To Cook the Shrimp
  1. In a large pot, add the water, celery, onion, lemon slices, and a pinch of salt. Bring to a boil then reduce to a simmer and cook for 5 minutes.
  2. Add the shrimp, cover, and remove from heat and let sit for 5 minutes, the shrimp should all be pink, if not cover and let sit for another minute or two. When pink, drain and remove the shrimp to a bowl, discard the rest.
To Pickle the Shrimp
  1. Fill your jar about 2/3 full with hot water. Add the vinegar, mustard seed and garlic. Layer in the cooked shrimp, capers, onion, and lemon.Top up the jar with lemon slices, making sure the shrimp are below the surface of the liquid, if needed, add more water to top up the jar.
  2. Let jar cool to room temp, cover, and put in the fridge for 2 days, then ready to serve.
Recipe Notes

Going with just small Whites from Tesco, figure about 95 Baht/500 grams. For 6 servings, this is about 48 cents per serving.

  1. Heat 1 tablespoon of the oil in a large heavy pan, when hot, brown the roast on both sides while seasoning with salt and pepper. Remove the roast to a plate and set aside.
  2. Same pan add the remaining oil and add the onions and cook until they just start to soften and wilt then add the garlic and cook a few more minutes until the onions are translucent.
  3. In a measuring cup, add the hot water and the bullion cubes and mix to dissolve, then pour that into the pan, also to the pan, add the beer, brown sugar, vinegar, and stir to mix well.
  4. Pour the mixture, carefully, into your slow cooker insert, place the roast on top of that mixture. Switch the slow cooker to Low setting for 7-8 hours. Check for tenderness at 7 hours. If needed, continue to cook until the roast is tender to your liking.
  5. When the roast is tender, remove from the slow cooker and place on a platter. Pour the liquid from the slow cooker into a saucepan on the stove and bring to a boil.
  6. While the liquid is heating, mix together a slurry of 1-2 tablespoons of cornstarch and 2-3 tablespoons of cold water, stir into the liquid until the gravy is thickened to your liking.
  7. Serve with mashed potatoes or pasta, spoon gravy over slices of roast and potatoes.

Figure about 300 Baht/1 kilo of beef. For 4 servings, this is about $2.20 per serving.

  1. Mix the chicken stock powder in the hot water, set aside.
  2. Heat a non stick pan on medium heat and melt the butter, add the onion and liver, stirring and turning the livers to brown them up and soften the onion, cook for about 3-4 minutes.
  3. Add the mushrooms and the 2 tablespoons of water and cook for about 5 minutes to wilt the mushrooms, then add the chicken stock water, flour, salt and pepper, and parsley, stir occasionally.
  4. Bring to a boil then reduce the temp to a simmer and cook uncovered, stir often to slightly thicken the gravy.
  5. Serve with mashed potatoes or pasta and a vegetable.

  1. In large bowl, whisk together the corn starch, cooking wine, spring onion, ginger, salt and pepper, and egg white. Add the fish slices and marinate for 1 hour.
  2. When the fish is ready, peel the tomatoes and dice. In a large pot on medium heat 2 tablespoons of oil and add the spring onion and garlic until aromatic, add the diced tomatoes and reduce the heat to low and cook for about 7 to 10 minutes until the tomatoes are soft and lots of juice is released. Add 8 cups of hot water and simmer for 20 minutes.
  3. Add the celery, red onion, and mushrooms and cook for another 10 minutes, season with salt and pepper to taste.
  4. Turn up the heat to medium and add the fish slices and marinade and stir, cook for about 30 seconds to 1 minute or until the fish slices turn white, remove from heat and carefully pour into a large serving bowl.
  5. Optional, heat 2 tablespoons of oil in a small pan or wok until slightly smoking and pour into the soup.
  6. Sprinkle coriander and and spring onion on the top and serve.

Variant: For a spicy version, add 2-4 chopped red Thai Bird's Eye Chilies, stems removed, to the oil in Step 5, then mix into the soup after pouring on top.

  1. Rinse the chicken breast (skin on) or thighs, 1 breast or about 2 thighs, bone in, skin on is perfect.
  2. Rinse the rice and place into your rice cooker pot. Add the correct amount of water you use, then add the seasoning pouch from the Chicken Rice Set packet, mix well, then place the chicken on top.
  3. Turn on the rice cooker to Cook and let cook through until it switches to warm.
  4. About 15 minutes into cooking for the rice and chicken, prepare the soup. Mix the soup pouch with 1 3/4 cups hot water.
  5. Once the rice cooker switches to Warm, let it stay on warm for 15 minutes, then open the Dipping Sauce pouch and pour into two small serving dishes.
  6. Spoon rice onto two dishes, slice the chicken breasts on a cutting board, then pick up the slices at one time and place on or next to the rice, or if using thighs, just place two thighs on or next to the rice, serve with the soup and dipping sauce.

The seasoning packet set costs 28 Baht. 300 grams of chicken, we'll use breasts, this is about 30 Baht. For 2 servings, this is about 90 cents per serving, good value and you have everything mixed and ready for you.

  1. In a small bowl, dissolve the bouillon cube in the hot water.
  2. In a rice cooker, combine the rice with the chicken and ginger. Arrange the spinach on top. Pour the coconut milk and bouillon broth into the cooker and season lightly with salt.
  3. Turn the cooker on; the dish should be done in about 40 minutes (when the cooker turns to warm). Let stand for 5 minutes. Fluff the rice with a fork, spoon into bowls and serve.

  1. Fill the container about halfway with very hot water and dissolve the salt in the water. Add the peppercorns, mustard seed, vinegar, and dill to the hot saltwater and stir.
  2. Cut large beets in half lengthwise, add the beets and eggs to the brine, they need to be completely submerged, and more water if needed.
  3. Let the container cool down to room temperature. Cover and refrigerate. Make sure the beets or eggs are not poking up above the liquid.
  4. Wait at least 2 days before eating. The eggs develop a nicer color after several days.

  1. In a large non stick pan, heat a splash of olive oil then brown the strips of beef, no need to cook them through, just quickly brown them and then add to the slow cooker. Add the minced garlic to the slow cooker and mix into the beef strips.
  2. Mix the stock powder with the hot water, when mixed, add the corn starch and mix. Pour this into the slow cooker along with the black pepper, soy sauce, chopped tomatoes and juice, sugar, and onion. Slice the bell peppers and refrigerate. Set the slow cooker to Low setting for 6-8 hours or High setting for 3-4 hours. For low setting, at the 4 hour mark, add the sliced bell pepper and mix in. For high setting, at the 2 hour mark, add the sliced bell pepper and mix in, continue cooking. This keeps the bell pepper crunchy and not turning to mush.
  3. When the beef is tender and cooked through, mix 1 tablespoon of corn starch with just enough water to make a paste, then stir that into the pot and cook for another 10 or 15 minutes, this will thicken the sauce to a gravy like consistency. Serve over rice, pasta, mashed potatoes, or in a bun with a slice of Swiss cheese.

The beef would run about 200 Baht/kilo. For 6 servings, this comes out to about 98 cents per serving. Excellent cost.
