Ingredients

Instructions
  1. In a large bowl, add the warm water and sugar and stir to dissolve the sugar, then sprinkle in the yeast and stir in until that is dissolved. Let this stand for 5 minutes.
  2. Mix together the flour and salt then mix in the oil. When 5 minutes have passed, add the flour mixture to the yeast mixture and stir to form a soft dough. Turn out dough onto a floured work surface and kneed for about 5 minutes until dough is soft and elastic.
  3. Shape dough into a ball and place on a lightly oiled baking sheet, flatten lightly. Cover with plastic wrap and let rise in a warm place for 20 minutes.
  4. While the dough is rising, cook the ground beef in a non stick skillet and break it up as it cooks, season with salt pepper as desired. Drain then add the pasta sauce to the ground beef and mix together.
  5. Heat your oven to 250 C. Divide the dough into 4 equal parts, pat each one into about a 7 inch circle. Should be able to put 2 on each baking sheet.
  6. Top each pizza with 1/4 of the meat sauce, then 1/4 of the Mozzarella. Bake for about 18 to 20 minutes or until the cheese is melted and the crust is golden brown. Remove from oven, sprinkle with Parmesan cheese.
  7. Serve.
Recipe Notes

Figure about 170 Baht for the Mozzarella cheese, the beef about 50 Baht for 250 grams. For 6 servings, this is about $1.08 per serving, depending on the toppings you wish to add, this will increase the cost per serving.

Variants: 1. Add toppings of your choice, such as sliced bell pepper, onion, cooked bacon, cooked Italian sausage, chopped spring onion, slice green olives, pepperoni, etc. 2. Change the Mozzarella to a different cheese, like a 4 blend cheese.

This sounds like an excellent sauce. There is many recipes on the internet for this and nearly all claim to be the best. The sauce comes highly recommended by a good friend. This recipe is the first recipe he sent me, I will try this one and post results. If you double the batch, don't double the salt, use just 1 1/2 tablespoons.

Ingredients
Servings: cups sauce
Instructions
  1. There is 3 ways to mix this.
Immersion Blender
  1. Place everything in a quart-sized jar. Submerge an immersion blender in the mixture to the bottom of the jar. Mix with the blender resting on the bottom of the jar until the ingredients thicken, 1 to 2 minutes. Angle the mixer to pull ingredients from the sides of the jar and lift it toward the top to better combine. Continue blending until the mixture reaches a texture similar to mayonnaise.
Electric Mixer
  1. Mix the garlic, salt, and lemon juice in a mixer to a creamy mix, 20-30 seconds, pour into a mixing bowl. Then use an electric mixer and slowly add in the oil and olive oil in a very narrow stream until the sauce thickens, 2 to 4 minutes.
Blender
  1. Mix the garlic, salt, and lemon juice in a blender to a creamy mix, 20-30 seconds, then slowly add in the oil and olive oil in a very narrow stream until the sauce thickens, 2 to 4 minutes.
  2. Serve with grilled meats as a dipping sauce, in a chicken salad sandwich, you get the idea.

Servings: servings
Instructions
  1. Cut up radish julienne style, long narrow strips, place in a sieve with a a good amount of salt and let it drain.
  2. Cut up mango and carrot julienne style as well and put these in a large bowl. Cut the tomatoes into fine strips and chop the shallots, place these in the bowl with the mango and carrot.
  3. Now to make the sauce. Add all the sauce ingredients to a bowl (or even a mortar) except the oil. Stir until the sugar is dissolved. Then taste. it should not be too salty or sour or sweet but in harmony. Adjust the lime juice, soy sauce or sugar as needed. Add the grated ginger and garlic and stir or pound lightly (careful not to splash).
  4. Now the radish should be ready, it should not taste salty but mild, place that into the bowl with the mango and carrot and mix together, then add the sauce and mix that in.
  5. Arrange the salad on plates, 2 main dishes or 4 starters. Top with the cashews or peanuts and cilantro on top of that.
  6. Hard boiled eggs, quartered lengthwise is good on the side for a main dish, and grilled prawn would be perfect.

Instructions
  1. Combine ingredients to form a dough. Cover dough with plastic wrap or foil and allow to rest for 30 minutes.
  2. Divide into 12 portions and roll each into a ball. Press into a thin flat circle using a tortilla press or roll out with a rolling pin until approximately 1/8 inch thick. (This step does not sound right and what I need to verify when I make these.)
  3. Lightly brush a heated heavy cast iron pan with oil and wipe off any excess oil, then cook tortillas until crisp on both sides, turning once. Stack between paper napkins or towels and keep warm until all are done.
  4. Stuff with your favorite fillings and serve right away or wrap tightly with wax or parchment paper between layers and freeze for up to 6 months.

Ingredients
Servings:
Instructions
  1. Peel and cut onions into 3/8 to 1/2 inch slices, then separate the rings. Slice the mozzarella into 3/8 to 1/2 inch strips, and place a smaller onion ring in the center of a larger ring. Fill the gap between the rings with strips of mozzarella. Repeat with remaining onion rings and freeze them for 1 hour.
  2. Place the flour, eggs, and bread crumbs into three separate bowls. Dip each prepared ring into the flour, then the egg, then the breadcrumbs, then back into the egg, and one last time into the bread crumbs. Repeat with the remaining onion rings.
  3. Heat the oil in a pot over high heat. Fry the rings in batches until golden brown, being careful not to fry them for too long as the cheese may ooze out completely. Drain on paper towels and serve with marinara sauce or Ranch dressing. Enjoy!
Recipe Notes

The cheese would cost about 140 Baht/200 grams, slice it thin and you could probably double the recipe. If you use the entire block of cheese, this would cost about $1.03 per serving.

Shortcuts: Marinara Sauce (tomato sauce), Ranch Dressing, Breadcrumbs.

Pierogi

Instructions
  1. Mix the flour with the salt in a deep bowl. Add the egg, oil, and water to make a medium soft dough. Knead on a floured board until the dough is smooth. Caution: too much kneading will toughen the dough. Divide the dough into 2 parts. Cover and let stand for at least 10 minutes.
  2. Combine the cottage cheese with the egg and season to taste with the salt.
  3. Roll the dough quite thin on a floured board. Cut rounds with a large biscuit cutter, or as most old-world grandmothers did, with the open end of a drinking glass. Put the round in the palm of your hand. Place a spoonful of filling in it, fold over to form a half circle and press the edges together with the fingers. The edges should be free of filling. Be sure the edges are sealed well to prevent the filling from running out.
  4. Place the pierogi on a floured board or tea towel and then cover with another tea towel to prevent them from drying out.
  5. Once you have all the pierogies made, drop a few pierogies into a large quantity of rapidly boiling salted water. Do not attempt to cook too many at a time. Stir gently with a wooden spoon to separate them and to prevent them from sticking to the bottom of the pot. When they float remove them with a slotted spoon and place in a colander and drain thoroughly.
  6. After all the pierogies are boiled and drained, pan fry in butter or bacon fat until golden brown. This dish can be served as a stand alone meal or paired up with kielbasa sausage.
Recipe Notes

If making these with store bought Cottage Cheese, the price per person would be high. If making this from our Cottage Cheese recipe on this site, use 2 liters of milk to make the cheese, yield should be 2 cups of cheese, cost would be about 120 baht for 2 liters, for 4 people, cost is about 90 cents per meal per person.

The great thing with this recipe, is that is just a base to start from, for fillings you can also use minced meat and onion (beef, pork, chicken), sauerkraut and or mushrooms, mashed potato and Cottage Cheese.

Shortcut: Cottage Cheese.
