  1. Preheat your oven to 200 C (400 F). Oil a baking sheet with 1/2 tablespoon of olive olive oil or just lay a piece of parchment paper on the baking sheet.
  2. Heat a non stick pan on medium heat and add a splash of oil, when hot, add the ground beef, when cooked through, add the taco seasoning, and season with salt and pepper to taste. When cooked, drain oil.
  3. Place the tortilla on the baking sheet, sprinkle with 1/2 cut of cheese, top with beef, then top with another 1/2 cup cheese. Bake until the cheese is melted, about 7 to 8 minutes.
  4. Remove and sprinkle on remaining cheese, lettuce, tomatoes, and sour cream. Top with avocado if desired.
  5. Serve.

  1. In a large bowl add the pasta, salmon, tomatoes, cucumber and onion.
  2. To make the dressing combine the canola, rice bran, or corn oil, lemon or lime juice, dill, garlic, salt and pepper and whisk well. Pour over pasta salad. Cover and chill for at least 2 hours.
  3. Serve over lettuce leaves.
Recipe Notes

Figure 3 salmon fillets, you need to skin these yourself, to make the 2 cups of cooked salmon. The salmon fillets I get are 69 Baht each. For 6 servings, this is about $1.02, good value overall.

  1. Preheat your oven to 180 C (350 F).
  2. Brown beef and onion in a skillet, drain off any fat, add taco seasoning and mix in. Mix together the Cheddar and Mozzarella cheese. Just starting. I used ground pork for this and two small diced onions.
  3. Layer ingredients in a 9x13 pan as listed; crushed chips (just pour the bag of chips in and crush with your hands, seasoned meat, and 2/3 of cheese. (Now I messed up the cheese part, I added the 2/3 cheese to the meat in the pan, which actually turned out well and I have add that as a variant.)
  4. Bake for 15 minutes, or until the top is golden brown and bubbly.
  5. Remove from the oven, top with the remaining cheeses, shredded lettuce, and diced tomatoes.
  6. Serve.
Recipe Notes

Ground beef will cost about 100 Baht, the Cheddar 180 Baht, and the Mozzarella 120 Baht. For 8 servings, this is about $1.47 per serving.

Variants: 1. Use a 7x11 baking dish instead of a 9x13 dish. 2. Mix the 2/3 cheese with the ground meat just before adding to the dish on top of the crushed chips.

  1. Make the sauce by mixing together the may and Sriracha sauce, set aside.
  2. Fry the bacon strips and drain them on paper towel, set aside.
  3. Form the meat into 3 equal sized patties, use a small drinking glass to cut out the center of each patty so you have 3 donut shaped patties, use the meat from the three circles and make a 4th donut shaped patty. Season with salt and pepper.
  4. Heat a heavy non stick pan or a cast iron pan and melt the butter. Add the patties and cook for 2 minutes, then flip. Crack an egg into the center of each patty then cover and cook until the egg whites are set.
  5. Toast the buns if desired, spread with the sauce. Build the burgers as bottom bun, lettuce, burger patty, 2 bacon slices, Cheddar cheese, top bun. Serve with a side of your choice.

Ground beef would cost about 150 Baht/500 grams, minced pork runs about 70 Baht/500 grams. The bacon and cheese is probably no more than 60 Baht total. For 4 servings, this would be about $1.55 per serving if using beef, and about 96 cents per serving if using pork. Overall, not bad.

This is not traditional by any means as lamb is not used, but you are free to use that if you wish. This can be pork, beef, pork and beef, chicken, chicken and beef, chicken and pork. The original recipe stated lamb and turkey, lamb and turkey is costly but feel free to use that if you wish. Beef will be costly, chicken the least costly. This makes a smaller amount than the Gyros I recipe.

  1. Slice the onion and the mince the garlic, place in the bottom of your slow cooker. In a bowl mix the 2 types of meat (or just chicken) with the oregano and paprika.
  2. Form the meat into a meatloaf and place on top of the onions in the slow cooker. Cook, covered, on Low setting for 3 to 4 hours or High setting for 2 hours. Use of a meat thermometer would be good to check the internal temp.
  3. While the slow cooker is started, prepare your sauce. Just mix the sauce ingredients together in a small bowl, cover and refrigerate until the meat is done.
  4. When the meat is done, carefully lift this out of the pot and place on a cutting board and let it rest for about 5 minutes. Slice thinly and serve in tortillas (or pita bread) with the sauce and the desired optional fixings. Enjoy.
Recipe Notes

Ground beef will run about 50 Baht (that is a guess since I do not have that here), minced pork would be about 30 Baht/250 grams, and chicken about 20 Baht/250 grams (another guess). The costly item is the flour tortillas, store bought is about 230 Baht for a pack of 10 (I need to learn how to make these!) Using the beef price and chicken and the tortillas, and figuring 4 servings and roughly half the tortillas, this is about $1.40 per serving, it goes down with pork, and chicken, and if using chicken only (which sounds really good) this would be under $1 per serving.

  1. Mix together the sauce ingredients and set aside. Refrigerate for a while is even better.
  2. Mix the salt and pepper into the beef, split the mixture into 4 parts and roll into balls. Flatten each ball and shape into a patty.
  3. Place patties into a non stick pan with 1 teaspoon of olive oil and cook the patties for 3 minutes each side. Meanwhile, slice the burger buns into 3 parts and slightly toast them. (I do not mess around with burgers, I make thick large burgers.)
  4. To assemble, spread the sauce over the base and middle bun. Add onion and lettuce on both buns. On the bottom bun add cheese and one of the burger patties, on the middle bun add 4 pickle slices and burger patty. Lift the middle bun onto the top of the base and finally add the top of bun.
  5. To make a Jr. Big Mac, use only 1 burger and no middle bun. On the bottom bun add sauce, lettuce, onion, and cheese, and one of the burger patties, top that with 4-5 pickle slices, add sauce to the top bun and cover the top with that.
  6. Serve immediately and enjoy!
  7. And the Jr. Big Mac.

Ground beef runs about 100 Baht/500 grams. For 2 servings, this is about $1.47 per serving. If you went the route with just 1 burger patty and made 4 Jr. Big Macs, you could stretch this to 4 servings at a cost of 74 cents per serving.
