This sounds like a really good casserole, quick and easy to make. And as a bonus, a cornbread topping. On my to cook list. The time for prep or cook does not include the time to cook the pinto beans.   1. First order of business, need to get those pinto beans cooked, use what ever method you prefer, stove top, slow cooker, or my preferred way is the pressure cooker. Drain and set the beans aside.
  2. Preheat your oven to 200 C (400 F).
  3. In a large pot, cook the ground beef, onion, and garlic, break up the beef as you cook, when browned and cooked through, drain the fat then add the cooked beans, jalapeno, tomato and tomato sauce, and mix together.
  4. Pour mixture into a heat proof baking dish and spread out evenly. I will guess a 7x11 or 9x13, and I will clarify this when I make it.
  5. Mix together the Jiffy mix, egg, and milk, pour over the meat and bean mixture.
  6. Bake for about 15 to 20 minutes or until the cornbread is lightly browned.
  7. Serve. I would serve this with mashed potatoes or a nice green salad.

  1. Preheat your oven to 200 C.
  2. Prepare cornbread batter by mixing in the egg and milk, pour into a lightly greased 8x8 baking dish. Bake cornbread for 10 minutes then remove from oven, yes, it is not done, we will get back to that.
  3. Meanwhile, cook ground beef and onion in a medium skillet and season with salt, pepper, and garlic powder to your liking. Once cooked through, drain fat. Add the taco seasoning and undrained chili beans and stir well OR If using the shortcut for the beans, add the beans and 1/2 cup of water. Continue cooking on a simmer and until starting to to thicken, then spread chili evenly over partially cooked cornbread.
  4. Combine sour cream and 1 cup of Cheddar cheese and mix well. Spread sour cream mixture evenly over chili. Start by evenly placing dollops on top of chili then the heat from the chili will make it easier to spread. Top sour cream mixture with remaining Cheddar cheese then continue baking for 10 minutes or until cheese is melted.
  5. Serve, top each serving with shredded lettuce, chopped tomato and onion if desired.
Recipe Notes

For ground beef, figure 100 Baht/500 grams.Making the shortcuts, does take time, will save a lot. For 4 servings, this is about 74 cents per serving.

  1. Preheat your oven to 200 C.
  2. In a medium bowl, mix together corn muffin mix, sour cream and egg. Spread this into a large cast iron skillet. Bake for 20 minutes, or until golden brown on top. Remove pan from the oven.
  3. In another pan, cook onions over medium heat in a spalsh of olive oil, season with salt, pepper and spices and cook until soft. Add garlic and cook until fragrant, about 30 seconds. Add the ground beef and stir to break up meat. Season to taste and cooked until cooked through. Drain excess fat and set aside.
  4. Poke entire surface of cornbread with a fork. Spread enchilada sauce over the cornbread. Add the meat mixture and top with shredded cheese. Cover with foil and bake until the cheese is melted, about 20 minutes. Remove foil and broil until cheese begins to brown, about 5 minutes. Top with cilantro, serve.
Recipe Notes

Ground beef would cost about 150 Baht/500 grams, minced pork runs about 70 Baht/500 grams. Figure in another 100 Baht for each of the cheeses. If using beef, the cost is about $1.30 per serving, if using pork, the cost is about $1 per serving. Make sure you use the shortcuts as well.
