For the Sour Cream

  1. Preheat your oven to 200 C.
  2. Make several parallel slits, about 1/2 inch apart, into each potato top, making sure not to slice completely through. Place 3-5 garlic slices between the slits on each potato, use more if you like. I used a slice of garlic in every slit.
  3. Brush each potato, all sides, with olive oil. Place potatoes on a baking sheet lined with foil and sprinkle generously with salt and pepper.
  4. When the potatoes begin to “fan out”, about 15 minutes depending on your oven and the size of the potatoes, it’s time to add bacon. Carefully slip a chunk of bacon into each slit of the potato and return to the oven. Don’t worry if a slit breaks through, the cheese will hold it together later. Lay a piece of bacon over a slit, then use the handle of a spoon and press the bacon into the slit, folding it as you gently press it in the slit.
  5. Once the potatoes and bacon are fully cooked, use fork to test, you can leave them as is, meaning with the garlic, bacon, salt and pepper, they are delicious no matter what way you have them. If that is your choice, pour a little melted butter and chopped parsley over each potato and put into the oven for about 5 more minutes. To give you an idea on the size of these potatoes, they are in a pie dish.
  6. Or top the potatoes with the Cheddar cheese.
  7. Bake until tops are crispy. The baking process total time is about 1 hour. Transfer to a serving dish and top with the sour cream and chives.
For the Sour Cream
  1. Mix all the ingredients for the sour cream together and refrigerate until use.

Figure about 90 Baht for the cheese. For 4 servings, this is about 66 cents per serving.

  1. Preheat your oven to 180 C. Get out a square baking dish, 8x8 or 9x9 is fine.
  2. Cut the potatoes into wedge shapes and deep fry until golden brown. Drain on several layers of paper towels.
  3. Chop the bacon and fry in a separate pan until crispy. Drain on paper towels.
  4. Layer half of the potatoes in the square baking dish. Sprinkle half of the Mozzarella cheese over the potatoes. Sprinkle half of the dill over the cheese. Add all of the bacon in a layer on of the dill. Add all of the Cheddar cheese in a layer over the bacon. Add the remaining potato wedges in a layer and sprinkle with some salt to taste. Top with the remaining Mozzarella.
  5. Bake for 20 minutes or until the cheese is melted and just starting to brown. Serve and enjoy.
Recipe Notes

The Mozzarella cheese will cost 140 Baht/200 gram block, the Cheddar cheese, if you buy a 250 gram block and shred 1/4 of that, the cost would be about 45 Baht. The bacon will cost about 75 Baht/100 grams. For 2 servings, this would cost about $3.82. Not cheap but sounds good.

  1. Preheat your oven to 200 C.
  2. Wash the potatoes and pierce several times with a fork, place on a cookie sheet and bake until fork tender, about 45 minutes.
  3. Remove the potatoes from the oven when they are cooked, wear an oven mitt and carefully cut each potato in half lengthwise. Scoop out the insides and place that into a bowl. To the bowl, add the butter, cheese, and mix, stir in the cooked sausage.
  4. Spoon mixture back into the potato halves and make a depression in the center of each one. Crack an egg into each depression.
  5. Place the potato halves on the baking sheet and bake for 10-15 minutes or until the eggs are set, serve.

Low cost. If no baking potatoes are available to you, use regular, large potatoes, but scoop out less to make the mashed potatoes.

  1. In a medium bowl whisk together the mayo, sour cream, and mustard until well mixed. Add 3/4 of the chopped chives along with some salt and pepper to taste and whisk to mix. Mix in the cheese and bacon (reserve some bacon for a garnish if you like). Cover and chill for thirty minutes.
  2. Peel (if you want) and cube the potatoes into 1/2 inch pieces. Cook the potatoes in boiling water until fork tender. Drain and cool slightly. Fold the cooked potatoes into the chilled dressing. Garnish with the remaining chives and bacon.

  2. In a large bowl, mix the soup, milk, garlic, and pepper, then stir in the potatoes and sausage. Once mixed, spoon this into your baking dish. Bake for 90 minutes or until the potatoes are tender. Remove from oven, let rest 5 minutes, cut and serve. A green salad and vegetable on the side would make this a complete meal.
Recipe Notes

The sausage would cost about 150 Baht/500 grams (this is about 5 large links). Make the soup yourself, it takes only 5 minutes. For 8 servings, this is about 55 cents per serving. Good value.

Variants, keep in mind adding any of these, increases the per serving cost. Add cabbage. Add a chopped onion. Add some shredded cheese on the top.

Potato Topping
  1. Cook the potatoes, carrots, and garlic cloves in a big saucepan with enough water to cover, simmering until tender. Drain and add to a large mixing bowl. Season with salt and pepper, a few tablespoon of butter, and about 1/8 cup of milk. The potatoes should be a thicker consistency than if you were eating them as is. Mash to potatoes until the potatoes are smooth, lumps of carrots are ok. Taste and season again if needed.
Beef Mixture
  1. While the potatoes are cooking brown the ground meat in a large skillet. Drain fat. Remove from pan and set aside. In enough oil to cover the bottom of the skillet saute onion and celery until tender. Add two tablespoons butter, flour, and mustard, stir for a minute. Slowly add in stock and stir or whisk until smooth. Add ground beef and Worcestershire sauce. Season with salt and pepper. Bring to a simmer for 3-4 minutes. Taste and season further if needed.
Vegetable Filling
  1. Steam the peas and corn, if you are using a pea, corn, carrot, and bean frozen mix, no worries, use those.
Assemble
  1. Preheat your oven to 400 degrees. In a deep-sided 8×8 in light greased with butter casserole pan, spread the meat mixture evenly across the bottom, the sprinkle the pea and corn mixture over top. Dollop the potatoes over top of the vegetables and spread out, roughing up the top with fork. Bake for 30-35 minutes until golden brown on top and bubbly. Put a baking sheet on the rack underneath to catch any drips. Let rest 5 minutes before serving. A salad on the side would be a perfect meal.

Ground beef will run about 150 Baht/750 grams. Pork will run about 100 Baht/750 grams. For 6 servings, this is about 75 cents per serving. Very reasonable.

  1. In a big frying pan, lightly coated on olive oil, add ground chicken, cover and cook on low so that it retains the juices. Chop it up further with a spatula and then add green bell pepper, onion, a good dash of fennel seeds, stir to combine then cover and let it simmer for 10 - 15 minutes , stirring occasionally.
  2. Meanwhile, mash the potatoes with a good amount of butter and a splash of milk. Set aside.
  3. Add mildly spicy tomato sauce to the chicken mixture and stir. Simmer again, stirring occasionally until heated through. Season with salt and pepper to taste.
  4. To plate, make a flat bed of mashed potatoes on a plate (add a bit more butter to the center) and ladle the chicken mixture over the top.
  5. Garnish with quartered plum tomatoes.

Ground chicken would run about 50 Baht for 500 grams, potatoes, tomatoes, etc is minor costs. For 4 servings this is about 38 cents per serving.

500 grams of sausage, if one cannot find bulk, link sausage would work great, just fry until done, slice into discs, or use the Italian sausage recipe on this site to make Pork, Italian, or Chicken sausage. Cost for sausage should be no more than 150 Baht, making this a meal that is easily under $1 per person for 8 people. Make the condensed soup yourself for even more savings.

  1. Melt butter in a saucepan on the stove. Add garlic. Add in flour and stir until blended. Let cook 1 minute.
  2. Pour in milk while whisking and continue to whisk until incorporated and no lumps remain. Add in chicken broth and seasonings. Stir over medium heat until thick and bubbly.
  3. Grease the inside of your slow cooker with some butter. Layer 1/3 of potatoes, 1/2 of onions, 1 cup cheese and 1 cup of sauce. Repeat layers ending with the remaining potatoes, sauce & cheese.
  4. Cook on high 5-6 hours or until potatoes are tender. Once done, potatoes can be kept on warm for up to 2 hours. To thicken up sauce (if required) turn off slow cooker for about 20 minutes before serving.

Potatoes cost about 35 Baht/kilo, making this a very reasonable side dish for up to 8-12 servings.

Now this is listed as a side dish, but if you add a couple of diced boiled chicken breasts or diced ham to each layer, and pair it with a green vegetable as a side dish, you can turn this into a inexpensive meal.
