  1. Crack the eggs into a small, season with salt and black pepper as desired, whisk and set aside.
  2. In a non stick pan, heat the oil, then add the spinach and cook until wilted, mixing often. about 1 minutes.
  3. Pour in the whisked eggs and stir to mix in, cook for a bout 1 minute, stir occasionally until the eggs are just set.
  4. Stir in the cheese, and when mixed, transfer to a plate and sprinkle with red pepper flakes as desired.
  5. Enjoy with some toast on the side if desired.

  1. Prep the mushrooms by cutting off the root ends, give a quick rinse and squeeze out the excess water. Just use your fingers and pull the mushrooms into 2 to 3 pieces, and for any large pieces, go ahead and cut those in half.
  2. Cook the pasta in a pot of salted boiling water. Cook until just tender. Drain.
  3. While the pasta is cooking, melt the butter in a large non stick pan on medium heat. When the butter is melted, add the mushrooms. Cook and stir often until the mushrooms are good and wilted and starting to brown.
  4. Mix in the parsley and season to taste with salt and pepper. Cook to wilt the parsley, about 1 minute.
  5. Stir in the cream and bring to a boil, stirring until the sauce thickens.
  6. Pour the mushroom sauce into the pasta, and toss to mix together.
  7. Add the spring onion and cheese and mix together.
  8. Serve as a side dish with any meal. Enjoy.

  1. Melt the butter in a large non stick pan, about 2-4 tablespoons would be nice. When melted, add the sliced mushrooms and saute them until nicely browned.
  2. While the mushrooms are cooking, cook the pasta in a pot of boiling salted water. Cook until the pasta is just tender, then drain.
  3. When the mushrooms are browned, add the pasta and mix that in. Then add a big generous amount of Parmesan and mix that in.
  4. Plate, top with additional Parmesan as desired and some fresh chopped chives for garnish. Enjoy.

  1. First, prepare the beans, you can certainly use canned beans or make from dry. I will use my pressure cooker for these.
  2. Place the fresh thyme, rosemary, and bay leaf in a a herb bag, or just use some cheesecloth tied with some kitchen twine. Set aside.
  3. In a thick walled pot, heat the oil on medium heat. When hot, add the onion, pancetta, and garlic. Saute until the onion is softened, then add the broth, beans, and herb bag. Cover and bring to a boil then reduce to a simmer. Cook for about 10 minutes, stirring occasionally, then remove and discard the herb bag.
  4. Remove 1 cup of beans and let cool for about 5 minutes, then mash with a potato masher or place in a blender and puree them. Set aside. These are used to thicken the soup.
  5. Add the dry pasta to the soup and bring to a boil and place the lid on, cook for about 10 minutes or until the pasta is tender, then reduce heat to a simmer.
  6. Add the mashed beans back to the pot and stir in, season the soup with black pepper to taste, and red pepper flakes if desired. Simmer for about 5 minutes.
  7. Serve with grated Parmesan for individuals to sprinkle on their own bowls. Enjoy.

  1. For the beans, feel free to substitute Great Northern if that is all you have available. How you cook the beans is your preference, use canned or cook using dry beans. I will prepare these from dry using a my pressure cooker. You will need 2 cups cooked beans.
  2. Once you have the cooked beans, heat a pot with the oil and when hot, saute the garlic, onion, carrot, parsley, basil, and oregano until the onions are softened and the carrot is near tender.
  3. Add the tomatoes and 1/4 cup of the retained juice and mix in, season with salt and pepper as desired. Cover and simmer for 10 minutes, stirring often.
  4. Then add the cooked beans, mix in, cover and simmer for 20 minutes, Stirring often.
  5. While that pot is simmering, heat another pot of salted water, when boiling, add the pasta and cook until tender. Drain pasta well and toss with the butter and cheese.
  6. Add the pasta to the pot with the beans and mix in.
  7. Serve with additional Parmesan cheese for topping if desired.

  1. Preheat your oven to 220 C (425 F). Grease a rimmed baking sheet or shallow baking dish with 1 tablespoon of the oil.
  2. Lay the chicken in the center of the sheet and place the broccoli around the chicken. Drizzle (or use an oil mister) the remaining 1 tablespoon of oil. Season everything with salt, pepper, and garlic powder to taste or as desired.
  3. Bake for 30 minutes or until the chicken is cooked through and juices are clear. Use a thermometer for a target temp of 71 C (160 F) or sacrifice one piece and cut in half to check.
  4. While the chicken is cooking, mix together the minced garlic, Parmesan, and parsley in a small bowl.
  5. When the chicken is done, remove from the oven, top each piece of chicken with the mixture parsley mixture, then broil (top coil for counter top ovens) for 3 minutes until the cheese is melted and the broccoli nicely browned.
  6. Remove from oven, tent with foil for 5 minutes.
  7. Serve.

  2. Add the anchovy fillet(s) and mash that up, then add the red pepper, stock, cream, spaghetti, and salt as desired and bring to a boil. Reduce to a simmer and cook until the spaghetti is tender and a sauce forms, about 10-15 minutes.
  3. Stir in the chives and cheese, season with salt as desired.
  4. Serve with additional Parmesan cheese on the side as a topping.

  1. Heat a large pot of salted water to a boil. Once boiling, add the pasta. The type of pasta is your choice, long like spaghetti, or shorter types.
  2. While the pasta is cooking, heat a large non stick pan with 2 tablespoons of the butter, when melted and hot, add the smashed garlic. Saute until garlic is softened, smash the garlic as it cooks as well.
  3. Add the cherry tomatoes into the pan, season with a pinch of salt. Saute to soften the tomatoes.
  4. When the pasta is almost tender, take a cup of pasta water and add to the pan along with the remaining butter. Stir to melt the butter into the water and mixed into the garlic and tomatoes, crushing some of the tomatoes as you stir. This will make a silky butter sauce.
  5. Transfer the pasta to the pan using tongs or a pasta fork, or just a large slotted spoon.
  6. Mix the pasta with the sauce, season with salt and red pepper flakes as desired. Mix in some Parmesan cheese to your liking.
  7. Optionally, you can add a handful or two of bread crumbs to the pasta and mix that in.
  8. Serve with additional Parmesan cheese for garnish if desired.

  1. Preheat your oven to 200 C (400 F). Grease a 9x13 baking dish with butter. Add the oysters to the dish and spread out to an even layer. This is the container that oyster meat comes in at Tesco, I will verify the amount of containers needed when I make this.
  2. In a mixing bowl, add the olive oil, garlic, parsley, and breadcrumbs, mix together.
  3. Spread the breadcrumb mixture evenly over the oysters.
  4. Top with the cheese then the spring onion.
  5. Bake for 25-30 minutes or until the topping browned.
  6. Serve with fresh corn on the cob and a seasoned rice dish for a perfect meal.

I will price this when I get the small containers of oyster meat from Tesco or even from the local fishermen. I will say Fair cost for now.

  1. Preheat your oven to 180 C (350 F) and grease with butter a 7x11 baking dish.
  2. In a large mixing bowl, mix together the rice, butter, spinach, Cheddar cheese, 3/4 cup of Parmesan cheese, spring onion, garlic, milk, and eggs, season with salt and pepper as desired.
  3. Pour into the baking dish and sprinkle with the remaining Parmesan cheese.
  4. Bake for 25 minutes, uncovered, then optionally top with Mozzarella cheese and bake for 5 more minutes.
  5. Let casserole rest for 5 minutes (there is a lot of hot cheese in there), then serve as a light main dish or as a side dish with say, chicken or fish. Enjoy.
