  1. Preheat your oven to 180 C. Get out a deep dish Pyrex pie dish or a 7x11 baking dish, I will verify when I make this.
  2. To poach the fish, heat a non stick pan and add the milk, onion, bay leaves, and cloves. Heat to just before a boil, add the fish and simmer until the fish is cooked through and flakes with a fork, about 8 to 10 minutes.
  3. Remove the fish to a plate, strain the milk mixture and pour into a bowl, discard the contents of the strainer.
  4. Flake the fish into large pieces into the baking dish, Add the shrimp and arrange the quartered eggs on the top. Sprinkle the parsley on the top.
  5. To make the sauce, melt half of the butter in a small pan, stir in the flour and cook for 1 minute, stirring, then remove from heat. Stir in the reserved milk to get a smooth sauce. Return the pot to heat and bring to a boil and cook 5 minutes, stirring continuously, until it coats the back of a spoon. Remove from heat, season with salt, pepper, and nutmeg.
  6. Pour the sauce over the fish. Top the pie with mashed potatoes, push the mash right up to the edges to seal, fluff the top with a fork then sprinkle on the cheese.
  7. Bake for 30 minutes then let rest for 5 minutes, serve.
Recipe Notes

Figure about 50 Baht for the whitefish, Pangasius, and about 200 Baht for salmon. For the cheese, figure about 90 Baht. For 4 servings, this is about $2.50 per serving.

  1. Heat a large non stick pan (I use a pot) with a splash of olive oil, and add the onion and garlic, cook until the onion is turning translucent.
  2. then add the beef, breaking it up with a spatula as it cooks. Drain any fat. To the beef, now add the 1 1/2 cups stock, bouillon cube, salt, pepper, basil, and parsley. Simmer for 10 minutes, stirring occasionally.
  3. Add the 1/4 cup cold stock to a measuring cup and stir in the cornstarch. Cold makes it easier to mix without lumps. Pour this into hamburger mixture and simmer for about two minutes, stirring often, until thickened.
  4. Serve over mashed potatoes with your choice of sides and enjoy.
Recipe Notes

Figure about 150 Baht for the ground beef. For 4 servings, this is about $1.10 per serving.

  1. Preheat your oven to 180 C.
  2. In a small bowl, add the milk and bread crumbs and let them soak.
  3. In a large bowl, add the beef, salt, pepper, onion, egg, and bread crumb mixture, mix together with a large spoon or your hands.
  4. Add the meat mixture to a 9 inch pie dish, and pat down evenly. Bake for 30 minutes.
  5. While it is baking, cook your potatoes and prepare your mashed potatoes.
  6. When the meat has baked 30 minutes, remove it from the oven, very carefully pour off the fat from the dish, and wipe the pan side and bottom clean as well.
  7. Now top the meat with the mashed potatoes, spread evenly, sprinkle with cheese then sprinkle with paprika. Place back in the oven for about 15 minutes or until the cheese is melted and the potatoes heated through, serve.

  1. For the noodles, you can do this several ways; 1. Use boil first noodles and cook until just before done and drain and use. 2. Use oven ready noodles but briefly boil them first to just soften them up and drain and use. 3. Make your own egg pasta noodles and precook for 30 seconds in boiling water and drain and use.
  2. Preheat your oven to 190 C. Grease a 9x13 baking dish with butter. Prepare the noodles as directed above.
  3. In a large skillet, heat the butter on medium heat and add the onion and season with salt and pepper to your liking. Cook until soft, 10-15 minutes.
  4. Place 4 noodles in an even layer on the bottom of the baking dish. Layer 1/2 of the onion over the noodles then layer 1/2 of the mashed potatoes over the onion, then 1/2 cup of cheese.
  5. Repeat with another layer of noodles, remaining onion, remaining potatoes, and 1/2 cup of cheese.
  6. Place the last noodles on the top and the remaining cheese.
  7. Bake for 30 minutes or until hot and bubbly. Serve hot.
Recipe Notes

For the Cheddar cheese, figure about 180 Baht. For 6 servings, this is about 89 cents per serving.

Shortcut: Cottage Cheese.

Variants: Add cooked chopped bacon as another layer or add cooked chopped bacon mixed right into the mashed potatoes.

  1. In a large skillet over medium heat, warm the butter and the oil. Add the onions and cook slowly until tender, about 5 minutes. Add the garlic and saute until fragrant. Add the ground beef and crumble as it cooks. Stir in tomato sauce, Worcestershire, red wine, salt and pepper. Bring to a boil and then reduce heat to a low simmer.
  2. Cover with lid and simmer for at least 20 minutes or up to an hour. About ten minutes before serving, add the green beans, stir and cover with lid once more. Serve with mashed potatoes or rice. Enjoy.

  1. The original recipe stated 'chunks' of Cheddar cheese, I think a safe bet would be to use a block of Cheddar and cut it into 3/4 inch cubes.
  2. In a large bowl, mix together the mashed potatoes, egg, and salt and pepper. In a shallow bowl, add the bread crumbs.
  3. Grab a small scoop of mashed potatoes and gently form that around a cube of Cheddar.
  4. Roll the mashed potato ball in the bread crumbs to evenly coat it, then wrap a slice of bacon around the ball and fasten with a toothpick or wooden skewer.
  5. Heat a deep heavy skillet with 2 inches of oil to near 180 C but not smoking. Fry the bombs in the hot oil until golden brown brown, drain on paper towels and allow to cool for several minutes.
  6. Serve with sour cream or dipping sauces of your choice.

  1. Preheat your oven to 180 C and bring a pot of water to a boil. Cook the pasta in the boiling water until just tender, drain and stir in the butter to prevent the pasta from sticking together. Cook and crumble the bacon.
  2. Reheat mashed potatoes in your microwave or on the stove top. If potatoes are dry, add a little milk. Transfer to a large bowl for mixing. Fold in the Parmesan cheese, bacon, and 1 cup of Cheddar cheese and stir to combine.
  3. Gently fold in noodles until just incorporated then pour mixture into a greased 9x9 baking dish and top with remaining Cheddar cheese.
  4. Bake for 10-15 minutes or until cheese topping is bubbling and golden brown. Remove from oven and sprinkle with green onions.
Recipe Notes

The bacon and cheese would be the only thing expensive here. Figure maybe two 200 gram packs for 260 Baht, and for the Cheddar cheese, 1 block of 250 grams is 180 Baht, and the Parmesan about 200 Baht. For 6 servings, this is about $3.14 per serving, costly for a leftover meal but does sound good for a once in a while dish.

  1. For the meat, if you live in one of the larger cities you should be able to easily get round steak from a butcher shop. If you cannot find round steak, go with a large piece of beef and cut a few steaks off from that, across the grain. You will have to tenderize yourself with either the hammer or needle type or use the back of a cleaver.
  2. Cut the tenderized beef into small pieces to make it easier to work with. Place the beef in a deep dish, and place 3 more deep dishes on the counter, you are going to make an assembly line.
  3. In the dish to the right of the meat, mix the egg and milk, next dish to the right, mix the flour, salt as desired, 1 1/2 teaspoons black pepper, paprika, and cayenne pepper, and the final dish is clean and empty.
  4. While the pan is heating, take one piece of meat, sprinkle both sides with salt and pepper to your liking then dip the meat into flour mixture, and turn to coat, then dip into the egg and milk mixture and turn to coat, then place the meat back into the flour mixture. Place the breaded meat on the clean plate. Repeat for the rest of the meat.
  5. Heat the oil in a large skillet, a cast iron pan would be perfect for this. and add the butter as well. When hot, not smoking but hot when tested with a a sprinkle of flour into the oil, then it is ready.
  6. Cook the meat, about 3 pieces at a time until the edges start to turn golden brown, about 2-3 minutes each side. Once golden brown on both sides and cooked through, remove to a plate lined with paper towels and cover with foil to keep warm, repeat until all the meat is cooked.
  7. Once all the meat is cooked, pour off the oil to a heatproof bowl and return the pan to the stove over medium low heat. Add 1/4 cup of the reserved oil back to the pan and let that heat up.
  8. When the oil is hot, gently whisk the oil and sprinkle in the flour and whisk until you have a golden brown paste. Then slowly pour in 3 cups of milk, whisking constantly, then add salt and pepper to your liking. Keep whisking until the gravy is smooth and thick, about 5 to 10 minutes, add more milk if the gravy becomes too thick. Taste and add salt and pepper as needed.
  9. Serve as dinner with mashed potatoes and pour gravy over both or serve as breakfast with eggs, biscuits, and fried potatoes. Enjoy.

I cannot really price this based on using round steak. But for regular beef, I will say roughly 300 Baht for 1 1/2 kilos. For 6 servings, this is about $1.47 per serving. Fair cost but would make a nice once in a while meal.

  2. In a mixing bowl, beat the eggs and add in the cottage cheese and sour cream. Stir to combine and add the potatoes and remaining ingredients. Mix together well and pour into the baking dish.
  3. Bake for 20 minutes on the center rack, then move the dish to the upper rack and cook for another 6-7 minutes or until it begins to get golden brown. Let sit for a couple minutes before slicing, serve as a side.

  1. Place the pork knuckles in your slow cooker.
  2. Mix together remaining ingredients except the mashed potatoes and pour over the knuckles. Cover and cook on Low setting for 8 hours without removing the lid.
  3. Remove the knuckles from the slow cooker. Scoop out some sauerkraut and place on one side of each plate, place a pork knuckle on top of the kraut, then place a scoop of mashed potatoes on the other side of the plate. Serve.

These are available at Makro, frozen, each is 800 grams and cost is 200 Baht each. And I recently seen them 4 in a bag, frozen in Tesco, cannot remember the price. If serving one knuckle for 2 people (easily done),  the cost would be about $2.95 per person. I will add  the cost of sauerkraut when I find that. More expensive than other meals listed here but is a great treat for yourself.
