  1. Cook the pasta in a pot of boiling, salted water, until tender. Over cooked by a minute or two is preferred. For pasta salads, just tender pasta is not desired, since the pasta is not being cooked further in a sauce, you want well cooked pasta. Drain the pasta and rinse under cold water to stop the cooking process. Place the pasta in a large mixing bowl.
  2. While the pasta is cooking, mix together the vinegar and sugar.
  3. Add the vinegar mixture and Italian seasoning to the pasta and mix well to coat all the pasta and distribute the seasoning. Let the pasta cool.
  4. Once the pasta is cooled, mix in the onion and olives and mix well.
  5. Cover and place in the fridge overnight.
  6. Now the base recipe is ready. This can be served as is, or dressed up as you desire. Add any of the Customize ingredients as you desire to change this salad each time you make it.

The base recipe is low cost, depending on other added items, that will increase the per serving, but certainly not over $1 per serving 🙂

  1. Add the first 5 ingredients to a large mixing bowl. Toss together to coat everything with the oil. Season with salt and pepper as desired. Set aside to let the flavors combine.
  2. While the tomato mixture is set aside, cook the pasta in a pot of salted boiling water until tender. Drain well.
  3. Toss the pasta with the tomato mixture to combine.
  4. Serve as a light dinner with garlic bread if desired.

The cheese would be the only big expense here. About 140 Baht for 200 grams, just going with the 200 instead of 250 grams, for 6 servings, this is about 73 cents per serving.

For the Crust

  1. Preheat your oven to 220 C (425 F). Oil a baking sheet or pizza pan with olive oil.
  2. Make the crust by adding the flour into a large mixing bowl. Add the salt and dried Italian seasoning/herbs of your choice (if using) and yeast, whisk to combine. Make a well in the center of the flour and pour in the water. Use your fingers or a wooden spoon to combine everything together. When it comes together into a cohesive ball, turn it out onto the lightly floured counter along with any extra flour in the bowl that hasn’t yet gotten worked in.
  3. Knead the dough until all the flour is incorporated and the dough is smooth/elastic to the touch, about five minutes. The dough should still feel moist and just slightly tacky. If it’s sticking to your hands and counter top like bubble gum, work in more flour one tablespoon at a time until it’s smooth and silky.
  4. Place the ball of dough in the center of your pizza pan or baking sheet. Use the heels of your hands and working from the middle gently press the dough outward until it’s about 1/4 of an inch thick or less, while rotating the pan. You can also use a rolling pin for this part.
  5. Spread some olive oil on the dough, place in the oven for 5 minutes, then remove.
  6. Now add the cheese evenly over the top, then the ham, then crack the eggs onto the pizza, season with black pepper.
  7. Into the oven again and bake this time until the crust is golden brown and the eggs set but yolks still a little soft, about 15 minutes. (Keep an eye on it, no one likes a burn breakfast pizza 😉 and all ovens are different.)
  8. Remove from the oven, sprinkle with fresh chopped parsley, slice, and serve.

Variants: 1. Add cooked and chopped bacon. 2. Add chopped Canadian Bacon. 3. Use any cheese you prefer. 4. Add diced bell pepper (think breakfast omelet pizza).

  1. Preheat your oven to 180 C (350 F) and grease with butter a 7x11 baking dish.
  2. In a large mixing bowl, mix together the rice, butter, spinach, Cheddar cheese, 3/4 cup of Parmesan cheese, spring onion, garlic, milk, and eggs, season with salt and pepper as desired.
  3. Pour into the baking dish and sprinkle with the remaining Parmesan cheese.
  4. Bake for 25 minutes, uncovered, then optionally top with Mozzarella cheese and bake for 5 more minutes.
  5. Let casserole rest for 5 minutes (there is a lot of hot cheese in there), then serve as a light main dish or as a side dish with say, chicken or fish. Enjoy.

Figure 180 Baht for the Cheddar, 90 Baht for the Parmesan, and 90 Baht for the Mozzarella. For 6 servings, this is about $1.88 per serving.

  1. Preheat your oven to 180 C (350 F), get out a 9x13 baking dish. Spread half of the sliced mushrooms in the bottom of the dish.
  2. Place the eggs and breadcrumbs in two separate bowls, you are making an assembly line for the chicken.
  3. Heat a large non stick and 2 tablespoons of the butter. Now place a chicken breast in the egg, then into the breadcrumbs patting them on as well, add the chicken to the hot pan and cook to golden brown on both sides, about 5 minutes, not looking to cook the chicken through, just good and golden brown. Work in batches until all the chicken is browned, using additional butter as needed.
  4. As the chicken is browned, place on top of the mushrooms in the baking dish. Add the remaining mushrooms on top of the chicken, then top with the cheese.
  5. Pour the broth into the pan. Bake for 30 minutes or until the cheese is melted and starting to brown up and the chicken cooked through.
  6. Remove from the oven and let rest for about 5 minutes, serve and enjoy.
Recipe Notes

One kilo of chicken breasts will cost about 60 Baht. The cheese will cost about 180 Baht for 250 grams. For 4 servings, this is about $1.90 per serving.

  1. In a small bowl, mix together the butter and Parmesan cheese.
  2. Spread the butter mixture on all slices of bread, place 4 slices butter side down on wax paper, the other 4 slices, set aside butter side up.
  3. Top the 4 slices that are butter side down with a slice of Provolone and Mozzarella, top that with the other 4 slices of bread and place those butter side up.
  4. Heat a griddle or non stick pan, then working in batches, add a sandwich or two and cook until golden brown on the bottom, then flip and cook the other side until golden brown. Cut in half and serve.

  3. Stir in the Mozzarella cheese and sprinkle the Parmesan cheese on the top. Cover for 5 minutes to let the Mozzarella melt in, serve and enjoy.
Cheesy Beef Taco
  1. In a large non stick pan, brown the ground beef and drain off any fat.
  2. Add the remaining items except the cheese and Fritos. Reduce heat to a simmer and stir occasionally until the rice is tender.
  3. Stir in 1 cup of the Cheddar cheese, sprinkle the remaining cheese on the top then the Fritos, Cover and let sit for 5 minutes, serve and enjoy.
Beef Stroganoff
  1. In a large non stick pan, brown the ground beef and drain off any fat.
  2. Add the remaining items. Reduce heat to a simmer and stir occasionally until the egg noodles are tender. Serve and enjoy.
Potato Stroganoff
  1. In a large non stick pan, brown the ground beef and drain off any fat.
  2. Add the remaining items. Reduce heat to a simmer and stir occasionally until the potatoes are tender. Serve and enjoy.

Shortcuts: Italian Seasoning, Sour Cream.

Notes: 1. If using true Thai chili powder, cut the amount back by 1/3 to 1/2 as it is quite hotter than chili powder in the US. 2. The salt and sugar are OPTIONAL! I have made several of these and you can certainly leave out the sugar. Salt is used in the boxed version of this much the way McDonald's uses salt, sugar is used in the box version much the way cereals in the US are made, to get you to not like the meal, but love the meal, and buy more. When I make these, I do not add sugar, but I do add salt, a touch less than what is stated.

  2. Place a tortilla on a parchment paper lined baking sheet, spread the sauce evenly on the tortilla, keeping 1/2 inch from the edge.
  3. Sprinkle with cheese and toppings of your choice.
  4. Bake until the cheese is golden brown and bubbly and the edge of the tortilla is lightly browned, about 10 to 14 minutes.
  5. Remove from the oven and let cool for a few minutes before slicing (last thing you want in your mouth is hot bubbly cheese).
  6. Enjoy.

  1. Preheat your oven to 220 C (425 F).
  2. Heat a pot of salted water to a boil, then add the pasta and cook that until just tender, drain well (let cool for a few minutes before adding to a Pyrex dish) pour into a 9x13 baking dish.
  3. While the water is heating for the pasta, heat a large non stick pan and add the sausage and break it with a spatula as you cook it, add some chopped up pepperoni slice if want and add to the pan as well, as much as you like. When cooked through, do not drain, just pour into the baking dish and mix with the pasta until "all the pasta is coated with the yummy meatiness." (Author's words, very cool!)
  4. Add the pasta sauce and mix together, now add the pizza cheese blend and mix that in. Once mixed, smooth out the top evenly, top with Mozzarella, then a layer of pepperoni slices.
  5. Bake until bubbly, about 25 to 30 minutes. Remove and let rest for a few minutes, you have a bubbly dish of cheese lava, you are just cooling it a bit before serving.
  6. Serve. Garlic bread would be a great side dish.
Recipe Notes

The sausage if you make yourself, about 45 Baht. The cheeses will cost about 175 Baht for the pizza cheese blend, and 140 Baht for the Mozzarella. For 6 servings, this is about $1.77 per serving.

Variants: 1. Easy, anything you like on a pizza. The author, Amy, says diced green bell pepper and sliced mushrooms is a very good addition. 2. To make this leaner, use chicken sausage.

  1. Preheat your oven to broil, if using a counter top oven, heat the top coil. Line a baking sheet with parchment paper. Place the mushroom caps on the paper with the top of the caps upwards.
  2. Mix together in a bowl, the oil, garlic, and Italian seasoning. Brush the mushroom caps with the oil mixture, then turn the caps over so the underside is facing upwards.
  3. Spoon on the pasta sauce, divided among the 4 mushrooms, onto the mushrooms, sprinkle on the cheese also divided between the mushrooms, then top the cheese with some cooked sausage, then some pepperoni slices.
  4. Broil for about 8 minutes or until the cheese is starting to brown.
  5. Serve.

Low cost really but I cannot say for sure until I source the mushrooms. I will say Low cost for now but that may change once I make these.
