Instructions
  1. Preheat your oven to 220 C (425 F).
  2. Place a tortilla on a parchment paper lined baking sheet, spread the sauce evenly on the tortilla, keeping 1/2 inch from the edge.
  3. Sprinkle with cheese and toppings of your choice.
  4. Bake until the cheese is golden brown and bubbly and the edge of the tortilla is lightly browned, about 10 to 14 minutes.
  5. Remove from the oven and let cool for a few minutes before slicing (last thing you want in your mouth is hot bubbly cheese).
  6. Enjoy.

  1. Add all of the meatball ingredients to a large bowl and mix by hand to combine. Scoop out about a golf ball size of meat and roll in your hands to make a ball. You should get about 14-16 meatballs, depending on the size you are making.
  2. Using a large pan, cast iron would be ideal for this, on medium heat, heat a splash of olive oil and brown the meatballs until evenly browned, about 8 minutes or so, you will have to do this in batches as well. As the meatballs are browned, transfer them to a plate with some paper towels to drain them. When all the meatballs are browned, drain any oil from the pan.
  3. Reduce the heat to a low simmer and pour in the marinara sauce, and add the meatballs back one at a time and coat them in the sauce. Simmer the meatballs in the sauce for 5-10 minutes, gently moving them around every few minutes. You can test a meatball with a thermometer for doneness or sacrifice 1 by cutting it in half. When the meatballs are done, sprinkle on the Mozzarella cheese and cover until the cheese is melted, sprinkle on the basil.
  4. Serve on a bun for a meatball sandwich or over pasta.
Recipe Notes

Ground beef will run about 100 Baht/500 grams. Mozzarella cheese will cost about 70 Baht for the 1 cup shredded (about 100 grams from a block). For 4 servings, this is about $1.25 per serving.

  1. Heat your oven to 180 C. Lightly grease a 9 inch pie dish.
  2. In a large non stick pan, brown the ground beef and drain, then stir in the garlic salt, Italian seasoning, marinara sauce and 1/2 cup of the Mozzarella cheese. Spread the Ricotta cheese in the bottom of the pie dish, then sprinkle on the Parmesan cheese, next pour the meat mixture over the cheese.
  3. In a separate bowl, mix together the Bisquick mix, milk, and eggs, pour this over the meat mixture. Bake for 30-35 minutes or until a knife inserted in the center comes out clean, then top with the remaining Mozzarella cheese and bake for another 5 minutes to melt and brown the cheese. Remove from oven and cool for 5 minutes before slicing, serve.

The ground beef will run about 100 Baht/500 grams. The Mozzarella cheese will cost 142 Baht for one block of 200 grams, shredded that is about 2 cups. Ricotta and Parmesan is low quantities needed so no prices listed. Going with the prices listed, for 6 servings, this is about $1.18 per serving.

  1. Peel and cut onions into 3/8 to 1/2 inch slices, then separate the rings. Slice the mozzarella into 3/8 to 1/2 inch strips, and place a smaller onion ring in the center of a larger ring. Fill the gap between the rings with strips of mozzarella. Repeat with remaining onion rings and freeze them for 1 hour.
  2. Place the flour, eggs, and bread crumbs into three separate bowls. Dip each prepared ring into the flour, then the egg, then the breadcrumbs, then back into the egg, and one last time into the bread crumbs. Repeat with the remaining onion rings.
  3. Heat the oil in a pot over high heat. Fry the rings in batches until golden brown, being careful not to fry them for too long as the cheese may ooze out completely. Drain on paper towels and serve with marinara sauce or Ranch dressing. Enjoy!
Recipe Notes

The cheese would cost about 140 Baht/200 grams, slice it thin and you could probably double the recipe. If you use the entire block of cheese, this would cost about $1.03 per serving.
