I have a friend in New Mexico, and lives and breaths green chilies, in particular, the Hatch variety. Now here in Thailand, we don't have the hatch varieties, but we can take advantage of the green chilies and peppers that are plentiful here. I actually had to look up how to roast chilies (you can tell I am not from Texas or New Mexico). This is a roast and freeze recipe for use in recipes that call for these, just thaw them out and ready to use.

  1. In Tesco-Lotus, these are named simply "Green Peppers" and they are delicious as well, but they have a skin that needs to be removed, and the roasting makes that easy and gives a great flavor the the peppers/chilies.
  2. In Tesco-Lotus, these are named simply "Long Green Peppers" and they are also delicious. These are the two types I am going prepare by roasting. There is also a red version of this aptly named "Large Red Pepper."
  3. Preheat your broiler to 200 C (400 F), for those with counter top ovens, use the top coil only. Position the rack 4 to 6 inches from the heating coil/burner. Line a baking sheet with foil.
  4. Wash the chilies and dry with paper towels. Place the chilies on the baking sheet in a single layer.
  5. Place the baking sheet in the broiler or oven and cook for 3 to 5 minutes, you are looking for about 75% charred and blistered skins on the chilies.
  6. Using tongs, turn each chili over and cook again for 3-5 minutes, also looking for 75% charred and blistered skins.
  7. Remove the baking sheet from the oven, and quickly place the chilies in a food safe zip lock bag, then seal the bag and let them sit for 15 minutes. This steams the chilies which will help in peeling them.
  8. Trim of the stem end of the chilies and pull the skin off. Slice in half lengthwise and scrape out the seeds and inner membranes with a spoon.
  9. Slice in piece in half lengthwise, then chop or dice.
  10. Allow to cool to room temperature, then place in small freezer bags or in small freezer containers, or in an average size ice cube tray, and when they are frozen, transfer the 'cubes' to a freezer bag.

Variant: 1. You can roast the chilies over an open flame on your stove, using tongs to hold the chilies.

  1. In a large non stick pan, cook the ground beef and break up with a spatula as you cook, when no longer pink, drain the fat then add the onion and garlic and cook until the onion is soft.
  2. Add the cumin, chilies, and tomato sauce to the pan and mix in, simmer on low heat for 5 minutes, stirring often. Remove from heat and set aside.
  3. In a large, flat pan, cast iron would be perfect, heat a little oil and warm each tortilla for a minute or two on each side, this makes them very soft so you can roll them.
  4. Lay a tortilla on your work surface and add some beef filling at about the point mid way between the edge and the center, make a line of filling across the tortilla.
  5. Roll the tortilla tightly, goal is a nice cigar sized taquito. Repeat this for each tortilla.
  6. Heat about 1/3 inch of oil in pan, when the oil is hot, quickly fry the taquitos to brown them, light golden color is the goal, about 1 minute each.
  7. Serve with dipping sauces as you desire, salsa, sour cream, and guacamole would be great choices.

The beans listed are for beans that you have prepared from dry beans, not only is this a money saver, some places do not have canned beans available. Plan your timing appropriately.   1. Rinse and sort the dry beans, place in a pot and cover with about 3 inches of water, and a couple of good shakes of crack black pepper. Bring to a boil then reduce to a simmer. Stir the beans every 15 minutes or so and add more water as needed. Cook the beans for 2-4 hours until soft. Remove from heat and drain.
  2. Place the chicken in the slow cooker, put everything else in the slow cooker including the beans, except the sour cream and heavy cream. Cover and cook on Low setting for 5-7 hours. Chicken should be fall apart tender at 5 hours, if using frozen chicken breasts, then go the full 7 hours, or on High setting for 3-4 hours.
  3. Remove the chicken to a plate using some slotted spoons, shred with a couple of forks and return the chicken back to the slow cooker.
  4. Mix together the heavy cream and sour cream in a small bowl until smooth and stir this into the slow cooker. Cover and continue cooking on Low setting for 30 minutes. Serve.
Recipe Notes

Chicken breasts will cost about 30 Baht/500 grams. For 6-8 servings, this well under $1 per serving.

  1. Preheat your oven to 180 C, lightly grease a 9x13 baking dish with butter, set aside.
  2. Combine the chicken with 1 cup of cheese. Use the this mixture to fill each of the 10 tortillas, roll each tortilla and place seam side down in the baking dish. Set aside.
  3. Melt the butter in a sauce pan over low heat, then stir flour into butter and whisk for 1 minute. Then add stock and whisk together. Cook over medium heat until it’s thick and bubbles up, remove from heat and let cool for a few minutes. Let this cool a bit or the next step will curdle.
  4. Once the butter mixture has cooled, add the sour cream (or a substitute) and the diced chilies. Pour this over the enchiladas and add the remaining 2 cups of cheese over the top. Bake in oven for 20-25 minutes, then you may want to broil for 3 minutes to brown the cheese. Serve. Beans on the side would be perfect.
Recipe Notes

Figure about 60 Baht for the chicken, if you cook it then you have the stock, win win. The cheese, Edam, would be 180 per 250 grams, go with 1 to 1 1/2 blocks (or if you like cheese, 2 blocks), the tortillas are not cheap, about 250 to 280 Baht per package of 10. This cost per serving for 8 servings is about $2.47. Not a cheap meal, but would be good for a once in a while a meal.

  2. Serve with a salad and a fresh cooked veggy on the side, complete meal.
Recipe Notes

The spicy smoked sausage at Makro will cost about 125 Baht for 500 grams. This comes to about 62 cents per serving for 6 servings. From my experience, Makro has sales on this sausage, buy 1 kilo get 500 grams free so there is even more savings.

For the Chicken
  • 1 whole chicken remove the head and feet and remove the giblets
  • 1 onion leave skin on and just cut in half
  • 10 cloves garlic just smash and leave skins on
For the Pasta

For the Chicken
  1. Place whole chicken in large pot, add the onion, garlic and cover with water. Bring to a boil, reduce heat, and simmer 40 to 60 minutes, until tender. Remove from heat and let the chicken and stock cool to room temperature. Remove chicken from pot, reserving stock, discard the onion and garlic. Skin and bone chicken, set the skin and bones aside for your dog. Lightly shred the meat with forks or roughly chop. Set meat aside.
For the Pasta
  1. In a slow cooker, add the onion, chilies, garlic, bell pepper, mushrooms, chili powder, salt and pepper to taste, to your slow cooker. Then add chicken, diced tomatoes AND juice, cheese, and chicken stock. Cover and cook on Low setting for 3 hours.
  2. Before the 3 hours is up, cook your pasta in the chicken stock if you like or just water, then stir in cooked pasta before serving.
Recipe Notes

One whole chicken will run between 200 and 250 Baht. The cheese is one block for 180 Baht. This comes out to about $1.60 per serving for 8 servings. Not bad but high for what I would call a regular meal. The good thing is you have chicken stock for your next recipe.
