about 33 Baht/250 grams, with the pasta and all other ingredients, well under $1 per serving for 4 servings. Very reasonable cost for a good meal.

  1. In a pot, brown your ground meat in a splash of olive oil, then add the rest of the ingredients and simmer until the vegetables are tender. For a thinner chowder, add a bit of beef stock. Serve.
Recipe Notes

500 grams of ground beef would be about 125 Baht, pork would be about 60 Baht, chicken will be less. For 6 servings (for beef) this is about 62 cents per serving, less for pork, and even less for chicken.

This is a use what you have recipe, and amounts are up to you and can be tailored to what you like, not what is in the recipe list.

Variants would include: replace the yard beans with cooked kidney beans or even butter beans.

  1. Preheat your oven to 190 C.
  2. In a small saucepan, melt butter over medium low heat. Whisk in flour and salt to make a paste. Gradually whisk in milk. Stirring constantly, cook until sauce is thick enough to coat the back of a spoon.
  3. Select a large baking dish or pan to hold all the fillets in a single layer, lightly grease with butter.
  4. Season fillets with salt, pepper, and paprika to your liking and arrange in the baking dish. Cover fish with cooked shrimp, pour sauce over shrimp, sprinkle with paprika then cover with the cheese, sprinkle with parsley if desired.
  5. Bake uncovered for 20-25 minutes or until fish flakes easily. Remove from oven and let rest 5-10 minutes, serve. A nice tomato salad and boiled potatoes with butter would be excellent side dishes.
Recipe Notes

Pangasius will cost 120 Baht/kilo. Shrimp will run about 100 Baht/500 grams from a grocery store, for those along the coast, you can normally buy local ocean cast net caught shrimp for a bit less. Everything else is minimal. For 5 servings, this comes out to about $1.30 per serving, for 6 servings, this is about $1.08 per serving. Excellent value for a nutritional meal.

For variants, added cooked crab meat or imitation crab that is cubed, cooked oyster meat, lemon slices, and other seasonings of your choice.

  1. Wash chicken inside and out, remove giblets if in the cavity, if a local market bought chicken, remove the neck, feet, and trim the fat from the gut opening. Place chicken in slow cooker breast side down, add the garlic and onion in the gaps on the sides of the chicken.
  2. Pour beer over the chicken, sprinkle on the spices.
  3. Cover and cook on Low setting 7-8 hours or High setting for 3-4 hours.
  4. When chicken is cooked through (does not hurt to use a meat thermometer at this point), remove the whole chicken carefully from the pot as it may fall apart. If using chicken pieces, use a large slotted spatula.
  5. Make a gravy from the juices from the pot, enjoy. Serve with boiled or mashed potatoes or rice and a vegetable for a complete meal.

A whole chicken will cost about 150 to 200 Baht. This is a $1 meal for 6 people, less for 8 people.

Keep in mind, the longer you refrigerate this, up to 24 hours before cooking, the flavors will blend together better. Sage is the key ingredient in breakfast sausage. Minced pork will run about 100 Baht/kilo, making this about 50 cents per person for 6 people, add some fresh homemade hash browns and a couple of eggs, you have a nice breakfast for under $1 per person.

  1. Bring a large pot of salted water to a boil. Meanwhile, in a large skillet, cook the bacon over medium heat until golden, about 8 minutes. Push the bacon to the side of the pan and add the onion; season with salt and pepper. Cook until the onion is softened, 6 to 8 minutes. Add the diced tomatoes, season with salt and pepper and simmer, stirring occasionally, until thickened, 15 to 18 minutes. Stir in the parsley.
  2. Meanwhile, add the green beans to the boiling water and cook until crisp-tender, about 3 minutes. Using a slotted spoon, transfer the beans to a colander; season with salt and pepper and cover to keep warm.
  3. Return the water to a boil, add the noodles and cook until tender, about 9 minutes. Drain, reserving 1 cup of the cooking water. Toss the noodles with the sauce, adding the pasta water if needed to thin the sauce; season. Divide among 4 plates; serve with the green beans.

4 slices of bacon is minimal, about 20 Baht for a bundle of yard beans, and about 55 Baht for the can of tomatoes. Easily under $1.00 per meal per person.

  1. Preheat your oven to 230 C. Line a baking sheet with foil.
  2. Mix all ingredients in a large bowl. Form mixture into balls, size is up to you, and place each meatball on the baking sheet.
  3. Brush each meatball with ketchup OR chili garlic sauce. Bake for 15 minutes.
  4. Remove from the oven, top each meatball with more cheese and return to the oven for another 5 minutes. Enjoy.
Recipe Notes

The bulk of the cost is the minced chicken and the Parmesan cheese, you can make a little amount or a large amount, all up to what your intention is. Here is some suggestions:

  1. Serve as a snack during a sports game on TV, Sriracha chili garlic sauce, or a sweet and sour sauce would be great for dipping.
  2. Bake but do not add cheese in the last step, just bake for a few more minutes, add to an Alfredo sauce and spoon over pasta of your choice.
  3. Make a large batch and serve with buttered egg noodles and a vegetable.

Overall, the ingredients are minimal so easily less than $1 per serving.

  2. Use 2 tablespoons for every 1 dry packet needed.
  3. To make salad dressing, together 2 tablespoons of dry mix with 2/3 cup olive oil, 1/4 cup white vinegar, and 2 tablespoons water.

These are not going to win a blue ribbon prize in the culinary world, but I think they taste good. All spices are dried. To make this Italian Sausage, add the fennel seeds. NOTE: If you will be grinding the meat yourself (recommended) then prepare the meat by cutting into chunks that will fit the hopper of your grinder, remove an silver tendon from pork, then mix the spices into this, then grind on the medium size die, after it is ground then grind again on the smaller die.
  2. With clean hands, mix all this together well, form into patties sized to your liking. I keep a few to the side for dinner the day I make this, then freeze the rest with foil between the layers.
