  1. Cook the pasta in a pot of salted water until tender, drain and run under water to cool it down. Add to a large mixing bowl after it is well drained.
  2. Cut the eggs in half, remove yolks and place in a separate bowl, chop the egg whites and add to the pasta along with the pickles, onion, celery, and olives.
  3. Mash the yolks with a folk and mix in the salt, pepper, mustard, and mayo. Then mix in the paprika.
  4. Mix together the pasta, egg whites, and vegetables. Then add the yolk mixture and mix everything together until well coated.
  5. Refrigerate for at least 2-3 hours before serving. Garnish with a light sprinkling of paprika if desired.
  6. Serve and enjoy.

Rotsi (Rösti) is a new term for me, I had to look that up, Swiss in origin meaning shredded par boiled potato. Normally when I see fish pies they are topped with mashed potatoes or just a nice cheese sauce, so this sounds really good for a different topping. I am going to use my individual serving dish or dishes to test this recipe out and will validate the ingredient amounts as well. On my to cook list and soon.   1. Wash and scrub the potato, certainly use more smaller potatoes if you do not have one large one. Cut the potato in half. Heat a sauce pan with salted water, when boiling, add the potato pieces and cook for about 5-6 minutes, you want firm, not fully tender potatoes as you are going to shred them. When the potatoes have been cooked, slightly, drain them and run under cold water to stop the cooking process. Set them aside.
  2. In a sauce pan, add the milk and fish, bring to just a simmer for 5 minutes, this is precooking the fish, and getting some fish juices mixed into the milk. Remove the fish and drain them, retain the milk and set aside.
  3. Heat half of the butter in a sauce pan, then add the leek and saute for about 5 minutes or until soft. Whisk in the flour and continue to whisk for 1 minute, then remove from heat, then slowly add the milk while whisking. Return to heat and whisk until the sauce comes the sauce comes to a boil, reduce to a simmer for 2 minutes, remove from heat and stir in the parsley and mustard, season with pepper as desired. Set this aside.
  4. Preheat your oven to 180 C (350 F). Get out a small baking dish, I am going to try this with one or two small individual Pyrex dishes.
  5. Flake the fish into chunks and fold into the sauce. Gently fold in the quartered eggs. Pour mixture into the dish or dishes.
  6. Grate the potato pieces then melt the butter in a small sauce pan. Toss the butter with the potatoes, season with salt and pepper as desired. Scatter the potatoes over the dish.
  7. Place the dish in the oven and and bake for 10-20 minutes to get the potatoes golden brown and tender.
  8. Serve.

Variants: 1. Use a combination of fish, like whitefish and salmon. 2. Add shrimp. 3. Omit the eggs. 4. Add peas to the sauce. 5. Add some shredded cheese to the potatoes or place on top of the potatoes. 6. Replace the leek with diced onion. 7. Go heavy handed with the pepper in the sauce. 8. Add extra mustard to the sauce.

  1. Heat a pot of salted water to boiling then cook the macaroni to tender, drain and set aside.
  2. Cook the chicken any way that you like, steamed, boiled, oven baked. If boiling, and you have the time, add trinity and make some broth while you are at, also, let the pot cool to cool temp before taking the chicken out, this will result is juicier chicken.
  3. Drain the pickle relish and the pineapple, this is so you do not make a soggy salad, no one likes a soggy salad 😉
  4. After everything is cooked, drained, chopped, and cooled, place everything, except the mayo, in a large mixing bowl and gently toss to mix.
  5. Ad the mayo and gently mix to make sure everything is coated well. Cover and place in the fridge to chill until serving, chill for about 2-3 hours.
  6. Serve as a side dish with chicken from the BBQ, grilled sausages, etc. Enjoy.

  1. Cut the cooled and peeled eggs in half, remove the yolks to a medium mixing bowl and place the whites on a serving tray or plate.
  2. Mash the yolks with a fork then add the cheese, mayo, sour cream, chives (or spring onion), just 1 1/2 teaspoons of the taco seasoning. Mix together.
  3. Spoon or pipe the mixture into the egg whites.
  4. Dust lightly with the remaining taco seasoning and sprinkle lightly with cilantro. Chill in the fridge until you serve.

Prep with a Meat Grinder
  1. Course chop the bologna and run through your meat grinder using the medium plate. Place in a large mixing bowl.
Prep with a Knife
  1. Finely dice the bologna and eggs. Place in a large mixing bowl.
Prepare the Spread
  1. To the mixing bowl, add about 1/4 cup of sweet pickle relish and about 1 cup of mayo. Mix into the bologna mixture, adding more mayo as needed to fully coat the mixture but not dripping with mayo either. Taste and add more relish ass needed to to taste.
  2. When the spread is mixed and adjusted to taste, cover and place in the fridge for 2-3 hours to chill.
  3. Serve as a sandwich spread or on crackers.

I will price this when I get bologna again. I will say low cost for now.

Variants: 1. Add 1 finely diced onion. 2. Add some finely diced or ground ham, amount would be up to you. 3. Mix in some shredded cheese of your choice.

  1. Preheat your oven to 180 C (350 F) and line a baking sheet with parchment paper. Lay the 7 slices of bacon on the parchment, bake until crispy, 20 to 25 minutes. Remove from oven and chop into bite size pieces, set aside.
  2. While the first seven slices of bacon are baking, heat a medium size pan on medium heat and fry the 1 piece of bacon to start making the dressing. Cook until crisp, then add the garlic and shallot. cook until the shallot is soft, about 2 minutes or so. Remove the pan from the heat and whisk in the salt, mustard, vinegar, and olive oil.
  3. On a large platter, or using 4 serving bowls, add the lettuce, then bacon, then eggs.
  4. Return the dressing to low heat just to warm it then drizzle over the salad. Garnish with the chives and some black pepper as desired.
  5. Serve as a lunch or light dinner.

  1. Add the broth to a small sauce pan and add the potato and bring to a boil, then reduce to a simmer until the potato pieces are almost fork tender, 8-10 minutes or so.
  2. Just when the potatoes are almost fork tender, add the eggs. Let this simmer for another 5-10 minutes or so to finish cooking the potatoes and to heat the eggs through.
  3. For the dumplings or wontons, you can do this two ways. You can pan fry the dumplings first then add to the broth, or for raw wontons, you can just add to the broth when you add the eggs and let them cook that way. (And I totally forgot to add the wontons that I made just 2 hours before.)
  4. When the potato is tender, season with salt as desired, scoop the potato, eggs, and dumplings or wontons into a bowl, ladle over plenty of broth, top with 1 or 2 chopped spring onion.
  5. Serve with a spring onion or two on the side.

  1. Preheat your oven to 180 C. Get out a deep dish Pyrex pie dish or a 7x11 baking dish, I will verify when I make this.
  2. To poach the fish, heat a non stick pan and add the milk, onion, bay leaves, and cloves. Heat to just before a boil, add the fish and simmer until the fish is cooked through and flakes with a fork, about 8 to 10 minutes.
  3. Remove the fish to a plate, strain the milk mixture and pour into a bowl, discard the contents of the strainer.
  4. Flake the fish into large pieces into the baking dish, Add the shrimp and arrange the quartered eggs on the top. Sprinkle the parsley on the top.
  5. To make the sauce, melt half of the butter in a small pan, stir in the flour and cook for 1 minute, stirring, then remove from heat. Stir in the reserved milk to get a smooth sauce. Return the pot to heat and bring to a boil and cook 5 minutes, stirring continuously, until it coats the back of a spoon. Remove from heat, season with salt, pepper, and nutmeg.
  6. Pour the sauce over the fish. Top the pie with mashed potatoes, push the mash right up to the edges to seal, fluff the top with a fork then sprinkle on the cheese.
  7. Bake for 30 minutes then let rest for 5 minutes, serve.

Figure about 50 Baht for the whitefish, Pangasius, and about 200 Baht for salmon. For the cheese, figure about 90 Baht. For 4 servings, this is about $2.50 per serving.
