  1. Add the chicken and marinade ingredients to a large zip lock bag and place in the fridge for at least 1 hour. Leaving the chicken to marinate overnight in the fridge would result in flavor.
  2. Preheat your oven to 180 C. Remove chicken from the marinade and reserve the remaining marinade.
  3. Heat 1/2 tablespoon in a large oven safe pan, cast iron pan would be perfect. If you do not have a oven safe pan, just use a regular pan you have and I will point out when to transfer the contents of the pan to a large baking dish.
  4. When the pan is hot, add the chicken skin side down and cook until golden brown, flip and cook the other side to golden brown. You are just searing, no need to cook through. Remove the chicken and set aside.
  5. Pour out fat and wipe out with a paper towel then heat the pan again with 1 tablespoon of oil, add the onion and saute until translucent, about 2-3 minutes. Add the rest of the rice ingredients and the marinade you reserved. Stir and let the mixture come to a boil, let it boil for 30 seconds then remove from heat.
Using an Oven Safe Pan
  1. Place the chicken on top of the rice, cover with a lid or foil and place in the oven. Bake for 35 minutes, then remove the cover or foil and bake for 10 more minutes or until all the liquid is absorbed by the rice and the rice is tender.
  2. Remove from the oven and let rest for 5-10 minutes before serving, garnish with parsley and lemon zest.
Using a Baking Dish
  1. If using a glass Pyrex dish, first rule is NEVER add a hot item to a dish at room temperature, there is a chance the dish will shatter.
  2. Second rule is never heat the dish when it is empty.
  3. You need to heat the dish first, do this by adding water to the dish, about 1/2 inch, heat the dish for 10 minutes or so in the oven, remove from the oven, then pour in the rice mixture, then top with the chicken, cover with foil, then place in the oven to bake.
  4. Bake for 35 minutes, then remove the cover or foil and bake for 10 more minutes or until all the liquid is absorbed by the rice and the rice is tender.
  5. Remove from the oven and let rest for 5-10 minutes before serving, garnish with parsley and lemon zest.
Recipe Notes

Figure about 70 Baht for the chicken. If you buy quarters and cut the thighs from the legs, you will have much larger thighs, reserve the legs for another dish. For 5 servings, this is about 42 cents per serving.

  1. Preheat your oven to 200 C. Coat a large baking dish with 1 tablespoon of olive oil. Arrange the lemon slices in a single layer in the bottom of the dish.
  2. In a In a large bowl, 3 tablespoons of olive oil, lemon juice, garlic, salt, and pepper; add the chicken, long beans, and potatoes and toss to coat. Pour this mix into the pan and spread around evenly.
  3. Bake for 50 minutes or until the chicken is cooked through and the potatoes are tender. Serve.
Recipe Notes

Chicken breasts cost about 60 Baht/kilo, 4 breasts are probably 1 kilo or just a bit less. For 4 servings, this is about 45 cents per serving.

I like shrimp, and I love shrimp in butter, this sounds like a winner. Serve with a salad or over pasta for a complete meal. On my to try list with some large prawn.   2. In a saucepan, melt the butter on low heat. Line a cookie sheet with foil and place slices of onion in a single layer, place the shrimp in a single layer on top of the lemon slices. When the butter has melted, pour that over the shrimp then sprinkle the dry Italian season mix over the shrimp. Bake for 15 minutes. Serve over pasta or with a green salad.

  1. Fill a large pot with water, about 8 quarts (liters) and bring to a boil.
  2. Add the Old Bay seasoning and bay leaves, reserve 1 teaspoon of Old Bay for use later. Place the potatoes in the water and cook for about 8-10 minutes or until they are just beginning to soften when pierced with a fork. Then add the sausage and cook for another 5 minutes. Then add the corn and the corn and cook for another 5 minutes. Finally, add the shrimp and cook for 3-4 or until the shrimp is pink and cooked through.
  3. Remove everything and drain well and place on a large platter or two (or just put down some newspapers on a table if eating outside). Sprinkle the remaining Old Bay over the meal and drizzle with melted butter. Set out lemon wedges as well. For the butter, you can also serve melted butter in individual small bowls for each person. Optional, serve with cocktail sauce.
Recipe Notes

One kilo of smoked sausage is between 100 and 200 Baht depending on where you get it from, I will use 150 Baht as an estimate here. Shrimp go with about 150 Baht as well, much less if you can get from a local fisherman. Corn and potatoes, you can get them locally. This comes to $2.20 per serving for 4 servings, and about $1.50 per serving for 6 servings. Not a cheap meal but would be a hit for visiting friends and family.

Variants, add fresh clams, add fresh crabs or just large crab claws.

  1. Heat olive oil in a large skillet over medium-high heat, add the onion and stir, cooking until soft and nearly translucent then stir in garlic and cook for 30 seconds. Add chicken and cook until just browned.
  2. Then stir in the pasta, tomatoes, chicken broth, lemon juice, water, basil, red pepper flakes, salt and salt and pepper as desired. Bring to a boil and continue to stir often, uncovered, for about 8-10 minutes or until the pasta is tender, add more chicken stock as needed, or until most of the liquid has evaporated. Remove from heat, sprinkle cheese on top, and cover for 10 minutes or until cheese is melted and remaining liquid is absorbed. Serve.
Recipe Notes

Chicken breast will run about 35 Baht/500 grams. The cheese will run maybe 50 Baht/1 cup. For 4 servings, this is about 68 cents per serving, less for 5 or 6. This is an economical meal even with a side.

  1. Heat a splash of olive oil over medium high heat in a large skillet. Add garlic and cook for 20 seconds. Toss in chicken and saute until just browned. Stir in chicken broth, water, and uncooked pasta to pan. Bring to a boil, then turn heat down to low. Cover the pan and cook on low for about 12-15 minutes, stirring pasta with tongs often so it does not stick to bottom of pan. Remove cover when pasta is al dente and most of the liquid has been absorbed and allow to simmer for 5 more minutes.
  2. Remove from heat and stir in lemon juice, lemon zest, spinach, parsley, basil, Parmesan and Ricotta cheese. Season with additional salt and pepper if needed and garnish with lemon slices and additional Parmesan cheese and parsley, if desired.
