  • 500-700 grams meat
  • 2 cups gravy OR make from a shortcut

For the Meats - Pick One
  1. Think simple items that are cooked or can be cooked up quick. Chicken Hearts, Chicken Livers, Chicken Gizzards, Sausage, leftover roast chicken, leftover beef pot roast, leftover pork loin.
  2. Cook fresh meats in a non stick skillet with a splash of olive oil along with a diced onion and several cloves of mined garlic and mushrooms if using those. Drain and set aside.
  3. For leftover meats, cube or shred, your preference. Saute a diced onion and several cloves of garlic in a non stick pan with a splash of olive oil. When the onion is translucent, add mushroom if using, then add the cubed or shredded leftover meat and saute until heated through. Drain and set aside.
  4. For sausage, bulk or sliced would work well with a milk gravy.
For the Gravy - Pick One
  1. Gravy can be from a homemade mix, from a gravy packet, or from the drippings in the pan when using fresh meats. I use packets or from a homemade mix. Your choice.
  2. Chicken giblets and leftovers obviously pair up with chicken gravy. Beef with beef gravy, and pork with pork or chicken gravy. Sausage would pair nicely with a milk gravy.
  3. For 2-3 servings, go with 2 cups of gravy, either 2 packets, 2 cups worth from a homemade mix, or you can make in the pan with the drippings.
  4. Once the gravy is made, add the cooked or heated up meat of choice.
For the Seasoning
  1. After the meat of choice is added to the gravy and mixed, taste and add salt and pepper as desired. For the chicken giblets, sage and celery seed works very well, for two cups of gravy I used 1/2 teaspoon of sage and 1/4 teaspoon of celery seed.
  2. White pepper can be used in place of black pepper. Any herbs of choice can be used, like rosemary, thyme, parsley, coriander. Totally up to your preference.
For Serving - Pick One
  1. Rice, small amount for a side dish or a large amount for a main dish.
  2. Pasta, can be spaghetti, egg noodles, fettuccine, macaroni, small shells, spirals, totally your preference.
  3. Potatoes, mashed would be my first choice, boiled and fried potatoes also work.
  4. Biscuits, think milk gravy with sausage. And additional option for this would be a fried egg or two on top.

  1. In a large non stick pan, heat the oil and add the chicken hearts and saute for a few minutes, they release a lot of fat was well (additional flavor), add the onion and garlic, and saute until the onion is translucent and hearts cooked through. Drain the hearts.
  2. While the hearts are cooking. In a small sauce pan prepare the chicken gravy according to the packet instructions, this is normally 2 packets to make 2 cups. Once the gravy is made, add the drained hearts and stir in, season with the sage, celery seed, and salt and pepper to taste.
  3. In another small sauce pan, cook the pasta in boiling water until tender, then drain.
  4. Place some noodles on a plate and ladle on the gravy, enjoy.

Figure about 50 Baht for the chicken hearts. For 2 servings, this is about 74 cents per serving.

For the Breakfast Sausage
  1. First thing we need to do is make the sausage. Very easy, just mix together all the Breakfast Sausage ingredients in a mixing bowl. Mix well. Cover and refrigerate while you prepare the rest, best to make this and refrigerate overnight to allow the flavors to blend.
  2. Fry the sausage in a non stick pan, breaking it apart with your spatula until browned and cooked through. Remove sausage with a slotted spoon, leaving the fat in the pan. Drain sausage and set aside.
For the Pizza Dough
  1. Preheat your oven to 220 C.
  2. Next, we need to make the pizza dough. This is my thin crust pizza dough, the pre-baking has never failed me a crust fully cooked through.
  3. Add the flour into a mixing bowl. Add the salt and dried Italian seasoning/herbs of your choice (if using) and yeast, whisk to combine.
  4. Make a well in the center of the flour and pour in the water. Use your fingers or a wooden spoon to combine everything together. When it comes together into a cohesive ball, turn it out onto the counter along with any extra flour in the bowl that hasn’t yet gotten worked in.
  5. Knead the dough until all the flour is incorporated and the dough is smooth/elastic to the touch, about five minutes. The dough should still feel moist and just slightly tacky. If it’s sticking to your hands and counter top like bubble gum, work in more flour one tablespoon at a time until it’s smooth and silky.
  6. I use a 13 inch non stick pizza pan, sprinkle some corn meal around on the pan, the place the ball of dough in the center. Use the heels of your hands and working from the middle gently press the dough outward until it’s about 1/4 of an inch thick or less, while rotating the pan. You can also use a mini rolling pin for this part.
  7. Bake the crust for 4 minutes, then rotate the pan 180 degrees and bake for 3 more minutes. Remove pan and set aside.
Let's Make This
  1. Sausage is made, crust is made, let's make the eggs then the gravy and get this pizza baked.
  2. For the gravy, using the Gravy ingredients, Add butter to hot pan and melt together with sausage fat. Whisk together the evaporated (canned) milk and water with the flour. Add to hot fat in skillet. Add salt and pepper to taste. Bring to a boil, stirring constantly until gravy starts to thicken. Add sausage back into gravy; heat until sausage is hot and gravy is thick. You want a thick gravy for this dish, after all, you are making a pizza. Set pan aside.
  3. Now prepare the eggs, crack all the eggs into another non stick pan, season with salt and pepper as desired. Cook and fold to scramble until just set, remove from heat.
  4. Take your pre-baked pizza crust and spread out the gravy evenly. Top with the scrambled eggs, then sprinkle on the shredded cheese, top that with the spring onion.
  5. Place in the oven for 15 to 20 minutes or until the top is nicely melted and just starting to brown up.
  6. Slice, serve, and enjoy.
Recipe Notes

Figure about 50 Baht for the pork, another 100 Baht for the cheese. Figuring 4 servings, this is about $1.10 per serving. I will verify this when I make it.

  1. In a small bowl, mix together all the Glaze ingredients, set aside.
  2. Grease your slow cooker insert with butter.
  3. In the slow cooker insert, mix together the eggs, milk, breadcrumbs, onion, and sage. Add the beef and mix well, use your hands for this. Once mixed, shape into loaf in the center of the insert, with about a 1 finger width of space on the sides of the insert. There, wasn't that easy, and no mixing bowl to wash.
  4. Spoon the glaze over the top of the loaf.
  5. Cook on Low setting for 6 hours.
  6. Slice and serve with mashed potatoes and a vegetable for a complete meal. Think meatloaf sandwiches for leftovers.

Figure about 200 Baht for the beef. For 6 servings this is about 98 cents per serving.

  1. Preheat your oven to 180 C.
  2. Place ground meat in a large mixing bowl, add the rest of the ingredients BUT only 1/2 can of the soup, use your hands for a good mix.
  3. Turn into greased loaf pan or glass casserole dish 7x11 and pat out flat, pour remaining soup over the top, smoothing it evenly over all.
  4. Bake for 75 minutes. Let rest for 10 minutes, then slice and serve. Some potato mash and a vegetable, you have a good meal.

Beef would cost about 150 Baht/750 grams, pork would cost about 125 Baht/750 grams. Going with 150, and for 6 servings, this is about 75 cents per serving.

  1. Toast the bread slices in the oven at 150 C. If you have a 4 slice toaster, you can use that. While the bread is toasting, chop up the onion, parsley, celery, and apple and put everything in a large bowl. Add the seasoning, and add melted butter. Stir well.
  2. When the bread is done, cut into 1/2 inch size-or-so cubes, add to the bowl and toss well to ensure the bread is evenly coated. Pour this into your slow cooker, pour in the chicken stock.
  3. Cover and cook on High setting for 2 hours.
  4. When finished, the bread will have browned a bit on the top and around the edges, and it will be hot throughout. It can stay on warm for probably another 2 hours before serving, if needed. Stir. If you'd like it a bit more moist, you can add a 1/4 cup more (or as much as you desire) of chicken stock.

  1. Heat your oven to 205 C. Wash and dry the chicken pieces, sprinkle the chicken with paprika.
  2. Combine the remaining spices in a small bowl, sprinkle half of the spices over the chicken, use your hands to coat the chicken.
  3. Add the flour to another bowl and add the other half of the spices and whisk to combine, set aside.
  4. In another bowl, add the egg and milk and whisk.
  5. First dip the chicken into the egg mixture let excess drip off. Then place the chicken in the flour and coat. Shake off the excess flour and place the chicken on a plate. Let chicken sit for 5 minutes. Recoat in flour if desired.
  6. Generously grease a grill pan rack with vegetable oil. Place the chicken on the grill rack. Mix butter and olive oil and drizzle over chicken. Bake for 40 minutes. Broil for the last 3-4 minutes to crisp up the skin more if desired. Let chicken rest before serving. Serve with a boiled potato and an ear of corn, complete meal.

1 kilo of chicken (think quarters) will cost about 62 Baht/kilo. This comes to 46 cents per meal for 4 servings, and 31 cents per meal for 6 servings. Add sides, you are still under $1 per meal.

  1. Bring the water to a boil and add the bouillon or powder and stir until dissolved, set aside.
  2. In another small pot, melt the butter on low heat, stir as needed. Mix the sage, black pepper, and garlic powder with the flour.
  3. Slowly add the flour mixture to the melted butter and whisk continuously, until the mixture takes on a golden brown color.
  4. At this point, slowly stir in the bouillon mixture, continuing to whisk. One the mixture is whisked in, turn up the heat to medium until some of the water evaporates and leaves a creamy and pourable gravy.
  5. Serve while hot over mashed potatoes.
